Nutritious Rice
As a cereal grain, rice is the most important staple food for a large part of the
world's human population. It is the grain with the second highest worldwide
production, after maize. Since a large portion of maize crops are grown for
purposes other than human consumption, rice is probably the most important grain
with regards to human nutrition and caloric intake, providing more than one fifth of
the calories consumed worldwide by the human species. So much importance is
given to rice in places like India and Thailand that the term 'to eat' literally means
'to eat rice'.
Among the 8,000 different varieties of rice available commercially, the
cultivation of brown rice is given much importance. Brown rice or cargo rice, as it is
also called, is a whole variety of rice, with the inedible outer hull removed. This
variety of rice has a mild nutty flavour and is considered to be more nutritious than
its white counterparts. However, it tends to go rancid very easily and thus, cannot
be stored for long periods.
Brown rice is essentially the same as white rice, in the fact that it comes from
the same plant. There is no "brown rice" plant and "white rice" plant. The difference
between the two coloured rice is the process by which they are hulled. Whole
grain rice consists of several layers. When only the outermost hull is removed, we
end up with brown rice. It is when the rice is further milled, removing the bran and
germ layer, that we end up with a whiter rice. The rice is then polished, giving us the
white rice that we most often see in stores. Brown rice and white rice have similar
amounts of calories, carbohydrates and proteins. The main differences between the
two forms of rice lie in processing and nutritional content.
However in present times, brown rice represents the staple diet for fitness
and health conscious eaters. The high levels of nutrients present in the rice
provide evidence of its diverse medicinal benefits. The health benefits of high fiber
content foods like brown rice are numerous. The fibers present in brown rice increase
bowel movement, thus helping in reducing constipation, besides aiding digestion.
According to researchers, increased intake of whole grains and fish could reduce
