LETTER

t gives me great pleasure to welcome

you to the inaugural issues of Absolutely
Chiswick and West. Were thrilled to
bring you the cream of local living with
a dash of our signature gloss. Such is
the diversity of our fair side of town that we
endeavour to cater to it all; from local news and
interviews, to culture and travel. And, seeing as
its our very first edition, weve decided to pull
out all the stops...
Alexandra Jones caught up with our leading
lady, Emilia Fox, to talk about her sense of
adventure and Actons community spirit. On
the topic of famous families, I had the pleasure
of a guided tour by Sebastian Conran of his
Hammersmith-based studios. Despite his
prolific relations, its Sebastians infectious zeal
for design that is his most endearing trait.
Embracing the new season, Esther Smith caught
up with the ever-charming Valentine Warner,
who shared a couple of autumnal recipes with
us from his latest book.
I do hope you enjoy the magazine.

CHISWICK HOUSE GARDENS DOG SHOW

23 SEPTEMBER

CHISWICK HOUSE AND GARDENS

The largest free dog show in west London, sponsored by John D
Wood & Co, is coming to town. See mans best friends in all their
glory as they strut their stuff through the famous grounds. Last year,
over 430 dogs entered and 2,500 people attended the day of fun and
frolics. However, if youre finding yourself getting dogmatic (sorry)
about the judging, theres also a BBQ and a bar, or you could try
the have-a-go-agility feature, run by the dog coach. Keep your eyes
peeled for a celebrity or two many of the judging panel are local
personalities. chgt.org.uk

GARDEN OF REASON

UNTIL 23 SEPTEMBER

HAM HOUSE
Showing the new work of nine contemporary
artists within their stunning 17th century
garden, The National Trust can do no
wrong. Established in 1670, the garden
exhibition has taken inspiration from the
Age of Reason period a time of great
change, with particular innovation in arts
and science. The artists have used archives
to carry out research and directly responded
to the surroundings of the garden. Using
sound, sculpture, film and performance as
well as scheduled talks by artists and curators,
this event has something for everyone.

CHISWICK HIGH ROAD

As part of Oxfams national music festival, Oxjam Chiswick hits
the High Road this October. The main takeover event is fused with
an eclectic array of music to get everyone moving their feet and
feeling united. If youre feeling political, get to the African National
Congress (ANC) talk at St Michaels and All Angels Church on
22nd September. Herbie Pallie, the ANC treasurer abroad, will be
talking about his struggles and experience of imprisonment, and will
have extracts from his new autobiography. Make sure you rock up in
one of the exclusive Fairtrade t-shirts designed by pop art legend Sir
Peter Blake. For all information, see oxfam.org.uk/oxjam

THE TEMPER TRAP

4 OCTOBER

HAMMERSMITH APOLLO
Head to see The Temper Trap at the Hammersmith Apollo this month and
get swept back up into their chilled summer
sound. The Australian indie band, who
formed in 2005 and went multi-platinum
on their home turf, moved to the UK
in 2009 to continue living the dream.

CIRCLE OF TALES

13 OCTOBER

THE LYRIC
Head to the Lyric and let your
children be entertained with a lovely
tale from a time before tales existed. The
story is performed through the use of
wood and wire puppets as well as music
played on traditional African instruments.
Watch out though, getting this immersed
in the past may mean youre reluctant to get
back to the present. Most definitely a risk worth
taking. lyric.co.uk

LEITHS SCHOOL OF FOOD

AND WINE
If only you could produce something
similar to those cute jars of jam,
chutney and pickles that you can buy
at quaint village fairs. No fear, Leiths
cookery school is here, ready to turn
you into a domestic goddess of the
preserve making type. The cooking
teachers at Leiths will introduce you
to ways of selecting produce, sugar
proportions, pectin, methods of
testing for setting and, if that isnt
enough, storing the products too.
After a pastry and coffee on arrival,
youll soon commence - all ingredients provided - in making your very
own apple and blackberry jam, Bramley lemon curd, allotment chutney
and an onion marmalade, all rounded off by a light lunch (with wine) at
the end of the class. leiths.com

Culture

By the Book
Absolutely catches up with Hammersmith-based
Julia Llewellyn, best-selling author of The Model
Wife and Amys Honeymoon, to discuss chick-lit,
motherhood and her latest novel

anything to do with benefits. People are

very worked up about how these have
been abused by a small minority, and any
mention of them, positively or negatively,
sends my Twitter feed into spasms.

When did you fi rst start writing? Ive

always loved writing since I was a child.
My English teacher at school suggested
I wrote professionally Ill never forget
him saying that. It just shows the
power of a good teacher. Without that
comment, I might have embarked on a
completely different career.

How do you come up with ideas for your

novels? The ideas used to come through
friends and familys dilemmas, but now I
tend to be inspired through news stories.
Having said that, the book Im writing
now is about a woman whose husband
becomes famous and how uncomfortable
she feels in the spotlight. Where that
came from Ive no idea!

How has your writing style changed over

time? I write in two distinct ways. Ive been
a journalist for many national newspapers
and magazines, so Ive finely honed my
reportage style. Books give me a chance
to use my imagination. My earlier novels
were fluffy romantic comedies great fun
to write (and read, I hope), but my work has
made me aware of so many thorny issues,
like mail-order brides and alcoholic parents,
that Ive started writing about these.
How did having children affect your
writing - both in terms of your routine and
the issues that you wanted to explore?
Im lucky in that I was already working from
home before children, so there was no huge
adjustment to my routine once they came
along. As for issues, like all mothers Im
acutely aware that the Cinderella stories I used
to write have a long postscript, how life pans
out after youve hooked your Prince Charming.
The complexities of having it all fascinate me.

Ten Minutes to Fall in Love focuses on a

young woman trying to find a partner for her
widowed father through a dating agency. The
protagonist, Zu, is half Punjabi and spent
time as an aid worker in Chechnya. What
research did you do to depict these different
cultures? I talked to Punjabi friends and read
a lot about aid Ive never been to Chechnya,
but Ive been to other war zones and seen the
amazing work people do there, and also how it
often brutalises them, making it hard to
form relationships.

What other authors do you admire?

I love the more meaty chick-lit authors
like Marian Keyes, who tackle issues,
rather than just writing love stories.
For total escapism thats intellectually
stimulating too, you cant beat Barbara
Vine or Sophie Hannah. My favourite
books of all time are by Antonia Forest,
she was a much under-rated childrens
novelist. I think her psychological insights
are up there with Jane Austen.
Do you believe that it only takes ten
minutes to fall in love? I think it takes
two seconds to fall in lust, which is the
cornerstone of an ultimately successful
relationship. But love comes a lot later, and
true love, I think, can only be earned after
10 years, when youve really endured some
tests and come out on the other side.
You write for The Telegraph and Daily Mail
on lifestyle and relationship issues. What
topics do you most enjoy and which ones
are guaranteed to cause a stir? I love writing
about everything. Issues to which I will never
have given a thought become fascinating
with some examination. On the stir front, its

Whats the best thing about where you

live? I love the Thames and the fact that
few tourists venture this far out to sample its
pleasures. Theres nothing like the view north
over Hammersmith Bridge, which is why
I vehemently opposed the Councils plans
to blight it with an ugly development. For
hotspots, the Riverside Studios is a wonderful
arts venue with a great
restaurant and I love the
Indian restaurants on King
Street, especially Holy Cow
for takeaway.

Favourite art

I love Flame by Nic Fideon-Green. We were at an opera

which was being held in an incredibly beautiful but
dilapidated stately home in Hampshire and this sculpture
was standing in a quiet, dimly lit alcove. It was so beautiful,
serene and life-like, I was absolutely stopped in my tracks.

Pick of the collection

Im seriously excited about the new Betty

Collection its a lower case diamond
set alphabet necklace. We developed the
collection because I dont particularly like the
capital E and this started me thinking that
many alphabet letters are actually softer and
more feminine in lower case.

Mike Todd gave to Elizabeth Taylor, known

They are one of a kind. Elizabeth

Fantastic
Miss Fox
Alexandra Jones catches up with
Silent Witness actress Emilia Fox on
acting, Acton and adventures

m not really an adventurer, says a

hushed Emilia Fox, whose daughter
Rose is asleep next to her as we
speak. Although I do love New York.
Its one of the landmarks in my life.
I did a play out there in my twenties
and just had such a great time; the atmosphere,
the nightlife, everything. So perhaps thats
how the very English actress has become an
ambassador for a very New
York hotel - The Surrey
(think, swanky Upper East
Side address, heavenly Art
Deco interior and some of
the most delicious cocktails
in Manhattan).
Its pretty clear that its
not just New York she has
fallen for: I sort of had a
love affair with Africa. I was
really lucky to be sent out there on jobs, once a
year for about five years so Ive travelled around
Botswana and Tanzania pretty impressive
for someone who wouldnt call themselves an
adventurer. Well, I suppose thats the great
thing about acting, youre sent off to different
countries and locations, places you wouldnt
otherwise get to go.
This all sounds completely dreamy, but it
almost never happened. Despite being born
into an acting dynasty (her parents are Joanna

David and Edward Fox, James Fox is her uncle

and both her brother, Freddie, and cousin,
Laurence, are actors), Emilia initially eschewed
the family business, choosing to study English
at Oxford instead. Im actually rather shy in
my real life. It was only a reluctance to waitress
during summer holidays that drove her to
audition for the part of Georgiana Darcy in
Pride and Prejudice which led to a change of

Burton. It was a bit nerve-wracking because

she left such an amazing legacy. Amanda
was so identifiable with the series; Sam Ryan
[Amandas character] made Silent Witness what
it is today, so I wanted to do justice to her.
But the producers assured me that they didnt
want a replacement Sam. And it all seems to
have worked out rather well because Emilia is
currently filming the 16th series and the show
continues to draw some
eight million viewers.
In a fickle industry,
shes had a charmed
career, spanning critical
and commercial successes
albeit tempered by the
odd disappointment. I
was in a play that got the
worst reviews, probably
ever! Shes referring to
the doomed 2003 production of Les Liaisons
Dangereuses, which was canned after just three
weeks and through which she met her now
ex-husband, actor Jared Harris. It went to such
an extreme that it actually became quite funny,
we made the reviews into fish and chip paper at
our wedding!
The experience left her reluctant to return to
the stage, I found it so nerve-wracking, getting
up in front of an audience every night. I think
people who do it are admirably brave.

With acting, your own self is

hidden away... Im not quite so shy
when I can be someone else
heart. I found that with acting, your own self is
hidden away. Its an odd paradox of being; Im
not quite so shy when I can be someone else.
That was 1995 and since then shes
appeared on screen and stage playing harlots,
heroines and one very un-squeamish forensic
pathologist. I was brought up on crime drama
and Ive always really enjoyed watching it, so
it just seemed to work out. Playing Dr. Nikki
Alexander in the BBCs Silent Witness, Emilia
took over as lead in 2004 from Amanda

I would like to consider that one day I could be

admirably brave again.
At the moment though, shes enjoying
the pace of filming and despite having been
beamed into our living rooms in one guise
or another for almost 20 years, she still
manages to hover just below the paparazzis
radar. Theres a big difference for me
between public life and private life. Ive been
brought up with parents whove been in
the business and who consider their private
lives incredibly important. This may explain
her reluctance to discuss her relationships,
some of which have been high profile; she
was engaged to Vic Reeves before marrying
Harris and more recently there have been
rumours that she is dating gravelly voiced
chef Marco Pierre White.
I dont really get noticed at all. I think
its probably because I dont look very much
like I do after Ive been in hair and make-up
and costumed up to the hilt, she laughs. But
there must be some Hollywood moments?
Free designer dresses and swanky parties?
Tables at the top restaurants? Few and far
between Im afraid.
It strikes me that there are quite a few
paradoxes of being for Emilia. Even with
the famous family and the fame she has
in her own right, she still lives the quiet

London life of a working mother. She loves

Acton (for its sense of community) and The
River Caf (dont we all?) and The Royal
Academy. On Sundays, coffee and a
bacon sandwich at Columbia Road
Market. Oh, and the parks! I think
the parkland in London is a gift!
Her luxuries are also reassuringly
British and often come from old
friends such as Alex Monroe, Alice
Temperley and Kate Halfpenny. For
special occasions she has a soft spot
for William Vintage. I wore one of
his dresses to the BAFTAs this year.
He tailors them to you which really
does feel like the most glamorous
thing in the world.
And what about free stays at The
Surrey, which, I think, is just about
as glamorous as a William Vintage
dress? I havent had a free stay at
The Surrey she laughs, because
Ive got Rose, I havent had as
much opportunity to travel. If I
had a dream, though, it would
be to travel to as many places as
possible. I mean, the world is
there to be explored, isnt it? If
you get the chance to. So, no,
not really an adventurer

Tate Britain are presenting a major exhibition on the Pre-Raphaelites this autumn. A key member of the

s part of the Conran family

dynasty, a life and career
in design was somewhat
inevitable for Sebastian
Conran. He has, however,
made his own distinctive
mark in the industry by becoming one of the
most prolific names in contemporary product
design. After graduating from Central St
Martins with a degree in Industrial Design
Engineering in 1977, Conran joined the
prestigious Wolff Olins, then moved to
Mothercare (where he worked as Head
of Design) before setting up on his own
in 1986. Sebastian Conran Associates is
an independent design and development
company, perhaps most commonly associated
with domestic appliances and a longstanding collaboration with John Lewis. It
is with surprise, then, that I discover the
Hammersmith based studios are in a wholly
unassuming building set on an inconspicuous
leafy side street. Conran exudes a charmingly
boisterous enthusiasm for his work and
his team of zealous staff. Im swiftly taken
for a guided tour by the man himself. The

smart and deceptively small practice houses a

photographic studio, workshop, meeting room
and a whole floor dedicated to products and
prototypes in various stages of development.
The creative hub, as any should be, is littered
with personality; professional accolades,
sketches, models and Clash posters Conran,
rather bizarrely, worked with the band in their
early years to produce promotional material,
clothes and record sleeves. Less than 10
minutes after entering the studios and I find
myself seated in an armchair with speakers
embedded in the headrest, Conran blasting
Sittin on the Dock of the Bay through his iPhone
into the impressive sound system. Apparently
the chair was born from an impromptu idea;
a chance to break away from client briefs and
for Conran to experiment. I was with my son
who was playing Call of Duty on his Xbox
and I attached some speakers to a chair with
rubber bands it was just an idea and he said,
Dad this is amazing! Its like I can hear the
shell cases bouncing off the ground! Conran
regales the story with animated gesticulation
and I can tell that this is going to be an
entertaining interview...

Im sure youre constantly asked about your

family, but how did coming from a creative
background influence you and when did
you decide that product design was the
career for you?
When I was a child I wanted to be an
inventor. I was good at maths, physics and
chemistry when I was at school and I grew
up in design it was what I knew so
it seemed like a semi-obvious choice. I
like making things and Ive always had a
workshop. I worked in the Habitat store
(father Sir Terence is the founder) stocking
shelves and eventually graduated to working
in the design studio.
What do you think of British design?
The thing about design is that its driven by
culture and circumstances. If I talk to you
about Scandinavian design, youll probably
get a little picture in your mind of quite
playful, clean shapes. With German design,
you think formulaic, efficient think of
BMW cars, for example - they all look
the same. I would define British design as
playful pragmatism.

a presentation at Design Junction,

having design in his DNA

Do you think, in terms of product design, that

the answer is always a simple solution?
Well the route to simplicity is very complicated!
We try to make things as simple as we can. How
can I make it simpler, how can I make it better?
Nothing designed by man cant be made better
thats why we need more women designers!
Is it a very male dominated area then?
Yes it is. You go to the Conran shop and 75% of
our customers are female, yet its a hetrosexual,
male-dominated business. When I went to
college there were only two or three females on
our course of 25.
Given the financial climate, is it more difficult
for companies and graduates starting out now?
Much more difficult, yes. When I started in
the mid 70s London was pretty bleak, there

When I was a child I wanted to be

an inventor... I like making things
and Ive always had a workshop

were piles of rubbish everywhere and everyone

I knew seemed to be on the dole. In the late
80s, however, it was really easy. When I started
my business in 1986 it was a great time, people
were clambering over themselves because they
wanted design but the trouble was that we didnt
really know what design was, it was much more
to do with style then.
Youve worked in such a variety of different
designs, briefs and companies. Any that
particularly stand out?
I really enjoyed my time at Mothercare.
That was a big project and we were dealing
with products that hadnt really had a lot
of thought put into them, so a little bit of
effort went a long way. It was a huge success
and sales of the new products went through
the roof. It was a real demonstration of how
good design could succeed over reckless or

ill-conceived design. To succeed now, good

design is not enough, it has to be outstanding
design because the world has caught up.
Apple is an example of what outstanding
design means. We expect much higher.
Are you something of a technophile then?
I bought my first Apple Mac in 1988 and it
transformed my business. What Apple did was
they harnessed computer technology and made
it more appetising than the alternative which
was the PC. I want technology thats elegantly
neutral as it were, and thats what we try to do
with our designs.
Who are some of your favourite designers?
I love Dieter Rams. He was someone I tried
to emulate when I was at college. I like the old
greats but I think if you asked me to pick one
designer it would be Achille Castiglione.

I like Castiglione because its not a formulaic

or cookie cutter style. Everything hes
designed looks different.
How involved are you with everything at
Sebastian Conran Associates?
My view is that people dont go to college for
five years to just come and carry out other
peoples ideas. What I try and do is work
with people and focus their ideas. I might
give them a grain of an idea for them to build
a pearl around, or they might have the idea
and I say I think it should be more like this
or like that, and then sometimes they have
a great idea and I tell them to get on with it.
From a marketing point of view what were
trying to do is sell products which are from a
designer rather than from a company so that
theres a face behind it. Im hands on with
absolutely everything right down to the last
millimetre. Whats important is the best idea
wins and where that idea comes from is not
the important thing. One tries to keep the ego
down to a minimum - though its difficult for
a Conran!

BUILDING CASTLES IN THE SKY

Popular architecture writer Philip Jodidios new book,

Tree Houses, showcases the whimsical charm of the
simple tree house which has been
turned on its head by architects,
designers and craftsmen who have
let their imagination run riot.
From rustic to ultra contemporary
the worlds most spectacular and
innovative tree houses are revealed in
this beautiful new title. A boundless
source of inspiration (though perhaps
a touch unrealistic) if youre planning
on having one in your garden.

TOP TIP

At this time of year, when the

late summer garden is still in full
throttle, it is hard to think about
putting the garden to bed for
the winter, but this task is now
looming and although many
plants look good standing over
the winter, it is time to begin to
think about protecting the more
delicate ones such as Dahlia.
Cover the base of the Dahlia
with an organic or straw mulch
where they are growing, or in
really frost prone areas lift them
and overwinter them in a dry
frost free place. The tubers will
survive happily in a dry shed
in a paper bag until the spring
when they can be potted up
and grown on for another year.

Leiths School of Food

and Wine founder
Prue Leith spills the
beans to Gemma
Billington on her
foray into writing
and the release of
her long-awaited
autobiography

he day I call Prue Leith is an unfathomably warm, sunny one and

I entertain the idea of discussing
this most welcome heatwave with
her (how British of me) as a way
to break the ice. It quickly becomes apparent,
however, that Leith is not one for idle chit
chat. And why should she be? Prue Leith
CBE has had the kind of career most people
can only dream of; founder of the eponymous
schools and restaurant (which she has since
sold), food writer, columnist, Veuve Clicquot
businesswoman of the year 1991, television
judge on The Great British Menu and, in
her own words, a serial committee woman.
And at 72, shes showing no signs of slowing
down. Despite Leiths countless professional accolades and thriving in the cutthroat restaurant industry, it is the world
of fiction writing that now occupies the
bulk of her time and has, ostensibly,
been the hardest nut to crack.
Despite the slightly frosty start,
Leith melts into an affable, articulate
interviewee with a wicked sense
of humour that illustrates her
unashamedly ambitious nature.
Born and raised in South Africa,
the young Prudence Margaret
Leith was a serial flunker and
tried her hand at art school,
architecture and drama before
convincing her long-suffering
father that she needed to go to
Paris to study French. Whilst
there, Leith discovered a
love of food (it would be
hard to be in Paris and not
be interested in food she
says), and went on to set-up
her prestigious catering
company in west London
in 1972. Im surprised to
learn, however, that Leith
hasnt written a recipe
in 20 years and sold
her enterprise in order
to dedicate her time
to writing. Why the
change? Ive always

AND RAYNE WITH
DAUGHTER LI-DA
AND SON DANIEL

written something, she explains, when I was a

child I wrote poems and then I was a journalist
and Ive done a lot of food writing. Then I
decided: if I dont stop writing cookery then
Id never write the novel. Youve only got so
much writing energy. I ask if it was a difficult
transition not for Leith personally, but for
people to accept her as a serious writer Oh
yes she answers unequivocally. There were
two reactions; one was the slightly patronising
Not bad for a cook or the other was a slight
indignation; Why does she
think she can write novels?
Quite a lot of novelists felt
that I was mottling in on
their territory. Even her
agent doubted the move to
fiction, She said, frankly,
Youre a very good food
writer and successful at it,
why do you want to write a novel when you can
carry on making a good living writing food?
Leith then laughs heartily, so I changed
my agent!
Since publishing her debut novel, Leaving
Patrick in 2001, Leith has released a steady
string of novels and has this year had her biggest
success in the form of her autobiography, Relish:
My Life on a Plate. In sardonic Leith fashion,
she cant quite contain her disappointment
that the book narrowly missed a coveted
best-seller spot (it reached number 11 on the
chart, Extremely close, I comment, But not
close enough! she retorts). It transpires that an
autobiography had been on the cards for some
time; Because Ive had such a varied life, Ive
often been asked to write an autobiography

she explains, usually by publishers who have a

business angle glass ceilings, women making
it in a mans world and they wanted me to
write a sort of how I did it book. But I think
thats incredibly boring! Instead, Leith tells
the story of her extraordinary life, warts and
all, in characteristically witty prose. Her main
concern prior to agreeing to commit her life
story to paper was that her childhood was one
of contentment; Most memoirs are about
people whove had miserable lives and Ive had

much prevalent. She is chair of the School

Fund Trust and founded the British Food
Trust; which helped change both the law and
nutritional standards in school dinners. She
has since described it as the most important
job shes ever done.
With so much on her plate (excuse the pun)
I ask the inevitable whats next in the pipeline
question. I want to write a trilogy with the
development of food as its background, she
says. Unlike a plethora of writers and their
idiosyncratic approach
to their craft (solitary
confinement, handcuffed
to a laptop), Leith is able to
write anytime, anywhere,
including boring cocktail
parties and airport lounges;
her ability to become
completely absorbed has
even caused her to miss flights. Her potential
new project would focus on the life of one
family through generations; from World War
rationing to modern day hoteliers. Its a bit
ambitious and Id better get on with it because
Im getting so forgetful that I wont be able
to remember from one book to the next
who anybody is! she laughs. An enormous
challenge, yes, but from Prue Leith, I
really wouldnt expect
anything less.

To begin with, quite a lot

of novelists felt that I was
motelling in on their territory
a very happy life she comments. Indeed, the
only scandalous revelation is her admission
to a 13-year-affair with writer Rayne Kruger,
the husband of Prues mothers best friend and
former business partner. Described, by Leith,
as practically incest and Kruger 18 years her
senior, the couple eventually went on to marry
and have two children, Daniel and adopted
daughter Li-Da. In a twist that even Hollywood
would balk at, the wronged wife forgave the
couple and all parties remained magnanimous.
Leith and food will always be an
inseparable partnership. Her experience has
served as a backdrop to some of her novels
(Leaving Patrick, Sisters, A Serving of
Scandal) and, more pertinently, her passion
for quality food and education is still very

Warner is a
funny man.
Not that, he
insists, the
comparisons to Russell
Brand come anywhere
close to the mark,
despite their persistence
since he first appeared
on our television screens
in 2008. But what, I
ask, is so wrong about
his being likened to the
controversial comedian?
For a start, he says, I
do all my buttons up on
my shirt.
It is Warners dry and
quintessentially British
humour, coupled with
an articulate and frank
honesty, that makes him
so charming. These traits become all the
more apparent when I ask him why, after
spending his youth studying to be a painter,
he eventually alighted at the idea of becoming a chef? Because I spent more time
thinking about what I could do to goats and
octopuses than I did about finishing my
commissions, he says. Its certainly hard to
argue with that.
Warners enthusiasm for seasonal food,
which is intrinsic to his cooking ethos, is
obvious as he explains why autumn is his
favourite time to cook. With characteristic

hes not averse to

supermarkets as he
cites Morrisons, the
Co-op and Waitrose as
his favourites.
Given the conviction
with which Warner
talks about food, it
doesnt surprise me
when he confesses
to a touch of control
freakery in the kitchen.
When Warner does
occasionally step outside
of his own kitchen, it is
often to London
restaurants Racine and
Sushi Say, though he
says his most memorable meal was abroad
in Contramar, Mexico
City: I went to an
amazing fish restaurant,
literally ate the whole menu and went back
the next day. Having worked in a number
of restaurants, I cant help but wonder
whether he has any plans to open his own.
Warner as Ive come to realise - tends to
deliver his answer with a decisive lack of
half measures. If I can build a restaurant
out of wood, in a wood and cook on wood,
then Ill do it, he laughs, before asking: any
offers?

fervour he tells me, Autumn catches the

end of the enjoyable and wonderful summer; fantastic, brilliant tomatoes, peppers
and runner beans. The new agricultural
season also has a touch of exciting things to
come, such as plums, raspberries and game.
He is adamant that he doesnt have an
all-time favourite dish. It all depends on
my mood, he says, or if there is something
Im particularly hankering after. However,
butter, salt and vinegar remain essential
to much of Warners cooking. For supplies
he frequents local farmers markets, though

Boquernes, but
with sardines

Pork chop with

apple & crispy sage

6 small sardines, scaled, gutted and filleted

2 generous teaspoons of flaked sea salt,
50ml white wine vinegar
Juice of 1 lemon
8 tablespoons good olive oil
Black pepper
2 large garlic cloves, finely sliced
2 tablespoons finely sliced flat-leaf parsley
Good bread, to serve

1 pork chop (about 300g)

1 dessert apple (Coxs is ideal)
A little cider vinegar
A little caster sugar
Flaked sea salt and black pepper
30g butter
8 large sage leaves

Serves 34 as a pre-dinner snack

METHOD

Lay the sardine fillets skin-side down in a shallow flat-based dish and scatter the
salt evenly all over them.
Pour over the vinegar and lemon juice. Turn the fillets over so that the skin is now
facing up. Cover the sardines and leave them like this for 2 hours in the fridge.
Briefly rinse the fillets under a cold tap to wash away any excess saltiness. Pat dry
with kitchen paper.
Lay the fillets on another dish and splash over with a couple of tablespoons of
their marinade. Cover with oil, a good grinding of black pepper and the garlic and
parsley.
Leave the fillets for another couple of hours in the fridge, covered, to allow them to
come into their own.
Eat with really good bread and enjoy them with wine

Serves 1

METHOD

Preheat the oven to 200C fan/220C/Gas 7. Deeply score through the rind of the
chop with a very sharp knife at 2cm intervals all the way along. Peel the apple and
cut off two sides as close to the core as possible (eat the smaller two uncut sides).
Splash the apple pieces all over with cider vinegar, then scatter a little sugar over
them followed by some salt.
Melt the butter in an ovenproof frying pan over a mediumlow heat. When it starts
to foam, lay in the sage leaves without overlapping. Cook, undisturbed, for a minute
or so on both sides, or until crisp, and then transfer to a piece of kitchen paper.
Turn up the heat a little and season the chop well. Lay the apple pieces flat on the
chopping board and, keeping them intact at one end, cut them into 5mm slices.
Keeping each sliced half together, as if in one piece, transfer them to the frying pan
with the chop. Push the apple slices a bit, so that they lean to one side. This will help
them catch some good colour. Cook the apple and chop for 2 minutes or so, or until
the pork is deep and richly browned, then turn the chop on to its uncooked side,
spoon some butter over the apple pieces and put the whole frying pan in the oven for
78 minutes, or until the pork is cooked but retains the faintest pinkness.
Put the chop and apples on a plate and pour over a little of the butter from the
frying pan. Pile the crispy sage on top and eat with a glass of good cider.

Cookbook of the Month:

BRUCES COOKBOOK BY BRUCE POOLE

This months food review takes place at Chiswicks beloved La

Trompette, and Michelin-starred chef Bruce Poole (one half of
the duo behind the restaurant) has recently released his eagerlyanticipated recipe book. Poole states, I only cook the kind of
food I want to eat. Honest food, plain and simple. With rich yet
straightforward dishes such as boeuf bourguignon with parsnip
pure and ceviche of salmon with crme frache and coriander, its a
delightful addition to your kitchen bookshelf. 25, collins.co.uk

ts a perfect, balmy evening for afterwork cocktails when I arrive at the

Chiswick Moran Hotel. Though it
may not seem like the most obvious
choice for tipples, the hotel is a surprisingly
sleek four-star affair. The Globe Bar,
situated on the ground floor, is huge and
retro-chic. It also has a fantastic ace up its
sleeve, being the only late licence bar in
Chiswick. The staff at The Globe Bar also
have an ardent enthusiasm for their craft,
creating seasonal and cultural specialities.
The drinks menu is dangerously tempting
and extensive; comprised of fruit cocktails,
martinis, shots, champagne cocktails the
list goes on. Excitingly, we at Absolutely
can exclusively reveal the bars two new
cocktails; the fairytale inspired Cinderella
and Prince Charming, launched especially
to celebrate their late licence. It would be
churlish to ignore the newest arrivals, so
I gallantly get stuck in. Cinderella is as
pretty and delicate as the name suggests.
Definitely a winner if youre partial to a
sweet treat. A mix of Crme de Fraise des
Bois, Crme de Framboise and topped
up with champagne, shes fruity with a
hardy alcoholic kick; a rather precarious
combination. Prince Charming then
appears and at first sight seems like a
run-of-the-mill champagne cocktail. After
we spend more time together I realise he
is actually a more sophisticated blend of
ingredients: spicy Sailor Jerry rum, Passoa
liqueur, orange juice, Monin passion syrup,
grenadine and lime garnish. A satisfying,
suave drink that is the perfect balance of
flavours. A real charmer. It would be easy
to while away the hours making my way
through the menu but, alas, its a school
night and the clock is about to strike twelve.
Nevermind, all the more reason to return
for a weekend night out, when the bar stays
open until 1am. Cant wait to sample more
of whats on offer at this fantastic late-night
hotspot. GB 626 Chiswick High Road, W4

latrompette.co.uk

hiswicks charming Devonshire

Road is the home of La
Trompette, which has been
serving contemporary French
delights since 2001. I visit on an
unseasonably grim Tuesday afternoon, yet
the place is positively bustling with ladies
at lunch, families and clusters of business
folk. La Trompette, it would seem, is the
culinary place to be.
The restaurant is the brainchild of
restauranter Nigel Platts-Martin and
Michelin-starred chef Bruce Poole, the duo
behind the successful Chez Bruce and The
Glasshouse at Kew. The cuisine embraces
thoroughly modern twists a number of
dishes being inspired by different countries
and pallets not to mention a delectable
(and extensive) wine list. For starters I opt
for watercress soup with smoked salmon
and cream cheese scone whilst my dining
partner chooses the more unusual goats
cheese panna cotta with sauce vierge, fennel
and black olives. Both are delicious and
Im assured that the richness of the goats
cheese is countered well with the sweet
red peppers on which the panna cotta is
elegantly placed. My soup, ordered with the
slightest of apprehension that it would be as

weak as, well, watercress, is in fact a strong,

earthy dish made all the more memorable by
the light-as-air scone, smoked salmon and
lashings of cream cheese.
We select distinctively un-French dishes
for our main course; saute of parmesan
gnocchi and globe artichoke with girolles,
peas and onions, and the Moroccan inspired
rump of kofta of lamb with aubergine,
couscous, piquillo pepper and chickpeas.
The gnocchi takes me by surprise; as one
of my all-time favourite comfort foods,
its a bold twist on the dish (sure to ruffle
a few Italian feathers) but its delicious in
its originality. Surprisingly sweet, it is the
addition of the plump, sumptuous girolles
that really give it an edge.
For all of La Trompettes unimposing

glamour and Bruce Pooles inventive menu,

it is actually the desserts that are in danger
of stealing the show. Practically every listing
is a huge temptation and our charming
waitress gladly steers us through the menu
and her personal recommendations. The
cheeseboard (which I would most definitely
have tried were I not filled to burst) is on
rotation, with plans to feature a Spanish
inspired board and, rather delightfully, an
Isle of White one too.
Relaxed and charming, La Trompette
excels with an exciting and imaginative
menu of stand-out dishes that are well
proportioned and moderately priced, despite
the ingredients and attention to detail in
every one. This is a west London staple with
plenty of surprises still up its sleeve. GB

Lucknam Park
A luxurious weekend escape to the country

THE HOTEL
A hop away from Bath, this stunning
country pile ticks all the right boxes: theres
an award-winning spa, a Michelin-starred
restaurant, an equestrian centre and even
a whopping 500 acres. Approached by a
mile-long avenue lined with 400 lime and
beach trees, the whole place is a clever mix of
tradition meets contemporary.
THE BEDROOMS:
Walking into one of the 13 suites and 29
bedrooms is like jumping into the pages of a
Jane Austen novel; it screams elegance. And
thats before one has even taken a look at the
stunning views. Antiques and traditional
country furniture fill the richly decorated
rooms which are lined with gorgeous patterned wallpaper. The four-poster bed
provides the most marvellous (and comfortable) centrepiece while the chaise-longue,
positioned in front of the roaring fire, comes
a close second.
THE BATHROOM:

HOTEL CRILLON LE BRAVE, FRANCE

The romantic among us go weak at the knees at the mere thought of

travelling by train, so it is with unbridled enthusiasm that we look upon
Eurostars direct summer service from London to Avignon. Forget
airport queues and luggage restrictions, in just over six hours you can be
winding your way past vineyards, poppy fields and olive groves to the
hilltop village of Crillon le Brave. This Medieval cluster of yellow-ochre
buildings is home to the five-star Hotel Crillon le Brave. Made up from
seven restored houses joined together by original cobbled alleyways and
Romanesque arches, Crillon is like a village within a village. Rustic yet
luxurious, the 32 bedrooms have cottagey dcor with exposed beams,
tile flooring, full-length windows and distressed wooden furniture.
Despite the panoramic views of picture-perfect Provence afforded by
its terraces, their truffle hunting season (autumn and spring) is Crillons
main draw. Join truffle expert, Eric Jaumard, into the forest with his
reliable and trusty dog, where he talks through the techniques which
have been keeping this unique and old-fashioned pastime alive in
this delectable corner of France. There are some fantastic truffle and
wine weekends that are worth looking out for, too: they cater for a
morning of hunting, a wine-tasting visit to the world-famous winery
of Chteauneuf-du-Pape, before a dinner with a menu peppered with
truffle literally on every course.
Prices range from 250 to 510 per room, per night; suites go from 360 to
780 per room, per night (+ 3349 065 6161; crillonlebrave.com). Eurostar
has a direct service from London to Avignon with prices starting from 109

KEMPINSKI PORTOROZ,
SLOVENIA

PALAZZO SENECA,
ITALY

The Slovenian and Croatian truffle scene

is often overlooked in favour of the one
found in Italy and France but that
shouldnt be the case. On the peninsula
of Istria, which sits just across the water
from the Italian city of Venice and shared
by both Slovenia and Croatia, locals boast
three sorts of black truffles, as well as
the coveted white truffle, often known
to be the most valuable in the world. The
epicentre of the buried Istrian treasures
terrain is the hilltop Croatian town of
Buzet, but there are worthwhile visits to
the nearby truffle-rich Motovun forest,
too (it depends on which guide you follow,
for hunters each own different plots of
land and guard them passionately). The
Kempsinki Portoroz, situated on the
Slovene stretch of Istria, and which offers
fabulous views over the Adriatic and Sea
and the Istrian countryside, is the place
to turn for the complete experience. The
luxurious Portoroz, situated in Slovenia,
should be your fi rst port of call when
booking visits to local truffle sites, tours
with local professional hunters and lessons
on how to pick and what to look for. There
are plenty of packages available, plus the
chance to combine them with other local
activities: private jet tours over the Slovene
mountains, visits to the asparagus festival
in April, the Dekani olive festival in June
and the salt, wine and olive festival in
Piran come October. Dont miss Istria in
November, however, for thats when Buzets
much-loved annual Truffle Festival a
trade show where hunters, gatherers and
truffle enthusiasts descend to heap praise on
the highly-prized rich and earthy flavour
these gems produce takes place.

Italy is the most famous truffle-bearing

of all the countries that are fortunate
to be rich in Black Diamonds. But it is
in the central Italian region of Umbria,
and specifically the truffle-capital
Norcia, where one ought to focus their
attention come truffle-hunting season.
The impressive Palazzo Seneca, located
within a 16th-century Umbrian palace
and situated at the heart of Sibillini
National Park, is the place to stay. For
at the time of the year that the globallyrevered and highly-valuable subterranean
mushroom is ready for its picking,
this family-run, white-washed hotel
have a perfect and irresistible offer for
you. Take the Truffle Package and you
will be treated to a guided tour with a
trifulau, a professional truffle hunter
(and his dog), who guides and tutors
newcomers to this endlessly-fascinating,
age-old practice by demonstrating all the
techniques he and his helpers follow in
the unearthing of this precious foodstuff.
And if thats not enough, there is also a
truffle-focused cooking class with Head
Chef Flavio Faedi to follow that, as well
as the appearance of this particular and
rare speciality within both the Granaro
del Monte restaurant and the exquisite
Vespasia. Choose from an incredible
selection of seasonal specialities including
local farmers poached eggs with black
truffle sauce, risotto with black truffle
sauce and fresh giuncata cheese and
Gnocchi made from Castelluccio potatoes
stuffed with black truffles. You get the
message. Its a truffle heaven and
absolutely divine.

Vive la

France

Katie Jarrett bids farewell to the bad old days of the school French
exchange once and for all, and instead goes in pursuit of the real
France - via lashings of tarte Tropezienne, naturally

nyone whos ever been

on a school exchange to
France will know that
one normally comes away
having absorbed very
little culture. Thats
not because it isnt there, but if youre
anything like me, you cry regularly
down the phone to your parents, glean
no knowledge of food except hoarding
packets of Galettes Bretonnes in your
room and out of pure desperation
only learn how to shout arretez la
voiture et laissez moi sortir,
or other such hopelessly
useless gems.
So after accepting
what was labeled a
gastronomic tour of

France across three regions I was prepared

to revisit the old clichs. What I didnt
know before this trip was that I had
previously been looking for the real France
in all the wrong places.
First stop was Deauville, which is to
Paris what The Hamptons are to New
York. Known well to the French but not
so well to the English, this is a seaside
town boasting a rich history in northeastern Normandy. Houses in the town
are painted in pastel shades and adorned
with decorative quoins, turrets and delicate
wooden balconettes.
Its claims to fame are numerous:
Coco Chanel established her
first luxury boutique here
in the early 1900s, and
it holds an annual

film festival in September, to which stars

of stage and screen flock and can be found
sipping chocolat chaud in its handsome
patisseries.
Off the beaten track and a few
miles away from the town centre is the
extraordinary Les Manoirs de Tourgevilles,
a four-star hotel situated in the middle of
the countryside. Originally built as a film set
by Claude Lelouch, the film was abandoned
and the structure a neo-Norman manor
house and a series of outbuildings were
converted by hotel group, Groupe Floirat.
The landscape around Les Manoirs is all
rustic idyll. The apple orchards and green
pastures strewn with horses and rickety
wooden farm machinery are truly Chauceresque. Inside, it is like a royal hunting lodge.

Rooms span three-floors, the sitting room

sprawls the length of one of its cloisters and
one is always met by a crackling fire. The
resident restaurant, Le 1899, headed up by
Executive Chef Emmanuel Andrieu prepares
traditional Normandy
fare (starting, always,
with the delightful
Croquettes de
Fromages Normands),
giving a sense of old
France preserved.
A short flight later,
and I was in St Jean de
Luz, a picturesque place
in the Basque region.
It is an old town which
has suffered at the hand of its fair share of
drama, having hosted a royal wedding Louis
XIVs first marriage to 22-year old MariaTheresa of Spain in 1660 and the evacuation
of the Polish army during World War Two.

In season, the fishing port accommodates

the yachts and second homes of the
European sailing elite. The architecture is
varied: 16th-century churches and houses
which have remained standing through

sell sailing gear at exorbitant prices. Up on

the cliff, Hotel La Reserve overlooks St
Jean de Luz and its turquoise bay-trapped
sea. The view from one of the comfortable
terraced rooms is of coastal paths, trendy
shops and restaurants where
you go to see and be seen.
If Deauville hosts French
aristocracy, then St Jean de
Luz hosts the daredevils
and trendsetters of French
society. The Ilura restaurant
at La Reserve embodies
this daring. Head chef
is 20-something Fabrice
Idiart, who has been given
the freedom to manage a
kitchen which combines his creativity and
a true knowledge of Basque cuisine (confit
du canard, grilled sea bass la biscayenne,
fraises gariguettes de bayonne, and so
on.) His repertoire is full of unexpected

egg one minute, and experimental food,
octopus rock, the next. It was all wonderful
until the Tropezienne tarte appeared just
as I thought Id had my gastronomic fill for
the night. Native to the region, the tarte is a
custard cream cake made in heaven, which,
when paired with a sharp raspberry sorbet
turned me into what Martin Amis would call
a gurgling wizard of calorific excess.
And that is the charm of this quaint port
made famous by its annual influx of celebrity
and billionaire visitors; when one thinks all
eyes should be fixed on the marina, awaiting
the arrival of another gargantuan vessel, in
fact, St Tropezs real delight is on ones plate.
And so it was throughout my travels
through these three corners of France; over
my umpteenth serving of Tropezienne tarte,
I realised just how splendidly gourmand this
country really is. There are secret recipes and

long histories behind everything the French

eat and for the entirety of this one fortunate
week, all those I met on each contrasting
coastline, had successfully changed my
perceptions of France through menus alone.
Suffice to say, I didnt need to call my
parents once.

Next stop was St Tropez and through
the gates of exclusive five star Hotel Byblos.
Away from the competing yachts at the
waters edge, this is undoubtedly where
the beautiful people go, possibly one of
only a few places in the world which can
be name-dropped without explanation indeed, Rolling Stone Mick Jagger hosted his
legendary raucous reception for his wedding
to Bianca here.
The interior of Byblos reflects the tiny
but endlessly idiosyncratic St Tropezienne
alleys which wrap around the property. No
two rooms are the same here: some come
spread over mezzanines, while others come
to life as two vast apartments attached at
the hip.

t seems like only yesterday we were cheering on our athletes at the Olympic
Games and all eyes were on the gold medals. As those memories fade, along
with the summer light, focus once more turns to other challenges, in particular, the traditionally busy autumn property market.
It is increasingly evident that Chiswick has become the destination for
many people moving out of Holland Park, Kensington, and Notting Hill. Buyers
are attracted by its green open spaces, excellent schools, transport links, river
walks and pubs, not to mention the reasonable prices. There has certainly been
tremendous change during the 30 years I have worked in Chiswick today we
have so many fashionable restaurants, the streets are filled with designer buggies
and on Saturday mornings every caf is bursting with people enjoying their
morning coffees. Its far from the sleepy garden suburb of the past.
There is a continuing shortage of property family homes in particular.
Chiswick is now becoming a supply driven market, with many buyers finding
themselves in competitive bidding situations and being forced to pay premium
prices for the right property. Buyers, however, are taking a long term view and
seem less worried about the current economic doom and gloom in the knowledge
that they may not be selling for many years. They have confidence that putting
their money in bricks and mortar is a better option than keeping it in the bank.
With demand from property purchasers across the country at lower levels than
during the market peak in 2007, hopefully an increase in supply is likely to ease the
pressure on property prices, in an already price sensitive market. Either way, it is a
challenging market for sellers and buyers which is even more reason to make sure
you are dealing with agents you can trust, and who have experience and knowledge
of the market. At John D Wood & Co. we can offer a combined experience in
excess of 100 years in the local Chiswick market and are able to offer an unrivalled
level of local expertise.
During the summer we launched a new rental department due to demand in
the area. It is being run by Elena Baskerville who is busy building her portfolio.
She is already marketing several large family homes in Bedford Park and Chiswick
Park as well as some smaller apartments in Chiswick and Brentford. Elena and
her team are also able to help local residents wanting to move to Holland Park and
Richmond though working with our neighbouring offices.
Were coming up to the annual Chiswick House Gardens Dog Show on 23rd
September, which John D Wood & Co. is sponsoring. Once again Im judging
The Best in Show competition with George Nissan and I look forward to seeing
whether my Dalmatian, Lucky, and long-haired miniature Dachshund, Buster,
win their Best in Breed categories. I expect to see several of our local
dog loving celebrities there and hope the event raises lots of money and
awareness for The Dogs Trust.

MARKET INSIGHT:
BROOK
GREEN BUZZ:
Last year the Brook
Green and Brackenbury
Village property
market witnessed
minor fluctuations, but
essentially remained
level following
significant price rises
(which grew by 25%+
in some cases during
2010). This year we
have seen gradual
growth between January and June, after which
time the market levelled off. Prices remain
strong, but there is now more parity between the
vendors market and buyers market. That said,
stock levels remain chronically low and potential
buyer numbers sky high. For this reason, I feel
that the market will remain stable and the trade
level will be increasing for the remainder of the
year as more stock is made available during the
autumn market. Even if the economy remains
slow, I suspect that considerable sums will be
invested in the London property market next
year in a continued effort to safe guard peoples
cash reserves and thus propagate steady growth
through the first six months.

EALING INSIGHT:

BROOK GREEN FUN DAY

The Friends of Brook Green charity is set
up and run by local volunteers of all ages and
backgrounds as an independent community
group recognised by the London Borough of
Hammersmith and Fulham. Through events
such as Brook Green Fun Day, the charity
aims to raise money to protect and enhance the
beautiful open space of Brook Green, the heart
of the community. Over the years the charity
has helped foster a sense of community and
conviviality around the green and local residents
have been able to enjoy the space. Marsh &

Parsons have been part of Brook Green Fun

Day since 2010. This year the event is being held
on September 15th on the Green and theres
something there for everyone from steel bands,
arts and crafts, food and refreshments, childrens
entertainment, including the fantastic Helter
Skelter ride, which Marsh & Parsons are very
proud to be the sponsor of. The ever popular
Marsh & Parsons face painter will certainly
be there on the day, keeping the children
entertained. marshandparsons.co.uk

The Ealing sales market

has kept its head
high above water this
summer with buyers
and sellers using the
Olympic period as a
good excuse to focus on
moving. We have seen
some excellent prices
achieved this year on
large family homes
with a sale on Blakesley
Avenue W5 at 3.2
million, and another on
Cumberland Park W3 at
1.95 million. There has also been a significant
uplift of interest in three/four bedroom houses
in the 550,000 - 750,000 price range as family
buyers concentrate on securing a new home that
they can be in by Christmas. We have agreed
sales on two houses in that category this month
and both received multiple offers.
Although the summer period has been busier
than expected, the 2012 market has largely been
overwhelmed by distractions with the Queens
Diamond Jubilee celebrations, a month of solid
rain and, of course, the London 2012 games. To
that end, many people have not moved yet this
year, so we are expecting a busy final quarter of
the year as a result.

Sulgrave Road, from an aerial view, forms a clear curve along with Minford
Gardens and Sinclair Road. This was not by chance, but due to the London and
South Western Railways construction of a loop line in 1869 through what is now
Kensington Olympia station, round the north of Brook Green to Hammersmith.
The name Brook Green is derived from a stream that ran along the south side
of the green. After leaving Brook Green, it flowed under the Hammersmith Road
by means of a brick culvert and then on into the Thames. In the 19th century,
local historian Thomas Faulkner described the area as a pleasant village with
some good houses. Though the area is no longer quite so bucolic, and is a stones
throw from the bustling Westfield Shopping Centre, it certainly still has some
fantastic abodes. This Sulgrave Road home is bright and spacious and comprised
of four large bedrooms over three floors. Through Marsh & Parsons, Brook Green
