CHAPTER I

INDUSTRY IN INDIA

Dairy is a place where handling of milk and milk products is done with the
technology and scientific methods. The Dairy industry in India has shown a remarkable
development in past decade and India is now became a largest milk producer in the world.
The dairy industry is an important occupation of farmers. In India nearly around 70% of
people depends on agriculture. It is the back bone of India. The dairy industry is linked
with the agriculture. Animal Husbandry is a main occupation of rural people.
MILK PRODUCTION IN INDIA:
YEAR PRODUCTION
1996 70.8 Metric Ton
1997 74.3 Metric Ton
2005 95.1 Metric Ton
2006 98.4 Metric Ton
2007 100.9 Metric Ton
2010 111 Metric Ton
2020(Projected) 240 Metric Ton
India with 134mn cows and 125mn buffaloes has the largest population of cattle in
the world. Total cattle population in the country as on October'00 stood at 313mn. More
than fifty percent of the buffaloes and twenty percent of the cattle in the world are found in
India and most of these are milch cows and milch buffaloes.
India contributes to the milk production rise from 12% to 15% and it will raise up-
to 30% to 35% by 2020.

Indian dairy sector contributes the large share in agricultural gross domestic
products. Presently there are around 70,000 village dairy cooperatives across the country.
The co-operative societies are federated into 170 district milk producers unions, which is
turn has 22-state cooperative dairy federation. Milk production gives employment to more
than 72mn dairy farmers. In terms of total production, India is the leading producer of milk
in the world followed by USA. The milk production in 1999-00 is estimated at 78mn MT as
compared to 74.5mn MT in the previous year. This production is expected to increase to
81mn MT by 2000-01. Of this total produce of 78mn cows' milk constitute 36mn MT while
rest is from other cattle.
While world milk production declined by 2 per cent in the last three years,
according to FAO estimates, Indian production has increased by 4 per cent. The milk
production in India accounts for more than 13% of the total world output and 57% of total
Asia's production. The top five milk producing nations in the world are India ,USA, Russia,
Germany and France.

Although milk production has grown at a fast pace during the last three decades milk
yield per animal is very low. The main reasons for the low yield are
Lack of use of scientific practices in milching.
Inadequate availability of fodder in all seasons.
Unavailability of veterinary health services.

CONSUMING PATTERN:
In India 46% of the total milk producer is consumed in liquid form and 47% is converted
into traditional products like: Butter, Ghee, Paneer, Khoya, Curd, Malai etc., and only 7% of
milk goes to the production of western products like milk powder, processed cheese and
processed butter.
As high as 98% of milk produced in the rural area. Which caters to 72% of the total
population, whereas the urban sector with 28% population consumer 56% of the milk
produced? Even in urban India as high as 83% of the consumed milk comes from the
unorganized traditional sectors. Presently only 12% of milk market is represented by
packaged and branded pasteurized milk.
NATIONAL DAIRY DEVELOPMENT BOARD (NDDB)
The dairy & animal husbandry received serious attention after the
independence. There were not many progressive steps taken by Govt., through 5
years plan. This leads to the formation of NATIONAL DAIRY DEVELOPMENT BOARD
(NDDB) in 1965. Thus in 1970 the Govt., announced the White Revolution in 1970.
It was founded by Dr. Verghese Kurien and Dr. Amrita Patel is the current
Chairman of the National Dairy Development Board, Anand.
Before Independence there was no serious scope given to the dairy industry.
In 1886 the department of Defense of British Government established the dairy farm
to supply the milk troops in Allahabad. Later in 1920 serious steps were taken by
Mr. William Smith an expert dairy farmer to improve dairy products.
