Pan-Roasted Scallops with sesame sauce


Yield: Makes 4 servings (serving size: 4 scallops and 1 1/2 tablespoons sauce)
Ingredients
16 large sea scallops (about 1 3/4 pounds)
1 sliced green onion (white and green sections reserved separately)
2 garlic cloves, minced (about 1 teaspoon)
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
3 teaspoons sugar
1/2 teaspoon cornstarch
1 tablespoon sesame oil
1/8 teaspoon crushed red pepper
1 teaspoon canola oil
1/8 teaspoon black pepper

Broccoli Pure
Yield: 4 servings
Ingredients
1 large russet potato, peeled and cut into 1-inch chunks
1 pound broccoli florets
1/2 cup chicken broth
4 ounces cream cheese
1/4 cup freshly grated Parmesan
Salt and freshly ground black pepper

Pan Fried Quail's Eggs with chorizo


makes 4-6 servings
Ingredients:
1 dozen quail eggs
12 slices of a baguette
12 Slices of Spanish chorizo
Spanish virgin olive oil for frying

SPINACH AND RICOTTA RAVIOLI


Yield: 4 servings
Ingredients
Dough:
3 1/2 cups all purpose flour
4 eggs
Filling:
1 pound fresh spinach
1 tablespoon salt
1 pound ricotta
1 egg
2 tablespoons heavy cream
