Bellini

15 ml peach juice
splash of crme de peach
110 ml prosecco
Method:
Pour the peach juice into a
champagne glass
Fill the glass with champagne and stir
N.B. The original Bellini was invented with
Prosecco

Kir Royale
10ml crme de cassis
115ml champagne
Method:
Pour the crme de cassis into a
champagne glass
Then fill the glass with champagne
and stir
N.B: A Kir Royale is with champagne;
A Kir (or Kir wine) is with white wine.

Bloody Mary
25ml vodka
200ml tomato juice
Few dashes of Worcestershire
sauce
2 drops of Tabasco sauce
Salt and pepper + Squeeze of
lemon
Method:
Half fill a Boston shaker glass with
ice
Pour in the vodka and the tomato

Classic champagne cocktail


10ml brandy
2 dashes of angostura bitters
1 brown sugar cube
115ml chilled champagne
Method:
Put the sugar lump into a champagne
glass and saturate with the bitters
Once the sugar has dissolved, add the
brandy
Then fill the glass with champagne and
stir

Cosmopolitan
50ml vodka
25ml Cointreau
50ml cranberry juice
splash of fresh lime juice
Method:
Fill a martini glass with ice to
chill
Half fill a Boston shaker glass
with ice
Add the vodka, Cointreau and
cranberry juice +add a squeeze
of fresh lime and shake
Strain into chilled martini glass
and garnish with a lime wedge
Negroni
35ml Gin
35ml Campari
35ml Martini Rosso
Method:
Fill a Boston shaker with ice.
Add all the ingredients and
shake.
Strain into tumbler glass and
garnish with a slice of orange

Diamond fizz
25ml gin
Splash of fresh lemon juice
100ml champagne
Dash of sugar syrup
Method:
Pour the gin into a champagne glass

Add the splash of sugar syrup and a squeeze


of lemon juice
Fill the glass with champagne and stir

Paradise
50ml gin
75ml Orange
15ml Crme de Apricot
Method:
Chill a cocktail glass
Half fill a Boston shaker with ice
Add all the ingredients and shake
Strain into a chilled cocktail glass
Garnish with a slice of orange

Manhattan
50ml Canadian club whiskey
20ml martini rosso
Dash angostura bitter
Method:
Chill a cocktail glass
Half fill a Boston shaker with ice
Add all the ingredients and stir
gently
Strain into a cocktail glass

N.B:

juice and a squeeze of lemon


Add the Worcestershire sauce,
Tabasco and salt and pepper and
shake
Strain into a highball and garnish
with a slice of lemon

A Virgin Mary is made in the exact same way,


only without the vodka.

Vodka or Gin Martini


When a guest orders a Martini, there are 4
important questions that you need to ask.
1. Vodka or Gin? (Check if they have any
preference on brands)
2. Wet or Dry? (Wet means the martini will
be sweeter and contain more vermouth)
3. Shaken or stirred? (The classic is stirred
but because of the James Bond movies,
some people may want theirs shaken)
4. Olive or a twist? (This is the garnish)
Method:
Fill a martini glass with ice to chill it down
Fill the glass part of a boston shaker 2/3
full of ice
Pour over 25ml of Vermouth (Noilly Prat)
Using a cocktail spoon, start stirring by
putting the spoon to the bottom of the
glass and gently lifting the ice up so the
ice is coated (be careful not to break up
the ice)
Depending on how dry the guest wants it,
strain and pour out most of the Vermouth
(the drier they want it, the more you pour
away)
Add 50ml of vodka or gin (depending on
order)
Using the same method as before, gently
stir until the all the ice is covered by the
liquid
If the guest wants it shaken, this is when
you would put the top on the boston
shaker and shake
Empty the ice out of the martini glass and
strain the cocktail into the glass
Garnish with either a lemon twist or an
olive

Classic fruity mix


125ml orange juice
50ml peach juice
50ml pineapple juice
Dash of grenadine
Ice
Method:
Pour the orange, pineapple and peach
juice into a smoothie glass
Fill the glass with crushed ice
Slowly pour in the grenadine and let it
settle
Garnish with a slice of orange and
straw

Mangotiser
75ml mango juice
125ml Appletiser
Method
Pour mango juice into smoothie glass
Add ice
Add appletiser and stir
Garnish with wedge of lime and straw

Sidecar
50ml Remy Martin VSOP
half lemon juice
25ml Cointreau
Method
Chill a cocktail glass
Half fill a Boston shaker glass
with ice
Add all the ingredients and
shake
Strain into cocktail glass
Garnish with a slice of lemon

Godfather
35ml Black grouse whiskey
35ml Amaretto
lemon juice + teaspoon sugar syrup
Method
Pour everything into a tumbler of ice
and stir
No garnish

Peach Shandy

Sea Breeze

100ml ginger ale


75ml bumbleberry juice
50 cranberry juice
Dash of grenadine
Squeeze of lime
Method:
Put a few ice cubes into a highball
Add the grenadine and a squeeze of lime
Add the ginger ale, juice and stir
Garnish with a wedge of lime and serve
with a straw

50ml Peach Juice


25ml Orange juice
125ml cloudy lemonade
Method:
Pour in orange and peach juice
into a highball glass, stir, add
ice.
Top up with lemonade and stir
Garnish with Lemon and and
straw

25ml vodka
35ml cranberry juice
splash of grapefruit juice
Crushed ice
Method:
Half fill a tumbler with crushed ice
Pour over the vodka, cranberry juice and
grapefruit juice and stir
Top with more crushed ice, garnish with a lime
wedge and serve with straws
