Thislittlebookhasbeencompiledbyspecialandrepeatedrequest.Otherwise,Ishouldhavehesitatedto
addtothealreadyexistingnumberofvegetariancookerybooks.Itisnotaddressedtotheprofessional
cook,buttothosewhofindthemselves,asIdid,confrontedwiththenecessityofmanufacturing
economicalvegetariandisheswithoutanypreviousexperienceofcooking.Anexperiencedcookwill
doubtlessfindmanyofthedetailedinstructionssuperfluous.
Theoriginalideawastocompileacookerybookforthosevegetarianswhoarenonusersofmilkand
eggs.Butasthiswouldhavecurtailedthebook'susefulness,especiallytovegetarianbeginners,the
projectwasabandoned.Atthesametime,nonusersofmilkandeggswillfindthattheirinterestshave
beenespeciallyconsideredinverymanyoftherecipes.
Alltherecipeshavebeenwelltested.ManyofthemIevolvedmyselfafterrepeatedexperiments.Others
Iobtainedfromfriends.Butallofthemareusedinmyownlittlehousehold.Sothatifanyreader

bookuseful,Iamnowincludingrecipesforyeastbread,cheesedishes,nutmeatdishes,etc.Ihaveputall
theseinthechapterentitled"ExtraRecipes."Togototheoppositeextremethereisashortchapterfor

I.UNFERMENTEDBREAD.
1.COLDWATERBREAD.
11/4lb.finewholemealflourto3/4pintwater.
Putthemealintoabasin,addthewatergradually,andmixwithaclean,coolhand.(Bread,pastry,etc.,
mixedwithaspoon,especiallyofmetal,willnotbesolightasthatmixedwithalightcoolhand.)Knead
lightlyfor20minutes.(Alittlemoreflourmayberequiredwhilekneading,assomebrandsofmealdo
notabsorbsomuchwaterasothers,butdonotaddmorethanisabsolutelynecessarytopreventthe
fingerssticking.)Putthedoughontoaflouredboardanddivideintofourroundloaves.Prickwithafork
ontop.
Thecolderthewaterused,thelighterthebread,andifthemixingbedonebyanopenwindowsomuch
thebetter,forunfermentedbreadisairraised.Distilledorcleanboiledrainwatermakesthelightest
bread.Butitshouldbepouredbackwardsandforwardsfromonejugtoanotherseveraltimes,inorderto
aerateit.
Anothermethodofmixingisthefollowing:Putthewaterintothebasinfirstandstirthemealquickly
intoitwithaspatulaorwoodenspoon.Whenitgetstoostifftobestirred,addtherestofthemeal.Knead
fortwominutes,andshapeintoloavesasabove.

BAKING.Bakeonthebareovenshelf,floored.Ifpossiblehaveafewholesboredintheshelf.Thisis
notabsolutelynecessary,butanytinkerorironmongerwillperforateyourshelfforafewpence.Better
stillarewireshelves,likesieves.(Thisdoesnotapplytogasovens.)
Startwithahotoven,butnottoohot.Totest,sprinkleateaspoonfulofflourinapattypan,andputinthe
ovenforfiveminutes.Attheendofthattime,iftheflourisalightgoldenbrowncolour,theovenis
right.Nowputinthebreadandkeeptheheatoftheovenwellupforhalfanhour.Attheendofthistime
turntheloaves.Nowbakeforanotherhour,butdonotmakeupthefireagain.Lettheovengetslightly
cooler.Thesameresultmayperhapsbeobtainedbymovingtoacoolershelf.Italldependsontheoven.
Butalwaysstartwithahotoven,andafterthefirsthalfhourlettheovengetcooler.
Alwaysremember,thatthelargertheloavestheslowermustbethebaking,otherwisetheywillbe
overdoneontheoutsideandunderdoneinthemiddle.
Donotopentheovendooroftenerthanabsolutelynecessary.
Ifagasovenisusedthebreadmustbebakedonabakingsheetplacedonasandtin.Asandtinisthe
ordinarysquareoroblongbakingtin,generallysuppliedwithgasstoves,filledwithsilversand.Abaking
sheetissimplyapieceofsheetiron,asizesmallerthantheovenshelves,sothattheheatmaypassup
androundit.Anyironmongerwillcutonetosizeforafewpence.Donotforgettoplaceavesselof
water(hot)inthebottomoftheoven.Thisisalwaysnecessaryinagasovenwhenbakingbread,cakesor
pastry.
Itmustnotbeforgottenthatovensarelikechildrentheyneedunderstanding.Thetemperatureofthe
kitchenandtheoven'snearnesstoawindowordoorwilloftenmakeadifferenceoffiveortenminutes
inthetimeneededforbaking.OnegasoventhatIknewneverbakedwellinwinterunlessascreenwas
putbeforeittokeepawaydraughts!
ROLLS.Ifyoudesiretogetyourbreadmorequicklyitisonlyaquestionofmakingsmallerloaves.
Littlerollsmaybecutoutwithalargeeggcuporsmallpastrycutter,andthesetakeanytimefrom
twentyminutestohalfanhour.
2.EGGBREAD.
9ozs.finewholemeal,1egg,abare1/2pintmilkandwater,buttersizeofwalnut.
Putbutterinaqr.qtn.tin(asmallsquarecorneredtinprice61/2d.atmostironmongers)andletit
remaininhotovenuntilitboils.Wellwhiskegg,andaddtoitthemilkandwater.Siftintothisliquidthe
wholemeal,stirringallthetime.Pourthisbatterintothehotbutteredtin.Bakeinaveryhotovenfor50
minutes,thenmovetoacoolerpartforanother50minutes.Whendone,turnoutandstandonendto
cool.
3.GEMBREAD.
Putintoabasinapintofcoldwater,andbeatitforafewminutesinordertoaerateitasmuchas
possible.Stirgently,butquickly,intothisasmuchfinewholemealaswillmakeabattertheconsistency
ofthickcream.Itshouldjustdropoffthespoon.Dropthisbatterintoveryhotgreasedgempans.Bake
forhalfanhourinahotoven.Whendone,standonendtocool.Theymayappeartobealittlehardon
firsttakingoutoftheoven,butwhencooltheyshouldbesoft,lightandspongy.Whenproperlymade,

theuninitiatedgenerallyrefusetobelievethattheydonotcontaineggsorbakingpowder.
Therearepropergempans,madeofcastiron(from1s.)forbakingthisbread,andthebestresultsare
obtainedbyusingthem.ButwithafavourableovenIhavegotprettygoodresultsfromtheordinary
bakingtinswithdepressions,thekindusedforbakingsmallcakes.Buttheseareathinnermakeandapt
toproduceatoughcrust.
4.HOTWATERROLLS.
Thisbreadhasaverysweettaste.Itismadebystirringboilingwaterintoanyquantityofmealrequired,
sufficienttoformastiffpaste.Thentakeoutofthebasinontoaboardandkneadquicklywithasmuch
moreflourasisneededtomakeitworkable.Cutitintosmallrollswithalargeeggcuporsmall
vegetablecutter.Thequickerthisisdonethebetter,inordertoretaintheheatofthewater.Bakefrom20
to30minutes.
5.OATCAKE.
Mixmediumoatmealtoastiffpastewithcoldwater.Addenoughfineoatmealtomakeadough.Rollout
verythinly.Bakeinsheets,orcutintobiscuitswithatumblerorbiscuitcutter.Bakeonthebareoven
shelf,sprinkledwithfineoatmeal,untilaverypalebrown.Flourmaybeusedinplaceofthefine
oatmeal,asthelatteroftenhasabittertastethatmanypeopleobjectto.Thecauseofthisbitternessis
staleness,butitisnotsonoticeableinthecoarseormediumoatmeal.Freshlygroundoatmealisquite
sweet.
6.RAISINLOAF.
1lb.finewholemeal,6oz.raisins,2oz.Mapleton'snutter,water.
Wellwashtheraisins,butdonotstonethemortheloafwillbeheavy.Ifthestonesaredisliked,seedless
raisins,orevensultanas,maybeused,butthelargeraisinsgiveratherbetterresults.Rubthenutterinto
theflour,addtheraisins,whichshouldbewelldriedafterwashing,andmixwithenoughwatertoforma
doughwhichalmost,butnotquitedropsfromthespoon.Putintoagreasedtin,whichshouldbeveryhot,
andbakeinahotovenatfirst.Attheendoftwentyminutestohalfanhourtheloafshouldbeslightly
browned.Thenmovetoacoolershelf,andbakeuntildone.Testwithaknifeasforordinarycakes.
Forthisloafasmall,deep,squarecorneredtinisrequired(price61/2d.),thesameasfortheeggloaf.3
ozs.freshdairybuttermaybeusedinplaceofthe2ozs.nutter.
7.SHORTENEDBREAD.
Into1lb.wholemealflourrub4ozs.nutteror5ozs.butter.Mixtoastiffdoughwithcoldwater.Knead
lightlybutwell.Shapeintosmallbunsabout1inchthick.Bakeforanhourinamoderateoven.

II.SOUPS.
Soupsareofthreekindsclearsoups,thicksoups,andpures.Aclearsoupismadebyboilingfruitor
vegetables(celery,forexample)untilallthenourishmentisextracted,andthenstrainingofftheclear
liquid.Alittlesagoormacaroniisgenerallyaddedandcookedinthis.Whencarrotsandturnipsareused,
afewsmallpiecesarecutintodiceorfancyshapes,cookedseparately,andaddedtothestrainedsoup.
Thicksoupsalwaysincludesomefarinaceousingredientsforthickening(flour,peaflour,potato,etc.).
Puresarethicksoupscomposedofanyvegetableorvegetablesboiledandrubbedthroughasieve.This
isdone,alittleatatime,withawoodenspoon.Alittleofthehotliquorisaddedtothevegetablefrom
timetotimetoassistitthrough.
1.BARLEYBROTH.
1carrot,1turnip,4leeksor3smallonions,4sprigsparsley,4stickscelery,1teacuppearlbarley,3qts.
water.(Thecelerymaybeomittedifdesired,or,wheninseason,1teacupgreenpeasmaybe
substituted.)
Scrubclean(butdonotpeel)thecarrotandturnip.Washcelery,parsley,andbarley.Shredallthe
vegetablesfinelyputinsaucepanwiththewater.Bringtotheboilandslowlysimmerfor5hours.Add
thechoppedparsleyandserve.
2.CREAMOFBARLEYSOUP.
MakebarleybrothasinNo.1.Thenstrainitthroughawirestrainer.Squeezeitwell,soastogetthe
soupasthickaspossible,butdonotrubthebarleythrough.Skin1/2lb.tomatoes,breakinhalves,and
cooktoapulpverygentlyinaclosedsaucepan(don'taddwater).Addtothebarleysoup,boiluponce,
andserve.
Incasesofillness,especiallywherethepatientissufferingfromintestinaltrouble,afterpreparingas
above,strainthroughafinemuslin.Itshouldalsobepreparedwithdistilled,orcleanboiledrainwater.
3.CLEARCELERYSOUP.
1headcelery,2tablespoonssago,2qts.water.
Washthecelery,chopintosmallpieces,andstewinthewaterfor2hours.Strain.Washthesago,addit
totheclearliquid,andcookfor1hour.
Forthosewhopreferathicksoup,peaflourmaybeadded.Allow1leveltablespoontoeachpintof
soup.Mixwithalittlecoldwater,andaddtotheboilingsoup.Oneortwoonionsmayalsobecooked
withthecelery,ifliked.
4.CHESTNUTSOUP.
1lb.chestnuts,11/2oz.nutterorbutter,2tablespoonschoppedparsley,1tablespoonwholemealflour,
11/2pintswater.

Firstputonthechestnuts(withoutshellingorpricking)incoldwater,andboilforanhour.Thenremove
shellsandputthenutsinanenamelledsaucepanwiththefat.Fryfor10minutes.Addtheflour
gradually,stirringallthetime,thenaddthewater.Cookgentlyforhalfanhour.Lastly,addtheparsley,
boilup,andserve.
Itisratherniceriftheflourisomitted,thenecessarythicknessbeingobtainedbyrubbingthesoup
throughasievebeforeaddingtheparsley.Thosewhodonotobjecttomilkmayuse1pintmilkand1
pintwaterinplaceofthe11/2pintswater.
5.FRUITSOUP.
Fruitsoupsareusedextensivelyabroad,althoughnotmuchheardofinEngland.Buttheymightbetaken
atbreakfastwithadvantagebythosevegetarianswhohavegivenuptheuseoftea,coffeeandcocoa,and
objectto,ordislike,milk.Therecipegivenhereisforapplesoup,butpears,plums,etc.,maybecooked
inexactlythesameway.
1lb.apples,1qt.water,sugarandflavouring,1tablespoonsago.
Washtheapplesandcutintoquarters,butdonotpeelorcore.Putintoasaucepanwiththewaterand
sugarandflavouringtotaste.Whensweet,ripeapplescanbeobtained,peoplewithnaturaltasteswill
prefernoadditionofanykind.Otherwise,alittlecinnamon,cloves,ortheyellowpartoflemonrindmay
beadded.Stewuntiltheapplesaresoft.Strainthroughasieve,rubbingtheapplepulpthrough,but
leavingcores,etc.,behind.Washthesago,addtothestrainedsoup,andboilgentlyfor1hour.Stirnow
andthen,asthesagoisapttosticktothepan.
6.HARICOTBEANSOUP.
2heapedbreakfastcupsbeans,2qts.water,3tablespoonschoppedparsleyor1/2lb.tomatoes,nutor
dairybuttersizeofwalnut,1tablespoonlemonjuice.
Forthissoupusethesmallwhiteorbrownharicots.Soakovernightin1qt.ofthewater.Inthemorning
addtherestofthewater,andboiluntilsoft.Itmaythenberubbedthroughasieve,butthisisnot
imperative.Addthechoppedparsley,thelemonjuice,andthebutter.Boilupandserve.Iftomatopulpis
preferredforflavouringinsteadofparsley,skinthetomatoesandcookslowlytopulp(withoutwater)
beforeadding.
7.LENTILSOUP.
4breakfastcupslentils,1carrot,1turnip,2onions,4qts.water,4stickscelery,2teaspoonsherb
powder,1tablespoonlemonjuice,1oz.butter.
Eitherthered,Egyptianlentils,orthegreenGermanlentilsmaybeusedforthissoup.Ifthelatter,soak
overnight.Stewthelentilsverygentlyinthewaterfor2hours,takingoffanyscumthatrises.Wellwash
thevegetables,slicethem,andaddtothesoup.Stewfor2hoursmore.Thenrubthroughasieve,ornot,
aspreferred.Addthelemonjuice,herbpowder,andbutter(nutordairy),andserve.
8.MACARONISOUP.

1/2lb.smallmacaroni,2qts.waterorvegetablestock,3/4lb.onionsor1lb.tomatoes.
Breakthemacaroniintosmallpiecesandaddtothestockwhennearlyboiling.Cookwiththelidoffthe
saucepanuntilthemacaroniisswollenandverytender.(Thiswilltakeaboutanhour.)Ifonionsareused
forflavouring,steamseparatelyuntiltender,andaddtosoupjustbeforeserving.Iftomatoesareused,
skinandcookslowlytopulp(withoutwater)beforeadding.Ifthevegetablestockisalreadystrongand
wellflavoured,noadditionofanykindwillbeneeded.
9.PEASOUP.
Usesplitpeas,soakovernight,andprepareaccordingtorecipegivenforlentilsoup.
10.POTATOSOUP.
Peelthinly2lbs.potatoes.(Aflourykindshouldbeusedforthissoup.)Cutintosmallpieces,andput
intoasaucepanwithenoughwatertocoverthem.Addthreelargeonions(sliced),unlesstomatoesare
preferredforflavouring.Bringtotheboil,thensimmeruntilthepotatoesarecookedtoamash.Rub
throughasieveorbeatwithafork.Nowadd3/4pintwateror1pintmilk,andalittlenutmegifliked.
Boilupandserve.
Ifthemilkisomitted,thejuiceandpulpoftwoorthreetomatoesmaybeadded,andtheonionsmaybe
leftoutalso.
11.P.R.SOUP.
1headcelery,4largetomatoes,4qts.water,4largeEnglishonions,3tablespoonscoarselychopped
parsley.
ThissoupfiguresofteninthedietsheetofthePhysicalRegenerationistsforgoutyandrheumatic
patients,butinadditiontobeingavaluablemedicineonaccountofitssalts,itisthemostdeliciousclear
soupthatIknowof.Tomake:choptheingredientstodice,coverclosely,andsimmeruntilthequantity
ofliquidisreducedtoonehalf.
12.P.R.BEEFTEASUBSTITUTE.
1/4pintpearlbarley,1/4pintredlentils,2qts.coldbranwater,flavouring.
Tomakethebranwater,boil1measureofbranwith4measuresofwaterfornotlessthan30minutes.
Simmertogetherthebarley,lentils,andbranwaterfor3hours.Toflavour,put4ozs.butteror3ozs.
nutterintoapanwith1lb.slicedonions.Shakeoverfireuntilbrown,butdonotletthemburnorthe
flavourofthesoupwillbespoilt.Addthesetothestockattheendofthefirsthour.Anyothervegetable
likedmaybechoppedtodiceandadded.
Tomatomaybesubstitutedfortheonionifpreferredandnofatused.
Strainthroughahairsieve,andservetheclearliquidafterboilingup.

13.SAGOSOUP.
6ozs.sago,2qts.stock,juiceof1lemon.
Washthesagoandsoakitfor1hour.Putitinasaucepanwiththelemonjuiceandstock,andstewfor1
hour.
14.TOMATOSOUP.
1qt.waterorwhitestock,1lb.tomatoes.
Slicethetomatoes,andsimmerverygentlyinthewateruntiltender.Rubthroughasieve.Boilupand
serve.
15.VEGETABLESTOCK.
To4qts.waterallow1pintlentils,orratherlessthan1pintharicots.Inadditionallow1carrot,1turnip,
1onion,and1/4headofcelery.Cleanapplepeelingsandcores,andanyfreshvegetablecuttingsmay

Therecipesfollowingareintendedtobeusedassubstitutesformeat,fish,etc.
Thebodyneedsforitssustenancewater,mineralsalts,[Footnote:Ialludetomineralsaltsasfoundinthe
vegetablekingdom,nottothemanufacturedsalts,liketheordinarytablesalt,etc.,whicharesimply
poisonswhentakenasfood.]fatsandoils,carbohydrates(starchandsugar),andproteids(thefleshand
muscleformingelements).Allvegetablefoods(intheirnaturalstate)containalltheseelements,and,ata
pinch,humanlifemightbesupportedonanyoneofthem.Isay"atapinch"becauseifthenuts,cereals
andpulseswereruledoutofthedietary,itwould,formostpeople,bedeficientinfatandproteid.
Wholewheat,accordingtoaphysiologistwhoseworkisoneofthestandardbooksonthesubject,isa
perfectlyproportioned,completefood.Henceitispossibletoliveentirelyongoodbreadandwater.
Nutsarethebestsubstituteforfleshmeat.Nextinordercomethepulses.Afterthesecomewholewheat
andunpolishedrice.Bothnutsandpulsescontain,likefleshmeat,alargequantityofproteidina
concentratedform.Nooneneedsmorethan1/4lb.perday,atmost,ofeither.(Eggs,ofcourse,area
goodmeatsubstitute,sofarasthepercentageofproteidisconcerned.)
1.ALMONDS,ROASTED.

Takeanyquantityofshelledalmondsandblanchbypouringboilingwateronthem.Theskinscanthen
beeasilyremoved.Laytheblanchedalmondsonatin,andbaketoapaleyellowcolour.Onnoaccount
letthembrown,asthisdevelopsirritatingproperties.Tobeeatenwithvegetablestewsandpies.(Thatis,
withanysteworpiewhichcontainsneithernutsnorpulse.)
2.CHESTNUTS,BOILED.
Anexcellentdishforchildrenandpersonswithweakdigestivepowers.Thechestnutsneednotbepeeled
orpricked,butmerelywellcoveredwithcoldwaterandbroughttotheboil,afterwhichtheyshouldboil
foragoodhalfhour.Drainoffthewaterandservehot.Theymayalsobeboiled,peeled,mashedand
eatenwithhotmilk.
3.CHESTNUTSAVOURY.
Boilfor15minutes.Shell.Fryinaverylittlenutfatfor10minutes.Barelycoverwithwater,andstew
gentlyuntiltender.Whendone,addsomechoppedparsleyandthickenwithchestnutflourorfine
wholemeal.Forthosewhopreferit,milkanddairybuttermaybesubstitutedforthewaterandnutfat.

Cookthelentilsslowlyinasaucepanwiththewateruntiltheyaresoftanddry.Steamtheonions.If
Kornulesareused,addasmuchboilingwatertothemastheywillonlyjustabsorb.Ifbreadcrumbsare

used,donotmoistenthem.Addthegratedyellowpartofthelemonrindandtheherbs.Mixallthe
ingredientswelltogetherandslightlymoistenwithratherlessthanatablespoonfulofwaterinwhichis
dissolvedateaspoonfulofrawcornflour.Thisisimportant,asittakestheplaceofeggforbinding
purposes.Shapeintoround,flatrissoles,rollinwhiteflour,andfryinboilingoilorfatuntilagolden
browncolour.
Abeateneggmaybeusedforbindinginplaceofthecornflour,andtherissolesmaybedippedinegg
androlledinbreadcrumbsbeforefrying.Servehotwithbrowngravyortomatosauce.Orcoldwith
salad.
12.MACARONIANDTOMATO.
1/4lb.macaroni,1oz.butter,1/2lb.tomatoes,parsley.
Usethebestqualityofmacaroni.Thesmallerkindsarethemostconvenientastheycookmorequickly.
Spargettiisafavouritekindwithmostcooks.Breakthemacaroniintosmallpiecesanddropitintofast
boilingwater.Cookwiththelidoffuntilquitetender.Beparticularaboutthis,asunderdonemacaroniis
notapleasantdish.(Withalittlepractisethecookwillbeabletocalculatehowmuchwaterisneededfor
italltobeabsorbedbythetimethemacaroniisdone.)Whendone,drainwell,addthebutter,andshake
overthefireuntilhot.
Whilethemacaroniiscooking,skinthetomatoes,breakinhalves,andputintoatightlycovered
saucepan.(Donotaddwater.)Setatthesideofthestovetocookveryslowly.Theyshouldneverboil.

13.MUSHROOMANDTOMATO.
Manyfoodreformersconsidermushroomstobeunwholesome,andindeed,intheordinaryway,theyare
bestleftalone.Butiftheycanbeobtainedquitefresh,andarenottheforced,highlymanuredkinds,Ido
notthinktheyareinjurious.Buttheverylargevariety,commonlycalledhorsemushrooms,shouldnotbe
eaten.
Peelandstalkthemushrooms.Examinethemcarefullyformaggots.Fryinjustenoughnuttertoprevent
themstickingtothepan.Cookuntilquitetender.Pileonawarm,deepdish.Slicethetomatoesandfryin
thesamepan,takingcarenottoaddmorenutterthanisabsolutelynecessary.Whentender,arrangethe
tomatoslicesroundandonthemushrooms.Pouratablespoonfulormore,accordingtotheamount
cooked,ofhotwaterintothepan.Stirwellandboilup.Pourthegravyformedoverthemushrooms,and
serve.
14.NUTCOOKERY.
Fornutcookery,anutmillorfoodchopperofsomekindisnecessary.Atinyfoodchopper,whichcan
beregulatedtochopfinelyorcoarselyasrequired,maybeboughtfor3s.atmostfoodreformstores.It
alsohasanattachmentwhichmaceratesthenutssoastoproduce"nutbutter."Thelargersizeat5s.isthe
moreconvenientforordinaryuse.Ifonlyonemachinecanbeafforded,thefoodchoppershouldbethe

onechosen,asitcanalsobeusedforvegetables,breadcrumbs,etc.Thenutmillproperflakesthenuts,it
willnotmaceratethem,andisusefulfornutsonly.Butflakednutsareawelcomeandprettyadditionto
fruitsalads,stewedfruits,etc.
Ifthenutstobemilledorgroundclogthemachine,puttheminawarmovenuntiltheyjustbeginto
changecolour.Thenletthemcool,andtheywillbefoundcrispandeasytowork.Butavoiddoingthisif
possible,asitdriesupthevaluablenutoil.
15.NUTROAST.
2breakfastcupsbreadcrumbs,2mediumSpanishonions,or2tomatoes,2breakfastcupsgroundnuts,
nutter.
Anyshellednutsmaybeusedforthisroast.Somepreferonekindonlyotherslikethemmixed.
Almonds,pinekernels,newBrazilnuts,andnewwalnutsarenicealone.Oldhazelnutsandwalnutsare
nicermixedwithpinekernels.Agoodmixtureisoneconsistingofequalquantitiesofblanchedalmonds,
walnuts,hazelnuts,andpinekernelswherestricteconomyisaconsideration,peanutsmaybeused.Put
afewofeachkindalternatelyintothefoodchopperandgrinduntilyouhaveenoughtofilltwocups.
Mixwiththesamequantitybreadcrumbs.Gratetheonions,discardalltoughpieces,usingthesoftpulp
andjuiceonlywithwhichtomixthenutsandcrumbstoaverystiffpaste.Ifonionsaredisliked,skinand
mashtwotomatoesforthesamepurpose.Oroneonionandonetomatomaybeused.
Wellgreaseapiedish,fillitwiththemixture,spreadafewpiecesofnutter(orbutter)onthetop,and
bakeuntilbrown.
Anothermethod.Forthosewhouseeggs,themixingmaybedonewithawellbeatenegg.Themixture
mayalsobeformedintoanoblongroast,greased,andbakedonatin.Servewithbrowngravyortomato
sauce.
16.NUTRISSOLES.
Makeastiffmixtureasfornutroast,addatablespoonfulsavouryherbsifliked.Formintosmall,flat
rissoles,rolltheminwhiteflour,andfryindeepfatoroil.Servehotwithgravy,orcoldwithsalad.
17.NUTPASTE.
Anourishingpasteforsandwichesismadebymaceratingpinekernelswiththe"nutbutter"attachment
ofthefoodchopper,andflavouringwithalittlefreshtomatojuice.Thismustbeusedthesamedayas
madeasitwillnotkeep.
Anothermethod.Putequalquantitiesofpeanutsandpinekernelsintoawarmovenuntilthelatterjust
begintocolour.Theskinsofthepeanutswillnowbefoundtorubeasilyoff.Putthemixednutsthrough
themaceratorandmixtoastiffpastewithsometomatojuice.Putinasaucepanandheattoboilingpoint.

juice,nuttersizeofsmallwalnut.
Scrubandscrapethecarrot,turnip,parsnipandartichokes.Peelthepotatoandonions.Shredtheonions
andputthemintoastewpanwiththenutter.Shakeoverthefire,andfryuntilbrown,butdonotburnor
theflavourofthestewwillbecompletelyspoilt.Cutthecarrotandparsnipandpotatointoquarters,the
artichokesintohalves,andputintothestewpanwiththeonions.Barelycoverwithwater.Bringtothe
boilandstewverygentlyuntiltender.Skinthetomatoes,breakinhalves,andcookslowlytoapulpina
separatepan.Addthese,withthelemonjuice,tothestew,andslightlythickenwithalittlewholemeal
flourjustbeforeserving.

IV.CASSEROLECOOKERY.
CasseroleistheFrenchwordforstewpan.But"CasseroleCookery"isaphraseusedtodenotecookery
inearthenwarepots.Itcommendsitselfespeciallytofoodreformers,astheslowcookeryrendersthe
foodmoredigestible,andtheearthenwarepotsareeasiertokeepcleanthantheordinarysaucepan.The
foodisservedupinthepotinwhichitiscooked,thisbeingsimplyplacedonadish.Alargepudding
basincoveredwithaplatemaybeusedindefaultofanythingbetter.Acleanwhiteservietteisgenerally
pinnedroundthisbeforeitcomestotable.Variousattractivelookingbrowncrocksaresoldforthe
purpose.Butanyonewhopossessestheoldfashioned"beeftea"jarneedsnothingelse.Itisimportantto
ensurethatanewcasseroledoesnotcrackthefirsttimeofusing.Todothisputthecasseroleintoalarge,
cleansaucepan,orpail,fullofcleancoldwater.Putoverafireorgasring,andbringslowlytotheboil.

V.CURRIES.
Idonotrecommendtheuseofcurries.Manyfoodreformerseschewthemaltogether.Buttheyare
sometimesusefulfortheentertainmentofmeateatingfriends,ortotideovertheattackofmeatcraving
whichsometimesbesetsthevegetarianbeginner.Ofcoursetherearecurriesandcurries.Cheapcurry
powdersareverymuchhotterthanthoseofabetterquality.Whenbuyingcurrypowderitisbesttogoto
ahighclassgrocerandgetthesmallestpossibletinofthebesthekeeps.Itwilllastforyears.Thosewho
prefertomaketheirowncurrypowdermaytryDr.Kitchener'srecipeasfollows:

2.EGGCURRY.
1largeonion,1dessertspooncurrypowder,1oz.butterornutter,3hardboiledeggs,1dessertspoon

Shredtheonion,putitinthestewpanwiththebutter,sprinklethecurrypowderover,andfrygently
untilquitebrown.Shelltheeggsandcuttheminhalves.Addtheeggs,thetomatopulp,andthewater.
Stirwell,andsimmeruntiltheliquidisreducedtoonehalf.Thiswilltakeabout15minutes.Servewith

Thevegetarianbeingavowedlyathinkerandapioneerwould,itmightbeimagined,treatwhatis
nowoneofhisstaplearticlesofdietatleastascarefullyastheoutofdateflesheater.Butno!Forthe
mostpart,hisvegetablesareboiled,andwhenthebestpartofthefoodconstituentsandalltheflavour
havebeenextracted,hedinesoffamassofindigestiblefibremerewastematterandallowsthe
"broth"tobethrowndownthesink,withtheconsequencethatmanyvegetariansarepale,flabby
individualswhosuccumbtotheslighteststrain,andsufferfromchronicdyspepsia.
Theremedyissimple.Treatvegetablesasyouusedtotreatmeat.Bakeorstewthemintheirownjuice.
(SeerecipeforVegetarianIrishStew.)Attheleast,steamthem.Alittleofthevaluablevegetablesalts
arelostinthesteaming,butnotmuch.Betterstill,useadoubleboilerette.Averylittlewaterisputinto

Noexacttimecanbegivenforcookingvegetables,asthisvarieswithageandfreshness.Theyounger

5.TOMATOSAUCE.

Pourboilingwateronthetomatoes,allowtostandfor1minute,afterwhichtheskinsmaybeeasily
removed.Breakthetomatoes(donotcut)andputintoacloselycoveredsaucepan.Putononesideofthe
range,oranasbestosmatoveraverylowgasring,andallowtocookslowlytopulp.Serve.
Thissimplerecipemakesthemostdelicioussauceforthosewhoappreciatetheundilutedflavourofthe
tomato.Butagoodsaucemaybemadebyallowing1teacupwaterorcarrotstocktoeachteacupofpulp,
boilingupandthickeningwithwholemealflour.Alittlebuttermaybeaddedjustbeforeserving.
6.WHITESAUCE.
Allow1leveldessertspooncornflourto1/2pintmilk.Mixthecornflourwithaverylittlecoldwaterina
basin.Pourtheboilingmilkintothis,stirringallthetime.Returntosaucepanandboil5minutes.Adda
smallpieceofbutterjustbeforeserving.
7.BROWNING,FORGRAVIESANDSAUCES.
Put2ozs.lumpsugarinsaucepanwithasmuchwaterasitwilljustabsorb.Boiltoaclearsyrup,and
thensimmerverygently,stirringallthetime,untilitisaverydarkbrown,almostblack.Itmustnotburn
ortheflavourwillbespoilt.Thenaddapintofwater,boilforafewminutes.Putintoatightlycorked

VIII.EGGCOOKERY.
Manyvegetariansdiscardtheuseofeggsandmilkforprinciple'ssake,butthemajoritystillfindthem
necessaryasahalfwayhouse.Butnoeggsatallareinfinitelytobepreferredtoanybutrealnewlaid
eggs.Thecommercial"cookingegg"isanunwholesomeabomination.

Puttheeggonincoldwater.Assoonasitboilstakethesaucepanoffthefireandstandononesidefor5
minutes.Attheendofthistimetheeggwillbefoundtobeverylightly,butthoroughly,cooked.

3eggs,1tablespoonmilk,1/2oz.freshbutter.
Beatuptheeggsandaddthemilk.Meltthebutterinasmallstewpan.Whenhot,pourintheeggsand
stiruntiltheybegintoset.Havereadysomebutteredtoast.Pileoneggsandserve.

1egg,2mediumtomatoes,butter.
Skinthetomatoes.Breakintohalvesandputthem,withaverysmallpieceofbutter,intoasmallstew
pan.Closetightly,andcookslowlyuntilreducedtoapulp.Breaktheeggintoacupandslidegentlyon
tothetomato.Putonthestewpanlid.Theeggwillpoachinthesteamarisingfromthetomato.
4.DEVILLEDEGGS.
Boileggsfor20minutes.Removeshells.Cutinhalvesandtakeouttheyolks.Wellmashyolkswitha
verylittlefreshbutter,melted,andcurrypowdertotaste.Stuffthewhiteswiththemixture,joinhalves
together,andarrangeinadishofwatercress.
5.SCRAMBLEDEGGANDTOMATO.
Skinthetomatoesandcooktopulpasintheprecedingrecipe.Beattheeggandstiritintothehot
tomato.Cookuntiljustbeginningtoset.

Pastryshouldusuallybemadewithaveryfinewholemealflour,suchasthe"NuEra."Therearetimes,
however,whenconcessionstoguests,etc.,demandtheuseofwhiteflour.Insuchanevent,useagood
brandofhouseholdflour.Themorerefinedthekind,thelessnutrimentitcontains.Neveraddbaking
powdersofanykind.
Thesecretofmakinggoodpastryliesinlightlymixingwithacoolhand.Ifaspoonmustbeused,letit
beawoodenone.Rollinonedirectiononly,awayfromtheperson.Ifyoumustgiveabackwardroll,let
itbeonlyonce.Aboveall,rolllightlyandlittle.Thequickerthepastryismadethebetter.
2.PUFFPASTE.
1/2lb.freshbutteror6ozs.Mapleton'snutter,1yolkofeggor1teaspoonlemonjuice,1/2lb.flour.
Ifbutterisused,wrapitinacleanclothandsqueezewelltogetridofwater.Beattheyolkofegg
slightly.Puttheflouronthepasteboardinaheap.Makeaholeinthecentreandputintheyolkofeggor
lemonjuice,andabout1tablespoonofwater.Theamountofwaterwillvaryslightlyaccordingtothe
kindofflour,andlesswillberequiredifeggisusedinsteadoflemonjuice,butaddenoughtomakea
ratherstiffpaste.Mixlightlywiththefingersandkneaduntilthepasteisniceandworkable.Butdoit
quickly!

Next,rolloutthepastetoabout1/4inchthickness.Putallthebutterornutterinthecentreofthispaste
andwrapitupneatlytherein.Standinacoolplacefor15minutes.Next,rollitoutonce,andfolditover,
rollitoutagainandfolditover.Dothislightly.Putitawayagainfor15minutes.Repeatthisseven
times!(Idonotthinkmanyfoodreformerswillhavethetimeorinclinationtorepeattheabove
performanceoften.Speakingformyself,Ihaveonlydoneitonce.Butasnoinstructionsaboutpastryare
supposedtobecompletewithoutarecipeforpuffpaste,Iincludeit.)Itisnowreadyforuse.
Donotforgettokeeptheboardandpinwellfloured,orthepastrywillstick.Ifwholemealflourisused,

dish.Sprinklewithsugartotaste,andthegratedyellowpartofafreshlemonrind.Mixinthesoaked
tapiocaandwater.Bakeabout1hour.Servecold,withorwithoutboiledcustard.

7.BATTERPUDDING.
2eggs,1teacupflour,milk.
Wellwhisktheeggs.Sprinkleintheflouraspoonfulatatime.Stirgently.Whenthebatterbecomestoo
thicktostir,thinitwithalittlemilk.Thenaddmoreflouruntilitisagaintoothick,andagainthinwith
themilk.Proceedinthiswayuntilalltheflourisadded,andthenaddsufficientmilktobringthebatter
totheconsistencyofratherthickcream.Havereadyaveryhotgreasedtin,pourinandbakeinahot

Cookaheapedtablespoonofsemolinain1/2pintofmilktoastiffpaste.Spreaditonaplatetocool.
(Smoothitneatlywithaknife).Whenquitecold,cutitintofour.Dipinabeateneggandfrybrown.
Servehotwithlemonsauce.Thismayalsobeservedasasavourydishwithparsleysauce.Thequantity
givenaboveissufficientfortwopeople.
9.BREADANDFRUITPUDDING.
Lineapuddingbasinwithslicesofbreadfromwhichthecrusthasbeenremoved.Takecaretofitthe
slicestogetherascloselyandneatlyaspossible.Stewanyjuicyfruitinseasonwithsugartotaste.Donot
addwater.(Blackcurrantsorraspberriesandredcurrantsarebestforthisdish.)Whendone,fillupthe
basinwiththeboilingfruit.Topwithslicesofbreadfittedwellin.Leaveuntilcold.Turnoutandserve.
10.BLANCMANGE,AGARAGAR.
1/4oz.preparedagaragar,11/2pintsmilk,sugar,flavouring.
Soakavanillapod,cinnamonstick,orstripoffreshlemonrindinthecoldmilkuntilflavouredtotaste.
Addsugartotaste.Putinasaucepanwiththeagaragar,andsimmeruntildissolved(about30minutes).

Squeezewateroutandpulltopieces.Putitintosaucepanwith1gillmilkand1/2gillwater.Standon
onesideofstoveandletsimmerverygentlyuntilquitedissolved.Meanwhile,dissolvechocolateinrest
ofmilk,addingthesugar.Pourtheagaragarintotheboilingchocolatethroughahotstrainer.Thisis
necessaryasthereisgenerallyalittletoughscumontheliquid.(Ifputthroughacoldstrainer,theagar

Stewsomejuicyplumsorapplesslowlytoapulpwithsugartotaste.Ifapplesareused,addclovesora

Dissolvethecornflourinalittlecoldwaterandstirintotheboilingapple.Boilfor5minutes,stirringall
thetime.Pourintoawetmould.Turnoutandservewhencold.

Putsomethinstripsoftheyellowpartofalemonrind,oravanillapod,inthecoldmilk.Allowtostand
1hourormore.Thentakeoutthepeel,addthesugar,andputoverthefireinadoublesaucepan,if
possible.Bringtotheboil.Beattheeggs.Takethemilkoffthefire,letitstopboiling,andpouritslowly

shopjamthanhomemadejam.Itsonlyrecommendationisthatitwillkeepforanunlimitedtime.Some
recipesincludewater.Butunlessdistilledwatercanbeprocured,itisbetternottodilutethefruit.The
onlyadvantagegainedisanincreaseofbulk.Thejammaybemadejustasliquidbyusingratherless

Peelthemarrow,removeseeds,andcutintodice.Toeachpoundofmarrowallow1lb.canesugarto
every3lbs.ofmarrowallowthejuiceandgratedyellowpartofrindof1lemonand1/2alevelteaspoon
groundginger.Putthemarrowintothepreservingpan,sprinklewellwithsomeofthesugar,andstand

Rubthelumpsofsugaronthelemonuntiltheyarebrightyellowincolourandquitewet.(Itisthe
fragrantjuicecontainedintheyellowsurfaceofthelemonrindthatgivesthedeliciouslemonflavour
withoutacidity.)Mixthebarleytoathinpastewithalittlecoldwater.Thisispouredintoapintof
boilingwater,wellstirreduntilitcomestotheboilagainandthenlefttoboilforfiveminutes,after
whichitisdone.Addthesugarandlemonjuice.
2.BOILEDHOMINY.
TakeonepartofHominyand21/2partsofwater.Havethewaterboilingaddthehominyandboilfor
fifteenminuteskeepstirringtokeepfromburning.
3.BROWNGRAVY.
1dessertspoonbutter,1dessertspoonwhiteflour,hotwater.
Meltthebutterinasmallironsaucepanorfryingpanandsprinkleintoittheflour.Keepstirringgently
withawoodenspoonuntiltheflourisarichdarkbrown,butnotburnt,ortheflavourwillbespoilt.Then

Steamthepeasinaseparatepan.Ifyoung,about20minutesshouldbesufficienttheyarespoiledby

TomakesuccessfulParkinagoodbrandofpurecanesyrupisneeded.Ialwaysuse"Glebe."Thisis
generallyonlystockedbyafew"highclass"grocersorlargestores,butitisworththetroubleofgetting.
SomeFoodReformStoresstockmolasses,andthiswasprobablyusedfortheoriginalParkin.Itis
stronglyflavouredandblackerthanblacktreacle,butitstasteisnotunpleasant.Forthesugar,agood
brownmoistcanesugar,likeBarbados,isbest.Putthetreacleandbutter(ornutter)intoajarandputinto
awarmovenuntilthebutterisdissolved.Thenstirinthesugar.Mixtogethertheoatmeal,flour,ginger
andseedsorlemonrind.Pourthetreacle,etc.,intothis,andmixtoapaste.Rolloutlightlyonawell

Cheese,butter,bread,pepper.
Cutthinslicesofcheeseandputthemwithalittlebutterintoasaucepan.Whenwellmeltedpourover
hotwellbutteredtoast.Dustwithpepper.Putintoaveryhotovenforafewminutesandserve.
18.YEASTBREAD.
7lbs.flour,salttotaste(about3/4ounce),1ounceyeast,11/2quartsofwarmwater.
Puttheflourintoapanorlargebasin,addsalttotaste,andmixitwellin.Puttheyeastwithalumpof
sugarintoasmallbasin,andpouralittleofthewarmwaterontoif.Coldorhotwaterkillstheyeast.
Leavethisalittlewhileuntiltheyeastbubbles,thensmoothoutalllumpsandpourintoaholemadein
themiddleoftheflour.Pourintherestofthewarmwater,andbegintostirintheflour.Nowbegin

kneadingthedough,andkneaduntilthewholeissmoothanddamp,andleavesthehandwithout
sticking,whichwilltakeabout15to20minutes.Timespentinkneadingisnotwasted.
Setthepaninawarmplace,coveredwithacleancloth.Becarefulnottoputthepanwhereitcangettoo
hot.Thefenderisagoodplace,buttothesideofthefireratherthaninfront.Letitriseatleastanhour,
butshoulditnothaverisenverymuchsaydoublethesizeletitstandlonger,asthebreadcannotbe
lightifthedoughhasnotrisensufficiently.
Nowhaveabakingboardwellfloured,andturnallthedoughontoit.Havetinsorearthenwarepans,or
evenpiedisheswellgreased.Dividethedough,puttingenoughtohalffillthepansortins.Puttheseon
thefendertoriseagainfor20to30minutes,thenbakeinahotoven,about350degrees(alittlehotter
thanforpastry).
Bake(foraloafabout2lbs.inamoderateoven)from30to40minutes.Ofcoursethetimedepends
greatlyonthesizeoftheloavesandtheheatoftheoven.
Theaboverecipeproducestheordinarywhiteloaf.Betterbreadwould,inmyopinion,resultfromthe
useofaveryfinewholemealfloursuchasthe"NuEra,"andtheomissionofsalt.

XIV.UNFIREDFOOD.
Thetrueunfiredfeederisanideal,i.e.,heexistsonlyinidea,atleastsofarasmyexperiencegoes!Tobe
trulyconsistenttheunfiredfeedershouldliveentirelyonrawfoodsfruit,nutsandsalads.Butmost
unfiredfeedersutiliseheattoaslightextent,althoughtheydonotactuallycookthefood.Inaddition,
mostofthemusevariousbreadstuffsandbiscuitswhich,ofcourse,arecookedfood."Unfired"breadis
soldbysomehealthfoodstores,andisapreparationofwheatwhichhasbeentreatedandsoftenedbya
gentleheat.
Cerealsshouldneverbeeatenwithfruit,butmaybeeatenwithsaladsandcheese.Themiddaymealof
theunfiredfeedershouldconsistofnutsorcheeseandalargeplateofwellchoppedsaladwithsome
kindofdressingoveritoliveoilandlemonjuiceoroneofthenutoilsandlemonjuice.Orangejuiceor
rawcarrotjuicemaybeusedifpreferred.Whenextranourishmentisdesiredawellbeatenraweggmay
bemixedwiththedressing.Freshcreammayalsobeusedasdressing.
Fruitisbesttakenattheeveningmeal,from11/2to2lbs.Nothingshouldbetakenwithitexceptalittle
nutcreamorfreshcreamandwhiteofegg.
Distilledwaterisagreatassettotheunfiredfeeder,becauseitsoftensdriedfruitssomuchbetterthan
hardwater.Itcanbemanufacturedathome,orthe"StillSalutaris"boughtthroughachemistorgrocer.
The"StillSalutaris"waterisabout1/3pergallonjar.Ifthewaterisdistilledathome,a"Gem"Stillwill
beneeded.(TheGemSuppliesCo.,Ltd.,67,SouthwarkStreet,LondonS.E.).Itisbesttousethisovera
gasringor"Primus"oilstove.Thecostofthewatercomesoutataboutonepennypergallon,according
tothecostofthefuelused.
DistilledWatershouldneverbeputintometalsaucepansorkettles,asitisaverypowerfulsolvent.A
smallenamelledkettleorsaucepanshouldbeusedforheatingit,anditshouldbestoredinglassor

earthenwarevesselsonly.Itshouldnotbekeptformorethanamonth,andshouldalwaysbekept
carefullycovered.
Forsaladsitisnotnecessarytodependentirelyupontheusualsaladvegetables,suchaslettuce,endive,
watercress,mustardandcress.TheveryfinelyshreddedheartsofrawBrusselsproutsareexcellent,and
eventheheartofaSavoycabbage.Thenthefinelychoppedinsidesticksofatenderheadofceleryare
verygood.Alsoyoungspinachleaves,dandelionleaves,sorrelandyoungnasturtiumleaves.Theroot
vegetablesshouldalsobeaddedintheirseason,rawcarrot,turnip,beet,onionandleek,allfinelygrated.
Atasteforalltheabovementionedvegetables,eatenraw,isnotacquiredallatonce.Itisbesttobegin
bymakingthesaladoftheingredientsusuallypreferredandmixinginasmallquantityofoneortwoof
thenewingredients.Forthosewhofindsaladsverydifficulttodigest,itisbesttobeginwithFrenchor
cabbagelettuceandskinnedtomatoesonly,or,asanalternative,asaucerfulofwatercresschoppedvery
finely,asonechopsparsley.
1.COTTAGECHEESE.
Allowthejuiceoftwomediumsizedlemonsto1quartofmilk.Putthemilkandstrainedlemonjuice
intoanenamelledpanorfireproofcasseroleandplaceoveragasringoroilstovewiththeflameturned
verylow.Warmthemilk,butdonotallowittoboil.Whenthemilkhascurdledproperlythecurdsare
collectedtogether,formingan"island"surroundedbythewhey,whichshouldbeaclearliquid.Laya
pieceofcheeseclothoveracolanderandpourintoitthecurdsandwhey.Gathertogethertheedgesof
theclothandhangupthecurdstodrainforatleastthirtyminutes.Thenreturntothecolander(stillin
cloth)andputasmallplateorsaucer(withaweightontop)onthecheese.Itshouldbeleftunder
pressureforatleastonehour.Thischeesewillkeeptwodaysincoldweather,butmustbemadefresh
everydayinwarmweather.Themilkusedshouldbesomehoursold,asquitenewmilkwillnotcurdle.
Thejuicefromonelemonatatimeshouldbeputintothemilk,asthestalerthemilkthelessjuicewillbe
needed.Toomuchjuicewillpreventcurdlingaseffectuallyastoolittle.
Thischeeseisgreatlyimprovedbytheadditionoffreshcream.Allowtwotablespoonsfulofcreamtothe
cheesefromonequartofmilk.Mashthecheesewithaforkandlightlybeatthecreamintoit.
Note.Cheesecloth,sometimesknownascreamcloth,maybeboughtatmostlargedrapers'shopsat
from6d.to8d.peryard.Oneyardcutsintofourclothslargeenoughforstrainingthecheesefromone
quartofmilk.Ordinarymuslinisnotsousefulasitisliabletotear.Washinwarmwater(nosoapor
soda),thenscaldwell.
2.DRIEDFRUITS.
Theseshouldbewellwashedinlukewarmwaterandexaminedforworms'eggs,etc.Thencoverwith
distilledwaterandletstandfor12hoursoruntilquitesoftandswollen.Prunes,figs,andraisinsareall
nicetreatedinthisway.
3.EGGCREAM.
2tablespoonsfreshcream,thewhiteof1egg.
Putthewhiteofeggontoaplateandbeattoastifffrothwiththeflatofaknife.(Apaletteknifeisthe
best.)Thenbeatthecreamintoit.Thismakesanourishingdressingforeithervegetablesaladorfruit

salad.Especiallysuitableforinvalidsandpersonsofweakdigestion.
4.PINEKERNELCHEESE.
Washthekernelsanddrywellinacleancloth.Spreadoutontheclothandcarefullypickoverforbad
kernelsorbitsofhardshell.Putthroughthemaceratorofthenutbuttermill.Wellmixwiththebeaten
pulpofarawtomato(firstplungeitintoboilingwaterforafewminutes,afterwhichtheskiniseasily
