Simplest Roast Chicken

INGREDIENTS:
1 whole chicken, 3 to 4 pounds, trimmed of excess fat
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
PREPARATION:
1. Place a cast iron skillet into the oven and then preheat to 500 degrees.
2. Rub the chicken with the oil, then sprinkle with salt and pepper.
3. Place chicken into the preheated skillet and roast for 15 minutes.
4. Reduce heat to 350. Continue roasting until the internal temperature reaches
155-165 degrees.
5. Tip the pan so that the juices run out and allow the chicken to sit for five
minutes.
6. Carve and Serve
