INTRODUCTION

We pride ourselves on the quality and choice of our drinks.


Every morning you will find us freshly pressing and squeezing
all of our own juices. The fruit purees are made here in
Threadneedle Street from fresh seasonal fruits.
We make and infuse all of our syrups including our wonderful
demerra & muscovado syrup for the Mercer mojito.
The selection of drinks we have chosen to list is by no means
definitive. So if you have a favourite cocktail that you can’t find
in the menu, please let one of our bartenders know and they
will be all too pleased to whip it up for you.

A goat’s milk cheese wrapped in vine leaves and washed in Somerset
Cider Brandy. Made by Alex James in partnership with Juliet Harbutt
and Pete Humphries.

Berkswell 7.75
An exquisite hard sheep’s milk cheese with a full nutty flavour, made
in the style of a Pyrenean cheese but in the heart of England at
Berkswell in Warwickshire.

Rachel 7.00
An unusual semi soft washed rind goat’s milk cheese from Somerset.
Washed in brine and made in a small dairy Rachel has a very fresh
yoghurt type texture when young.

Barkham Blue 8.00


Barkham blue uses pasteurised Jersey Cow’s milk to create has a
firm yet creamy, slightly open texture with a natural mould ripened
rustic rind. It has a deep yellow moist interior spread with blue green
veins, becoming softer with age.

MARTINI
All Martinis at The Mercer use 75ml of your chosen spirits
frozen at -16 °C for at least 48 hours, mixed in
and served in frozen glassware.

The Martini
Served with your favourite gin frozen, mixed with a 5:1 ratio
of extra dry Vya Californian vermouth stirred on ice made
from Whitehole Springs mineral water twice frozen. Very
serious indeed.

The Silver Bullet (aka Vodka-tini)


If you’re going to drink vodka, the most sophisticated way to
drink it is with the subtlest dash of extra dry vermouth, at
-16C and in a stemmed glass.

The Gibson
The legend goes that Charles Gibson challenged a New York
bartender to improve on the Martini so he simply substituted
the olive for an onion. Genius!

The Montgomery
Inspired by our love of history and the story that Field
Marshal “Monty” liked to go into battle with a 15-to-1
advantage over the enemy. The liquor certainly out numbers
the vermouth in this very dry martini.

The Dukes
Homage to the St James Hotel where Mr. Capper goes for his
for birthday martini. Not to be underestimated, a very hard
way to drink a martini with no dilution through from stirring,
just frozen naked spirits and a glass atomized with vermouth
for an ultra dry finish. Garnished with a lemon zest as
standard and complimented by a bowl of marinated olives.

The Bradford
When you really want it shaken for an increased dilution
from the ice then ordering a Bradford will get you a lot further
in life than asking for your martini “shaken not stirred.”

The Dirty
Popularised by Franklin Roosevelt after the repeal of
prohibition. Stirring the brine in which our olives are
preserved creates a wonderful salty experience that
compliments the short, sharp, strong style of martini. Excuse
the glint in our eye when we ask you “how dirty you like it?”

The Smokey
The exciting adventure for the gin martini, stirred on our
twice frozen Whitehole ice and combined with the rich, subtle
and smokey smooth flavours of Lagavoulin 16 year old Islay
Scotch.

a measure of Kina Lillet. Shake it very well until it is ice cold,
then add a large thin slice of lemon – peel. Got it?”

The Martinez
Believed to be the pre curser to the Martini, created for a gold
miner who struck it big in San Francisco and wanted to
celebrate with a mix gin and sweet vermouth complimented
with a little maraschino liqueur.

The Gimlet
"On a bar stool a woman in a black tailor-made ... was sitting
alone with a cigarette in a long jade holder. She had that fine-
drawn intense look that is sometimes neurotic, sometimes
sex-hungry, and sometimes just the result of drastic dieting,"
notes Marlowe before ordering a Gimlet. "So few people drink
them around here ... Gimlets, I mean," the woman whispers
to Marlowe. "A fellow taught me to like them," he replies,
before the bartender sets the drink in front of him. "With the
lime juice it has a sort of pale greenish yellowish misty look. I
tasted it. It was both sweet and sharp at the same time. The
woman in black watched me. Then she lifted her own glass
towards me. We both drank. Then I knew hers was the same
drink."

Sir Charles Lytton £12.50


Lillet Blanc aperitif wine stirred with Aperol and
freshly pressed pomegranate. Topped with Laurent-
Perrier Ultra Brut for an extra dry finish and
spritzed with the zest of ruby grapefruit for a sweet
aroma.

Bloody Oyster Shot £5.50


A Colchester rock oysters served on the side with a
wedge of lemon and a shot of the acclaimed Mercer
Bloody Good Bloody Mary mix, containing citrus
zezt, horseradish cream and chilli with blended
tomatoes.

A Glass of Laurent-Perrier Ultra Brut served with a
pair of Colchester rock oysters and shallot
dressing.

A bone dry white sherry from Andalusia, light and
fresh and a perfect start to a meal. Served with

Named after the Montilla region where this style of
wine originated. Starting as fino and fortified with a
cap of flor yeast to limit the exposure to air, aging
in oak casks to create a darker colour and richer
flavour Served with Mercer sweet pickled onions.

Chapel Down Brut £7.50


A glass of Chapel Down Brut NV sparkling wine
from Kent. Served with hunks of Berkswell cheese.
A Italian classic pairing with an English twist.

While spending last summer in the South of France
we developed quite a taste for the delicious anise

Frozen Gold & Dark £9.50


Johnnie Walker Gold label inspired by the notes
originally kept by Sir Alexander Walker, and crafted
from only a small number of Scotland's most
renowned distilleries each matured for a minimum
of 18 years. Frozen 48 hours, the whisky warms in
the mouth and releases its light fruity flavours and
true honey sweetness. Served with Mercer made
dark chocolate fudge to assist th eexperience.

Pear Treacle £9.50


Goslings Family Reserve Old Rum from Bermuda is
patiently stirred and sweetened with sugar and
bitters. Finished with Williams pear juice pressed
fresh to order.

Harry’s Cocktail £8.00


Harry McElhone’s 1922 edition of ABC Of Mixing
Cocktails documented this sublime mix of gin, sweet
vermouth, fresh mint and Parisian Absinthe.

Poached Peach & Cardamom Julep £12/£8


The taste of the Kentucky Derby. English peaches
preserved in a cardamom poaching syrup to
compliment the mint leaves macerated in either Van
Winkle 10 year old or Bulliet bourbon.

Dessert Island Sorbet £10.00


The fact that Mr. Capper prefers not to make Long
Island Iced Tea is not meant to be pretentious. It’s
just that he rates his own mix of gin, ciroc vodka,
agarve nectar and Coke finished with a specially
commissioned Cointreau & vodka lemon sorbet as a
far nicer experience.

A sophisticated hit of Grey Goose L’Orange served in
a coupé glass, with freshly pressed orange and
passion fruit with vanilla liqueur and a side shot of
Bruno Paillard Brut Première Cuvée Champagne.

leaves and lime sweetened with homemade
demarera and muscovado syrup, finished with a

Lebon double gold medal winning cachaa, smashed
together with fresh limes, sweetened with
strawberries and an aged balsamic reduction.

Ernest’s aversion to sugar meant inventive Cuban
bartenders mixed Havana Club 7 year old with
maraschino liqueur and ruby grapefruit for
sweetness.

Beetroot & Raspberry Charger £8.00


Homemade beetroot and raspberry puree built with
Stolichnaya Raspberry vodka with freshly squeezed
citrus juices, spritzed with soda.

Tommy’s Margarita £8.00


From Mexico by way of a famous San Fran
restaurant baring Tommys name. 100% agarve
tequila thrown with agarve necter and freshly
pressed lime juice served up in a ½ salted coupe.

A cocktail glass simply filled with an ice-cold
collaboration of Tanqueray 10 gin, orange liqueur
and freshly pressed lemon juice.

albumen using all our strength to create a velvety
sweet dream that the lady proclaimed to be “the
greatest in London”.

point of emulsification with freshly pressed lemon
juice, powdered sugar and albumen, before being
charged with soda.

BREWERY

Meantime Organic Pilsner 4.7%abv £4.00


A gentle maltiness on the nose deceives as a
massive hop flavour envelopes the tongue. Lots of
organic Perle and Halletauer hops give the correct
levels of bitterness, making this delicately hued
pilsner true to the German style, as well as
enabling it to stand up much better than most
lagers to stronger flavours such as mature cheeses,
hams and smoked meats, or oily fish.

Meantime Grand Cru Wheat 6.3%abv £4.00


A cloudy, golden-orange beer with a moderately
dense white head displaying a mixed combination
of banana, fruit, bubblegum, spice and zesty
aromas and flavours, all created, in true Bavarian
wheat beer style, by the use of a unique yeast
strain that brings out the true character of the
wheat malt used in the brew.

A silky-smooth suppertime beer, created using dark
malts and chocolate. Pronounced vanilla notes fuse
the chocolate and malts together to give a rich,
warming, flavour that also works well as a
complement to fruity desserts.

In the days before lager a Pale Ale was a treat. It
was the beer that cost that little bit extra. It was the
first beer to make a statement about the drinker.
Meantime’s Pale Ale is a little bit special too.
English Goldings and American Cascade and
Cluster hops provide the bitterness, whilst the
unique dry hopping technique with bucketfuls of
Cascade and Willamette hop gives it a truly
tantalising aroma

Meantime London Porter 6.5%abv £5.00


No fewer than seven malts go into this Porter,
helping recreate a recipe of 1750, specially chosen
to bring you the flavours so loved by Londoners
that demand for Porter made London the brewing
capital of the world. Porter offers light roast malt on
the nose and on the tongue a sweetish caramel
gives way to a mouthful of smokey, dry maltiness,
and an astringency on the finish that comes
entirely from the brown, black and chocolate malts,
rather than hops; and there are an awful lot of
Fuggle hops in this Porter.
