Case study of Food Plaza at Bhubaneshwar

A food plaza is generally an indoor plaza or common area within a facility that is contiguous with
the counters of multiple food vendors and provides a common area for self-serve dining. Food
courts may be found in malls and airports and in various regions may be a standalone
development.

Aim To analyze and present the details of an existing food plaza, for implementation
while designing a food plaza.

Destination- Pantaloons, Food Plaza

Location- 3rd floor, Suruchi

Seating Capacity 70 (approx.), with additional capacity of 30 for overcrowded days.

Foot fall- Around 100 customers each day, mainly including college students and the
shoppers of pantaloons. The crowd is reduced during exam times and in working day,
crowd is more in Saturdays and Sundays.

Number of kiosks Three, with a common cash counter.


Kiosk 1- Serves soft drinks, ice creams, mocktails, bakery etc.
Kiosk 2- Serves Chinese noodles, economic thali, snacks.
Kiosk 3- Serves South-Indian food like idly, dosa.

processing and cooking.
Ventilation- Chimneys have been installed above burners and ovens for sucking the hot air
created due to the burners and the fresh air ducts provides fresh air in the kitchen and thus
the air circulation maintains the temperature and humidity of the kitchen room.

Garbage Disposal- Two types of garbages are produced in the kitchen

Non-Biodegradable- packed on polythene packets and then forwarded to BMC.

Biodegradable- forwarded for recycling.

Pantry- Pantries are located beside the cash counters for self serving the ordered food.

Safety measures (in case of emergency)- It has been kept in mind that in case of fire
emergency, safety measures can be taken to attain minimal losses.

Fire extinguisher has been provided both in kitchen and stores so as to maintain safety
in case of emergency.

For kitchen staffs, there are two emergency exit doors.

For users, emergency stairs has been provided near the so that
they can escape from the plaza.

Water ducts are installed above the false ceiling to supply


required water during emergency.

Critical analysis of the food plazaFeaturesThe seating arrangement of the food plaza is
ideal, arranged diagonally with a gap of 1.2
meters in between. And there are three kiosks
arranged around the common seating place.
Every necessary point is taken care of,
starting from proper disposal of garbage to
safety measures during fire. There is a back
staircase for emergency exit purpose which is
also used for the entry of grocery materials. There are hot water and cold water sinks available
for washing of utensils.
Circulation space
The circulation space is up to the mark in the common seating area. But inside the kitchen it is
stuffy and congested. There should be more space available between the cooking tables for easy
circulation and access.
Storage-

VentilationProper ventilation facilities available. Chimneys are available for removal of hot air above the
ovens. And also for the entry of fresh air so that proper working conditions is maintained for
the kitchen staffs.
Lighting
Artificial lighting is done inside the kitchen as well as the food plaza. Because the food plaza is
fully air conditioned which is a special feature of every food plazas and modern commercial
buildings.
