11/2cupsmatchstickcarrots(Iboughtabagofalreadyshreddedcarrots,workedgreat!)
1Tablespoongingerpaste,orthesamefreshgrated
topsof3greenonions(shallots),divided
11/2cupsaltedroastedpeanuts,slightlychopped,divided
1poundshrimp,cleaned,optional
1cupcilantro,slightlychopped,divided
1/21cupbeansprouts
2Tablespoonssoysauce
2TablespoonsPeanutButter
1/2teaspoonredpepperflakes(moreifyourpreferitspicier)
11/2Tablespoonshoney
1teaspoonsesameoil

Freshlime,slicedforserving
Inalargepot,pourwaterandchickenstock.
Tothisaddthefollowing:pasta,onion,garlic,bellpepper,carrots,3/4ofbothshallotsand
cilantro,(reservesomeforserving)1cupofpeanuts,(reserverestforserving)soysauce,
peanutbutter,redpepperflakes,honey,sesameoil,currypasteandlimejuice.
Placelidonpotandturnonhigh.Letitcometoaboil,giveitastir,andreducetoasimmer.
Coverandcookforabout6minutes.
(stireverycoupleminutes,sonothingsticks.)
Dumpinshrimpandbeansprouts,stirandcover,letitcookforabout6minutesmore,until
shrimparesteamed,andpastaiscooked.
Therewillbeasmallamountofsauceinthebottom.
Servetoppedwithremainingshallots,cilantroandpeanuts,withalimeslicetosqueezeif
desired.
Ifyouareaddingchicken,youwouldmostlikelywanttoadditatthebeginningtomakesureits
cookedproperly.Ihavenottrieditwithchicken,butifIdo,Iwillamendthisrecipe.
