Everywhere you look at Rydal Park, youll find
residents making the most of life. If you look early
enough, you just might find Jay and Donna Karfunkle
a dynamic married couple who marked their first
year at Rydal Park this past June.
Jay a lifelong exercise enthusiast greets every
morning with a 5 AM bike ride around Rydal Parks
20-acre campus.

I can be gregarious. I can also be very independent.


I make friends all right, but sometimes I just want
to be alone.Thats the reason why I love biking. I get
a lot thought out.

Youll find Donna exercising in Rydal Parks fitness


center, where she participates in group classes with
onsite fitness instructor and personal trainer Angie
McNellis. She also does cardio, resistance training,
and bodyweight exercises.
Before moving to Rydal Park, Jay and Donna were
not only active, but actively involved in their
community. For decades they have patronized
classical music and the arts, and their patronage
continues to this day. In fact Donna has spent years
volunteering at the Woodmere Art Museum.
As a lifelong business executive, Jay was also keen on
finding ways to give back to the community. One such

way was starting the Current Events Group shortly


after moving in. Jay moderates weekly group meetings
with as many as 30 residents in attendance. Discussions
include national and international news and politics, as
well as hosting guest speakers.
Donna spends time volunteering for Rydal Parks
Treasure Room, where residents and staff can
purchase assorted items. The proceeds fund a
Residents Association that supports numerous
endeavors. It really is a win/win, and Ive met some
lovely people.
Shes also involved in local synagogues, as she has
always been.
Proud of her independence, Donna was delighted to
discover that at Rydal Park she is free to pursue her
interests. In fact, if you have passion, she continues,
youre certainly encouraged to follow it here.
The Karfunkles passions also include their three grown

children and numerous grandchildren all of whom


live locally. Because our children are so close, we
often go there for holidays, Jay says. Donna adds, We
are also happy having dinner by ourselves once in a
while in the apartment. I dont mind cooking a couple
times a week.
But when theyre not with family, dont feel like
cooking, or just want to get away for a little, theyre
happy to enjoy the fare at one of Rydal Parks four
dining establishments or at any of the areas many fine
restaurants. Theres not a pattern, Donna says, but I
would say maybe at least twice a week we dine out.
So whats their secret to happiness? As Jay explains,
staying active is vital to living a vibrant life.

Exercise. Mental or physical one helps the other.


Theyre inextricably intertwined. If you take care of
your mind, your body will be, hopefully, all right. Take
care of your body, your mind will be improved or at
least maintain a level of a mental acuity.

Chefs Corner
Few things say summer like fresh corn, and
roasting it brings out its natural sweetness. Leave
the shucks on and roast at 350 for about 30
minutes, or until corn softens. For a southwestern

Im Not Ready Yet! Or, How to Face Our Fears to Reap the Rewards.
When I began working with prospective residents in Continuing Care Retirement Communities
(CCRCs), I saw N.R.Y. listed under some names. New to the industry, I didnt understand what that
meant. I heard people say they would call if they needed us they were still working, driving, and
gardening, and werent ready. It didnt make sense the residents I knew led incredibly active lives.
After about three days I realized that the perception of CCRCs was not in line with the reality.
N.R.Y. or not ready yet meant: Im scared.
The reality is that CCRCs are populated with adults 62+ who have been successful decision makers
throughout their lives. They are pro-active, implementing a plan for their futures, adding years to
their lives and life to their years, all in a maintenance-free environment. Initially, they were perhaps
fearful. They thought they were too young or healthy, or were too attached to their home. But they
realized that CCRCs enhance lives and allow them to continue living as they had. They could work,
volunteer and remain active in the community while enjoying the cultural, educational and wellness
offerings of the CCRC. Its a change of address, not a change of purpose.
Fear of aging is normal, but allowing fear to impact decision-making is not. Putting your head before
your heart can lead to a fiscally and physically strong future. Think of us as a resource, and please
dont hesitate to call or come by with any questions!

SUMMER CORN SALAD


INGREDIENTS:

1/2 tsp

Roasted garlic (optional)

Ears of corn

1/4

Scotch bonnet pepper (optional)

Avocado

1/4 cup

Black Beans (optional)

1 ea.

Red and green pepper

1/2 cup

Tomatoes

Green onion (scallion)

2 Tbsp

Olive oil

1 Tbsp

Sesame oil

1Tbsp

Balsamic vinegar

1/2 cup

Basil (julienne cut)

Peel and dice avocado

1/4 tsp

Cumin

4.

Dice tomatoes, peppers and onion

Fresh black pepper

5.

Mix all ingredients and let sit overnight

As spring rain yields to summer sun, many residents minds


turn to the outdoors. For golfers, there is not much better
than heading out to enjoy a round of 18 at one of the areas
many beautiful courses.
HAL: Ive belonged to Manufacturers since 1978. I have
also belonged to LuLu, which is now a public course.
Both are right in the Rydal Park neighborhood, in
addition to other public and private courses.
JOHN: Well, Ive been a member at Huntingdon Valley
twice. I was a member from 81 to 97, then I retired and
my wife and I decided to do other things. So I dropped
out of Huntingdon Valley and then rejoined after I
moved to Rydal Park.

There are lots of reasons to golf, from business to socializing


to staying in shape. Whatever reason you prefer, Rydal Park
residents find plenty of opportunities to play.
HAL: Manufacturers is four miles from Rydal Park,
and I average about 50 rounds a year. Rydal Park is a
healthy place to be, and golf is a fun way to stay active.
Thats the way I look at it.
JOHN: Huntingdon Valley is only three miles from
Rydal Park, and last year I played about 60 rounds. Golf
was always great for entertaining customers or having
business discussions. Its a relaxed atmosphere. I tried to
convince my sons that in the business world, golfs an
asset. They played lacrosse, but it just doesnt translate.

One of the best things about doing what you love is


accumulating a lifetime of fond memories. For the lucky few,
a hole in one tops that list of stories.
JOHN: Long story short, years ago I had a heart
catheterization and a stent. It was the first time Id ever
been in a hospital other than for the birth of my children.
Within a week I was playing golf again. And a month
after that I had a hole in one at Huntingdon Valley. The
neat thing is I was playing with one of my sons, so Dad

got to brag a little bit with his son watching. I got a nice
trophy.
HAL: Mine was August of 04, at Manufacturers, on
our short eighth hole. They gave me a certificate from
Golf Digest and printed my name in an issue. It was
wonderful.
Spirited Living at Rydal Park means having the freedom to
pursue the things youre passionate about. For John and Hal,
golfing also happens to help them stay active.

Summer Safety Tips


From enjoying nature to dining outdoors, theres plenty to love about
summer weather. While youre out appreciating all that this season has to
offer, here are some tips to help you stay safe and healthy.

Know whats going into your body.


Staying hydrated is essential, but so is
maintaining a good balance of electrolytes like
sodium and potassium. When you go outside,
remember to bring water and some soft fruits
like dried apricots or bananas.

Whether youre out for a casual stroll or


heading to the beach for a day of sun and sand,
make sure your clothing is lightweight, lightly
colored, and loose-fitting. In order for your body
to cool off, sweat must be able to evaporate and
dark, tight clothing makes this difficult.

On those beautiful days, nothing beats golf or


gardening with friends. Make sure you apply
sunscreen 30 minutes before going outside and
reapply every two hours, or after swimming. Large
brimmed hats are a great way to further protect
your face from UV rays while looking stylish.

How long have you been at Rydal Park?


Nine and a half years already!
Whats your favorite part about working
here? I love working with the residents. The best
part of my day is inspiring them to better themselves
physically, and seeing them inspire each other.

What would you say to people who think


fitness isnt for them? You havent found
something you enjoy yet. Thats why I have such a big
variety to choose from.

Protect the skin youre in.

Picnics are a great way to soak up summer. But


while youre out enjoying your meal, mosquitos
and other biting insects are doing the same. Bring
and apply insect repellent when youre outside
so you can focus on the nature you want to see,
rather than the nature you dont want to feel.

How do the residents inspire each other?


Some residents feel intimidated or afraid to participate
until they see others doing it. Before you know it
everyones pushing each other to get stronger.

What are some activities you teach?


We do stretch and tone classes with resistance bands.
We also offer aquatics classes in the pool. Tai Chi is
probably my favorite. Its great to see the residents
clear their minds and focus.

What about the weight machines?


We have the best equipment, hands-down. Its all pushbutton operated and there are no weights, just air
pressure. Its not at all intimidating.
Do you design customized workouts based
on skill level or likes and dislikes?
Absolutely.We also work closely with residents to help
them get stronger without risking injury.
How does fitness benefit us specifically
as we age? Exercise especially strength training
increases bone density.Weve actually had a few
people see their bone scans go up after strength
training.
