METHOD
Boil water and rain in sago, stir immediately to separate grains. Add pandan
leaves and cook until the pearls are completely translucent. If there is still the
most miniscule dot of white at the centre, it will be fine by the time you drain
the sago. Do make sure they are tender by having a taste, to see if the grainy
bit in the centre is not prominent. Drain, remove pandan leaf and wash
thoroughly with cold water. Fold half a beaten egg white and a couple of drops
of pandan aroma pasta through. Scoop the sago into individual moulds that
have been lightly greased or into one large one. Cover with plastic wrap and
refrigerate to chill.
On medium heat, melt palm sugar in a small pot with a tiny drop of water. Set
aside to cool to room temperature. If using canned coconut milk it may be to
the boil and if necessary water down with cows milk so it is consistency of
pouring cream. Allow to cool to chill in fridge.

Sorry Poh. Mine really didn't work out. Took 1hr and 15 minutes for the sago to
cook, didn't taste great and the egg went patchy in the mixture. Maybe I did
something wrong?

It's perfect! I wasn't sure where the salt should go,so I put it into the boiling sago
(?)......

I tried to make this dessert tonight, but I failed with the palm sugar syrup :(
The palm sugar syrup definitely needs at least 1 cup of water in order to have
Poh's consistency.

Hi Poh,
I love this dessert as I cook it every weekend already. It is so simple, quick, cheap
and so so yummy!
Could you let me know why you need to add the beaten egg white to the sago? (I
didn't really like the look of it because you can see the egg white colours between
the green sago).

This pudding was wonderfully light ! It was easy to make and the palm sugar
syrup tasted amazing with the pudding!

This turned out very delicious - a lovely light dessert. I thought the recipe needed
more water added to the palm sugar than stated otherwise the palm sugar just
caramelizes and becomes rock hard.

Dear Poh, My addication to sago has a new way to cook it, will be out tomorrow
looking for the pandan, in Albury it may prove a little difficult.
