CHAPTER I

INTRODOUCTION

Hotel is just one example of accommodation, the hotel not only
provides lodging services alone but services eat, drink and service. In a hotel
there are parts that are interrelated between each other, for example, Front
Office, Housekeeping, Accounting, Engineering, Food and Beverage. Food
and Beverage further divided into two namely Food Beverage Service (FBS)
and Food Beverage Product (FBP), which are closely related and affect hotel
revenues. Food Beverage Product is sexy which deal specifically with the
food, the drinks are good for hotel guests as well as employees of the hotel
itself from the storage of foodstuffs, processing up to the presentation of the
food
One of the supporting factors in the food and beverage department
in an effort to provide better service to guests is the equipment (equipment)
Equipment as one of the supporting facilities have a very vital function
because if there is no equipment of course work in the kitchen cant be done
with good. There are many appliances in kitchen and kind, there are two types
of equipment in the kitchen is kitchen equipment and kitchen Utensil.
At the time of increasingly rising prices - the market price will affect sales
price of a food product because it is required by way of 2 good storage so that
foodstuffs can be maintained its quality and can last longer thus reducing
expenditure, other than that often occur food poisoning this could be due to
the time and manner of storage of food that is not true that before processing
is contaminated and damaged, or it could be caused by human negligence that
cant distinguish viable material used and the material unfit for use again.
The vegetables are all kinds of plants or parts of plants that can be processed
into food, vegetables contain a lot of nutrients, vitamins and fiber needed by
the body and good for health. Some types of vegetables can be eaten alone or
as a raw while others can only be consumed after cooking in advance.
B. Problem Formulation
To give an explanation to the problems stated above, the authors formulate
the problem as follows:
a. What are the advantages and disadvantages of each Utensil according to
materials?
b. How does saving the F & B utensils ?
C. Objective
The purpose of this report is:
1. To know the advantages and disadvantages of each Utensil according to
materials.
2. To find out how F & B Utensil storage.
