RESUMEN

Piura es uno de los principales productores y exportadores de banano


orgnico en el Per, ubicando su mayor produccin en el Valle bajo Chira.
La exportacin de banano cada ao va en incremento puesto que muchos
productores de arroz estn destinando sus tierras al cultivo de banano, si
bien este incremento de cultivo de banano muy bueno tanto para recuperar
las tierras arroceras empobrecidas por cultivos de arroz por su prdida de
sales y nutrientes volvindolas infrtiles, as mismo los volmenes de agua
requeridos para el cultivo de arroz en pocas de estiaje.
Los residuos post- cosecha (hojas, troncos, raquis), tambin se estn
convirtiendo en uno de los principales focos contaminantes de las parcelas,
actualmente estos residuos post cosecha se descartan en las mismas
parcelas siendo un foco contaminante ya que el incremento de moscas,
insectos etc. se alojan en las plantas contaminando los bananos que estn
en produccin.
Esta investigacin se centr en el raquis de banano (musa paradisiaca)
evaluando su caracterizacin fsico qumica que nos permite analizar la
composicin en las cuales se comprob que contiene protena, fibra,
carbohidratos que se pueden aprovechar para incorporarlos en la cadena
alimenticia, con la caracterizacin del raquis de banano se dispuso para la
elaboracin de harina sometindolo a un previo acondicionamiento y
parmetros se secado hasta obtener harina posteriormente se dispuso para
la elaboracin de galletas utilizando formulaciones a diferentes porcentajes
de harina de trigo y sustituir parcialmente con harina de raquis de banano
llegando a obtener un considerable porcentaje de aceptacin de los
panelistas.

ABSTRACT
Piura is one of the leading producers and exporters of organic bananas in
Peru, placing its largest production in the Chira valley below.
Banana exports every year is increasing as many rice farmers are devoting
their lands to banana cultivation, although this increase crop very good
banana both to recover rice lands impoverished by rice crops for their loss of
sales and nutrients rendering them infertile, also the volumes of water
required for rice cultivation in times of low water,
The post-harvest waste (leaves, stems, rachis), also are becoming one of the
main polluting sources of parcels, currently post harvest these wastes are
discarded in the same plots being a contaminant focus since the increase of
flies, insects etc. staying in plants polluting the bananas that are in
production.
This research "rachis of banana (Musa paradisiaca)" focused assessing their
physicochemical characterization allows us to analyze the composition of
which was found to contain protein, fiber, carbohydrates that can be
leveraged to incorporate them into the food chain, with the characterization
rachis of banana were available for the production of flour by subjecting it to
a preconditioning and parameters was dried to flour subsequently prepared
for making cookies using formulations different percentages of wheat flour
and partially replaced with flour rachis of banana coming to obtain a
considerable percentage of acceptance of the panelists.
