SUMMARY, CONCLUSIONS AND RECOMMENDATIONS

Summary

In the Philippines, nipa palm has been used as a folk medicine. Products
derived from nipa, like nipa syrup, have been attested by some to have curative
properties. No report is currently available regarding the composition and biological
acrtivity of nipa syrup. The aim of this study was to determine the proximate analysis
and physic-chemical properties of nipa syrup. Likewise it also aims to determine its
antimicrobial property and antioxidant activity.

Paper-Disk Diffusion Assay was used to determine the antimicrobial activity.
The DPPH Radical Scavenging Assay was used to determine the antioxidant activity of
nipa syrup and Folin-Ciocalteu method was used to quantify its total phenolics.

Based on the results obtained, nipa syrup is an excellent source of
carbohydrates. It also contains phenolic compounds that are responsible for its
antimicrobial and antioxidant properties.

Zone of inhibitions were observed even at low concentrations against E. coli and
C. albicans. While S. aureus and A. niger was inhibited at concentrations greater than
10% and 25% respectively.

Findings indicated that the Nipa syrup reduced DPPH radical. DPPH radical
scavenging activity of the syrup was 42.19%. Since phenolics are present are known
for having an antioxidant property, their presence in Nipa syrup explains its antioxidant
activity. Total phenolics content of Nipa syrup is 29.71mg/ 100ml. Gallic Acid
Equivalent.


Conclusions

Based from the results, Nipa syrup contains 24.77% moisture content, 5.86%
ash, 0.41% fat, 2.1% protein and 67.04% carbohydrates. Nipa syrup obtained a pH
value of 4.6, titratable acidity of 1.30%, water activity of 0.614 and a viscosity of 27.136
Pas . Nipa syrup also has 90* Brix, 21.45% total sugars, and 19.35% reducing sugars.

Nipa syrup was found to be most active against E. coli and C. albicans
Nipa syrup demonstrated 42.19% radical scavenging activity, based on the
results of the DPPH assay. Antimicrobial and antioxidant activities could be attributed
to the presence of phenolics. Total phenolics content of nipa syrup is 29.7099 mg/ 100
ml GAE.
