The table shows the results of a study carried out to analyse the nutritional content of raw and
dried cucumber by the Malaysian Agricultural Research and Development Institute (MARDI)
and Universiti Teknologi MARA (UiTM) in 2011. The researchers analysed the raw and heated
samples of cucumber to determine the nutritional content of eleven different constituents in
cucumber. The results revealed that the total fat in the samples of cucumber remained (a)
______________ at 0.00 g after drying, giving added value for dried cucumber to be
consumed as a snack.

Apparently, no saturated fats were (b) ____________ in the

cucumbers. The amount of ash in the dried cucumber showed an (c) ______________from
0.38 g per 100 g in unprocessed cucumber to 80.3 g per 100 g in the study conducted by
MARDI, and 87.9 g per 100 g in the study conducted by UiTM. (d) ______________ methods
of drying such as microwave drying or sun drying may give a varied concentration of ash
content. The study also revealed that dietary fibres (e) ______________ significantly after
being subjected to heat treatment, thus, making dried cucumber a poor source of fibre.

In the analysis provided by MARDI, the carbohydrate content in the cucumber samples
increased (f) _______________ after the treatment. In the analysis by UiTM, the results
showed a (g) _____________ higher carbohydrate content compared to MARDI. Most of the
carbohydrates were in the form of reducing sugar formed in the cucumber after the heating
process, a high calorie option, which is a better choice for those attempting to lose weight and
build muscle. Energy content (h) ___________ unexpectedly from 0.02 kcal to 101.06 kcal per
100 g in the analysis provided by MARDI. The results by UiTM showed that the energy
provided was (i) _____________ double that of the analysis provided by MARDI at 205.07
kcal per 100 g. The pH value of cucumber, however, (j) ____________ constant at 5.87 g per
100 g in all three samples. This study shows that dried cucumber has a lot of benefits before it
is dried.
