Marinated Chevre

Ingredients
1 pound chvre, cut into 1" thick rounds (goat cheese)
2 bay leaves
2 teaspoons black peppercorns
3 thyme sprigs
4 garlic cloves, peeled
Zest from 1 lemon
olive oil to cover

Directions
1. Put everything but the oil into a sterilized jar. Pour over enough olive oil to cover. Seal and refrigerate. This
will keep for about a month.
