TORTITAS DE COLIFLOR

a comer!

Cmo le gusta cocinar el coliflor a usted?


Receta Sirve 10 Tortitas (Tiempo de Coccin 25-35 minutos)
Ingredientes:
1 cabeza mediana de coliflor (alrededor de 450 gr)

1/3 taza de Harina de Todo Propsito


2 huevos largos
2 dientes de ajo machacados
4 cda harina de maz
1/2 cdta de Especia de chili
1 1/2 cdta de Sal
5 cda de Levadura Nutricional
2cda de Cilantro fresco picadito
Pimienta Negra Fresca al gusto
Instrucciones:
1. Quiebre la cabeza de coliflor en pedazos y cocine al vapor o ponga a hervir por 5 minutos.
2. Escurrir el lquido y mientras est caliente, pique el coliflor con un cuchillo en pedazos pequeos
o utilice un procesador de comida.
3. En un bol, combine el coliflor con las especias, el ajo y el cilantro.
4. En otro bol, bata los huevos y agregue a la mezcla del coliflor con las harinas y la levadura.
5. Caliente una sartn con 2 cucharadas de aceite (yo utilic de coco) y fra 3-4 al mismo tiempo,
dependiendo del tamao de su sartn.
6. Cocine ambos lados por varios minutos hasta que queden doradas las tortitas.
Notas:
Las tortitas pueden hacerse con un da de anticipacin y luego recalentar en el horno a 375F por
unos minutos. Si se gratinan con queso provolone tambin le da un toque diferente delicioso.
Puede eliminar la levadura nutricional de la receta, pero tendr que agregar otras especias ya
que la levadura agrega un sabor a queso que se perder si se elimina de la receta.
Luego de freir el primer grupo de tortitas, pruebe una para verificar el sazn. Yo como bajo en
sal as que puede que usted necesite ajustar la cantidad de sal en esta receta.

INGREDIENTS
1 small to medium sized head of cauliflower - should yield 2 to 3 cups once
processed
cup shredded Parmesan cheese
cup mozzarella cheese
1 egg
teaspoon salt
teaspoon garlic powder
teaspoon basil or rosemary, minced (or dry)
teaspoon oregano, minced (or dry)
1 cup marinara sauce
1-2 cups mozzarella cheese
INSTRUCTIONS
Preheat oven to 500 degrees F.
Remove the stems from the cauliflower and cut into chunks, Place the
cauliflower into a food processor and pulse it until it resembles the texture of
rice. If you don't have a food processor, you can use a cheese grater or chop it
very finely.
Microwave the processed cauliflower uncovered in a microwave safe bowl for
approximately 4-5 minutes on high. Remove it from the microwave and allow it
to cool for at least 4-5 minutes (trust me don't rush this step!). After the
cauliflower is slightly cooled, place it in a kitchen towel and squeeze all the
liquid out of it. Be sure to squeeze as much liquid as humanly possible.
Combine the cooked cauliflower, egg, garlic, cheese, and seasonings. Stir until
a dough texture forms. Spread the cauliflower mixture out onto lightly greased
parchment paper or a pizza pan in the shape of a pizza crust.
Bake the crust for approximately 10-15 minutes (depending on your oven), or
until the crust is golden and crispy. I cooked mine for approximately 15
minutes. After the crust is golden remove it from the oven and add your
toppings, I used marinara sauce and cheese for a simple margarita pizza.
Place the pizza back in the oven but this time turn on the broiler, bake for
about 2-5 minutes until the cheese melts. be sure to keep an eye on it because
the broiler can burn the cheese quickly.
Slice and serve warm , enjoy!

SKINNY BAKED CAULIFLOWER

Serves: 30-40 tots

INGREDIENTS
2 cups cauliflower florets
1 large egg
cup onion, minced
cup bell pepper, minced (optional)
cup cheddar cheese, shredded
cup Parmesan cheese
cup breadcrumbs
minced cilantro or parsley (optional)
salt and pepper to taste
cooking spray or oil
INSTRUCTIONS
Preheat oven to 375F. Spray a nonstick cookie sheet with cooking spray or
lightly grease with oil. Set aside.
Steam cauliflower in hot water for 3-5 minutes or until nice and soft, drain and
chopped with a knife or blend in the food processor ( just a few seconds.)
In a medium bowl, combine all of the ingredients and season with salt and
pepper to taste.
Spoon about 1 tablespoon of mixture in your hands and roll into small oval
shaped tots.

Place on the cookie sheet inch apart and bake for about 20 minutes, turning
halfway through cooking until golden.
