Ensalada | Inspired by the Chilean-Argentine Patagonia. Salad of sweet potato, beet, goat cheese, radish, toasted

almonds, sauted mushrooms, and mixed greens. Dressed with a lemon-merqun vinaigrette, balsamic-maple syrup
reduction, and dusted with carrot powder. V: substitute avocado for goat cheese. GF, SF | 9

Causa | Inspired by a Peruvian classic. Slightly spicy aj amarillo-flavored mashed potato rolls filled with avocado, red
pepper, chives, and cream cheese. Served cold with a Kalamata olive sauce and mixed greens. GF, SF | 10

Quinoa | Inspired by the Andean Plateau. Tri-color quinoa with a sweet red pepper sauce, peanuts, spinach, arugula,
tomatoes confit, and thyme-orange soaked carrots. Served at room temperature and with a beet-balsamic gel.

Lentejas | Inspired by all of South America. Stewed lentils and rice atop squash soup and served with garlic-roasted
seasonal vegetables (potatoes, carrots, peppers, spinach, and scallions). V, GF, SF | 12
Polenta | Inspired by Argentinas Italian influence. Paper thin eggplant slices folded around a walnut-roasted garlic-tofu
filling and served with grilled polenta cakes. Accompanied by chimichurri and tomato sauce. V, GF | 13
Charquican | Inspired by the Chilean countryside. Tempeh and portobellos roasted in a Carmenere red wine-raspberry
sauce. Served with layered squash mash-purple potato mash-sauted vegetables (onions, corn, green peas, and swiss
