A really good beer that's neutral, not too strong, and all should like from amerilight to micro
drinkers.

If you don't want it to look like an American Hefe, it's necessary to clarify. Use irish
moss, gelatine, or finings as recommended.
Hops:
1/2 oz. Cascade (4.2% AA, 60 min.)
1/4 oz. Cascade (4.2% AA, 15 min.)
1/4 oz. Cascade (aroma)
Yeast: Wy 1056 Am ale
Log:
14 days primary ~70
14 days to bottle condition
Carbonation: 1/2-3/4 C. Corn sugar depending on desired carbonation.
Tasting:
A very nice basic beer that'll turn a few heads if you like this style. I love this brew
and will make it again in the exact same manner. I hope you all enjoy this one as
much as I do.

American wheat with orange/tangerine
Looking for a nice american style wheat with just a hint of orange for the holidays.
Note Amarillo hops used not cascade.

Alcohol: 4.8% v/v (3.8% w/w)
Water: None- well water
Grain:
2.10 lb. Wheat malt
1.05 lb. American crystal 40L
0.53 lb. Dextrine malt (Cara-Pils)
Steep: Steep grain in bag for 30 mins at 155-160 F
Boil:
60 minutes SG 1.127 2.5 gallons
6.6 lb. Wheat extract
4 oranges and 4 tangerines, zest 2 each, peel all well (no white material), section all
remove seeds, all into bag, steep in 2 qt. water at 160 for 20 min, bring to boil briefly,
cool to RT and all to primary before wort.
Hops:
0.5 oz. Centennial (9.7% AA, 60 min.)
0.5 oz. Centennial (9.7% AA, 30 min.)
0.53 oz. Cascade (7.2% AA, 15 min.)
.5 oz. Cascade (aroma)
Yeast:
Wyeast smack pack American Wheat 1010, 700 mL starter 20 h before pitch (3 oz wheat
DME) with stirring.
Log:
Brew 11/14/10
Primary for 4 day, into secondary on 11/19/10. Bottle on 11/28/10 (48 X 12 oz).


American Wheat


I want to do an American Wheat beer for the summer. So far I have centenial .5 Oz @ 60
mins, cascade .5 Oz @ 15 mins and 5 mins, for my hops schedule. This gives me an IBU of
about 24.1 I cannot figure out what yeast to use to compliment the fruity flavors of the
hops??? This will be my first attempt at all grain and I also DO NOT want the wheat
bitesometimes associated with wheat beers. If you can imagin a fresh fruity version of Sam
Adams Hefe thats what I am going for...

My Grain Bill looks like this but I am working on it

4.5 lbs of German Wheat Malt
3.75 lbs of Pale Malt
1.0 lbs of Flaked Wheat
.5 lbs of Munich
.5 lbs of Carapils
.5 lbs of Rice Hulls

PS. I took the bill from iamjonsharp in the wheat beer recipe forum, but its slightly modified.

Estimated OG 1.056

Just looking for some critiques and a possible yeast for this beer???
