Congratulations Jambalaya Association,
you have done it again. This years
47th Annual Festival was a huge success.
I have been attending the Jambalaya Festival for
40 plus years and this years festival seemed to have
it all. The food, the events, and the entertainment
was one of the most diversified festivals Ive
ever experienced.
Its been a long time coming for the festival to
build up to the excitement that once was held in
the streets of downtown Gonzales. This year, I
believe, proved to me that the festival is back and
is bigger and better than ever.
A wide variety of entertainment from bands like
Hai Karate, Eddie Smith
and Chee Weez rocked
the stage while home
town favorite

festival I ran into to old school
Gonzales friends that always
make a reference to the Festival
that was once downtown
Gonzales.
Everybody likes to talk about
the days of old. The success
was judged by the garbage left
in the street. As exciting as
those days were the current
Jambalaya Festival represents
Gonzales 2014 and our
community. Its clean,
organized, and full of musical
entetainment. Along with the
good time the festival

The Mini-Pot Jambalaya
Cooking Contest at the 47th
Annual Jambalaya Festival was
held under the shade of trees on
South Irma Boulevard in front
of the Knights of Columbus
Hall. Youngsters and adults
competed in one of the festivals
most popular event. Cooking in
mini pots started in the 1970s,
and is an event everyone enjoys
and families can participate in it
together.
Proceeds from the mini-pot
contest benefit the Dream Day

Foundation for St. Jude Childrens
Research Hospital.
While at the the festival I saw many friends.
There was Mark and Denette, Miles and Jason.
Eric and Stump were there too. There were
Queens, dreams and Hot Rod Machines.
Grace and Van Broussard played together as
Bucktown Allstars made us forget about the
hot weather.
If you are new to the area and have never
attended the festival you are missing a good
time. Along with the cooking and dancing
there are car shows, art shows, and carnival
rides. Next year give the festival a try. You will
experience a good time and truly understand
why Gonzales is

What is a Diamonds
Window?
One of the first steps in cutting
a rough diamond involves
polishing a small flat section or
window so that the cutter
can microscopically examine the
gems interior. This helps the
cutter decide how to get the
best cut from the diamond.
What are Calibrated Gems?
These are diamonds and
colored gemstones that are
precision cut to conform to
standard or fixed sizes
sometimes to a fraction of a
millimeter. This results in easier
matching and faster, more
accurate setting of the gems.
What is Milgraining?
The term milgrain means a
thousand beads. This delicate
pattern is often used as an
ornamental edging in gold jew-
elry such as around the rims of
wedding bands, brooches and
pins. The pattern is made by
rolling a miniature steel wheel
over a ridge of gold which then
creates a row of tiny beads.
What is Silk?
Silk is a term jewelers use to
describe very fine, almost invisi-
ble, shimmering streaks in the
grain of rubies and sapphires.
It can only be seen under a
powerful lens or polarized light.
The presence of silk shows the
gem is genuine.

I think one of the very first
times I tried essential oils was
about 18 years ago, and I
remember going to a spot
called Earth Savers in Baton
Rouge. I remember buying this
great potted perfume oil made
of Tuberose. It was so rich and
decadent, I think I was hooked.
Since then, Ive had the
opportunity to work for an
affiliate of a company that made
their own essential oils. I got
to experiment with many
different oils and soon began
to realize their benefit.
One thing Ive
learned in
more recent
years is that
not all essential
oils created
equal, because
true oils can be
expensive. So,
if youre
looking for a
natural cure
for something
that ails you,
make sure you
purchase pure
essential oils by
a reputable
company.
Also, make
sure you do
your research on a particular
oil, like benefits and side
effects, before using it for
medicinal purposes. Quick tip:
Some essentials can be applied
topically, while others can be
placed on the inside of a gelatin
capsule for oral consumption.
Here are some popular oils Ive
used and their uses:
Eucalyptus
This oil is commonly known as
Eucalyptus or Blue Gum Oil.
This plant is well known. As a
matter of fact, some homes
keep this dried branch out as a
fragrant accent.
Eucalyptus treats respiratory
and sinus infections, viral
infections, Candida, acne,
bronchitis, rheumatism and
arthritis, muscle aches and
pains, diabetes, measles,
migraines, ulcers, wounds, ear
inflammation and iris
inflammation.
Ive used essential eucalyptus oil
on my neck and back before
applying a heating pad for
muscle aches and pains. Ive
also applied it to the inside of
my nose for more relieved
breathing during colds and
sinus infections.
Lavender
This oil is in most of night time
lotions, candles, and fragrant
room sprays.
Lavender assists with hair loss,
burns, nervous tension,
respiratory infections, high
blood pressure, menstrual prob-
lems,PMS, skin conditions, cho-
lesterol reduction, and reducing
excess oil on skin.
I suffer with monthly migranes,
which can be painful. I often
apply a couple of drops to each
temple and massage for instant
relaxation and a calming effect.
Garlic
In the 19th century Louis
Pasteur discovered garlics anti
bacterial properties. I suppose
youve got to weight smelling
like garlic versus the great
benefits this bulb offers.
Its a natural antibiotic
and antioxidant.
Garlic helps with hair, skin,
nails, ear aches, cardiovascular
health, acne, immune system,
ear infections and even cancer.
Its best to do your research
before taking any type of
supplement. Supplements and
herbs can interfere with certain
medications. Also, everyone
reacts differently to different
supplements. Certainly do your
research before taking anything
and follow the instructions

specifically.
Ive recently started a good
quality garlic oil; however, I
realized that my sweat and even
my skin started to smell like
garlic after a few days. When I
stopped taking it, it even took a
few days to go away. I may try
taking the garlic again, but
when I dont have

Top Scholars
Recognized
EATEL recently partnered with the
Ascension and Livingston Parish
School systems to host the 2014 Top
Scholars Banquet. The eighth annual
event recognized the academic suc-
cess of six high school students, as
well as the teachers they selected as
having been most influential in their
lives. In addition, EATEL presented
each student with a $250 gift card to
use towards future academic supplies.

Phillips, EATEL Chief Operating
Officer. Were proud to be able to
host this experience for them. These
top scholars are not only successful in
their studies. They are also very civic
minded outside of the classroom, giv-
ing back to the community which has
given so much to them.
Livingston Parish Superintendent
of Schools mirrored that sentiment.
Experience has taught me that when
you find a young person who has
excelled academically, you almost
always find that he or she is also
actively involved in many activities at
school, church, and in their commu-
nities, Watson said as he addressed
the audience.
Held at Snos Restaurant in
Gonzales, the evening included din-
ner and a video presentation featur-
ing the top scholars. Jenny
Heroman, EATEL Community
Coordinator, emceed the event.
As I look at your accomplish-
ments and I heard your passion in
the video presentation, I know that
sitting here in this room are our next
great innovators, our next great cre-
ators, our next great entrepreneurs,
Ascension Parish Superintendent of
Schools Patrice Pujol affirmed. I
know that the people sitting at the
table with you have had a great
influence on who you are and have
helped to shape you. I encourage
you to use that great foundation to
go out there and attack the issues
and problems of our world in the
fabulous opportunities that lie
ahead of you.

Wisdom Teeth

Wisdom teeth, also known as
third molars, are the last teeth to
erupt in your mouth. This general-
ly occurs between the ages of 17
and 25, a time of life that has been
called the "Age of Wisdom."
Anthropologists note that the
rough diet of early humans result-
ed in the excessive wear of their
teeth. Normal drifting of the teeth
to compensate for this wear
ensured that space was available
for most wisdom teeth to erupt by
adolescence. The modern diet,
which is much softer, and the pop-
ularity of orthodontic tooth
straightening procedures produce
a fuller dental arch, which quite
commonly doesn't leave room for
the wisdom teeth to erupt, thereby
setting the stage for problems
when the final four molars enter
the mouth.
What is an Impacted Tooth?
Complications such as infection,
damage to adjacent teeth and the
formation of cysts may arise from
impacted teeth.
A tooth becomes impacted
when there is a lack of space in the
dental arch and its growth and
eruption are prevented by
overlying gum, bone or
another tooth.
How Serious is an
Impacted Tooth?
Impacted teeth can be painful
and lead to infection.They may
also crowd or damage adjacent
teeth or roots.
More serious problems may
occur if the sac surrounding the
impacted tooth becomes filled
with fluid and enlarges to form a
cyst. As the cyst grows it may
hollow out the jaw and
permanently damage adjacent
teeth, the surrounding bone and
nerves. Rarely, if a cyst is not
treated, a tumor may develop
from its walls and a more serious
surgical procedure may be
required to remove it.
Despite the considerable
concern regarding impacted third
molars, a recent study finds that
third molars which have broken
through the tissue and erupted
into the mouth in a normal,
upright position may be as prone
to disease as those third molars
that remain impacted.
Must the Tooth Come Out
if it Hasn't Caused Any
Problems Yet?
Not all problems related to third
molars are painful or
visible. Damage can occur without
your being aware of it.
As wisdom teeth grow, their
roots become longer, the teeth
become more difficult to remove
and complications become more
likely. In addition, impacted
wisdom teeth are more likely to
cause problems as patients age.
No one can predict when third
molar complications will occur,
but when they do, the
circumstances can be much more
painful and the teeth more
difficult to treat.
When Should I Have My
Wisdom Teeth Removed?
Wisdom teeth are easier to
remove when the patient is
younger, since their roots are
not completely formed, the
surrounding bone is softer, and
there is less chance of damaging
nearby nerves or other structures.
Removal of wisdom teeth at a later
age becomes more complicated as
the roots have fully developed
(may involve
the nerve), and the jawbone
is denser.
It isn't wise to wait until your
wisdom teeth start to bother you.
In general, earlier removal of
wisdom teeth results in a less
complicated healing process.
The AAOMS study strongly
recommends that wisdom teeth be
removed by the time the patient is
a young adult in order to prevent
future problems and to ensure
optimal healing.The researchers
found that older patients may be
at greater risk for disease,
including periodontitis, in the
tissues surrounding the third
molars and adjacent teeth.
Periodontal infections, such as
those observed in this study, may
affect your general health.
What Happens During
Surgery?
Before surgery, your dentist
will discuss with you what to
expect. This is a good time to
ask questions or express your
concerns. It is especially important
to let the doctor know about any
illness you have and medications
you are taking.
The relative ease with which a
wisdom tooth may be removed
depends on several conditions,
including the position of the tooth
and root development. Most
wisdom tooth extractions are
performed in the office under local
anesthesia, oral or intravenous
sedation. Your dentist will
discuss the anesthetic option t
hat is right for you.
What Happens after Surgery?
Following surgery, you may
experience some swelling and mild
discomfort, which are part of the
normal healing process. Cold
compresses may help decrease the
swelling, and medication
prescribed by your dentist can help
manage the discomfort. You may
be instructed to modify your diet
following surgery and later
progress to more normal foods.

Interdiction
the Civil Death Penalty -
Part 1
A judgment of interdiction is,
in the final analysis, a pronounce-
ment of civil death without the
dubious advantage of an
inscription on a tombstone.
The above quote comes from the
Louisiana Supreme Court case of
Doll vs. Doll and shows just what
an impact a judgment of interdic-
tion has on a person. In order to
understand why a judgment of
interdiction has such a profound
impact, its necessary to
understand what an interdiction
is and how it affects a persons
rights. This article will address
those issues.
Interdiction Defined.
You likely are familiar with the
concept of an interdiction but
know it by another name. In
most states, an interdiction is
called a guardianship.
Guardianships are necessary to
protect individuals who do not
have capacity to take care of
themselves or to manage their
finances properly. The incapacity
may be caused by a life-long
disability, it may be caused by an
accident or it may come about as
a result of age-related dementia.
Regardless of the cause, whenever
persons over the age of 18 cannot
take care of themselves or
properly manage their affairs and
they have not previously executed
a power of attorney appointing
someone to take care of them, an
interdiction may be needed. Just
as a guardianship has a different
name in Louisiana, the person
appointed as the guardian also has
a different name that person is
called a curator.
Limited Versus Full
Interdiction.
When a person is able to take
care of either his person or his
property but is unable to take
care of both of those things, a
limited interdiction may be
appropriate. A limited interdic-
tion only takes away rights in one
of those areas. For instance, in
one Louisiana court case a man
who was physically disabled was
unable to manage his care needs
and he was not receiving proper
health care. This man was,
however, able to manage his
finances. In court, he argued that
all of his rights should not be
taken away as he could manage
his property and the court agreed
and granted a limited interdiction
which appointed someone to only
be responsible for his care needs.
A full interdiction, however, takes
away all of a persons rights to
care for both his person and his
finances. It takes away his rights
to enter into contracts, to marry,
to sue and be sued and to make
any decisions at all about self-
care. Once interdicted, there is
also a presumption that he does
not have the capacity to execute a
will although that presumption
can be overcome by proving by
clear and convincing evidence
that he did have the capacity to
execute the will at the time it was
signed. In other words, once
fully interdicted, a person loses
control over almost all aspects of
his life. For this reason, a full
interdiction is known as the civil
death penalty.
Interdiction Procedure.
Although the rules regarding
interdiction are quite complicated
since its result is so severe, the
most important thing to
remember about an interdiction is
that it is a regular lawsuit and
formalities relating to lawsuits
must be followed. To file an
interdiction proceeding, it will be
necessary for the person seeking
to file the interdiction (known as
the petitioner) to hire a lawyer
to file the lawsuit asking the court
to appoint him as the curator of
the person who lacks capacity.
During the time the lawsuit is
pending, this person will be
known as the defendant. Once
the lawyer files the lawsuit, it will
be personally served on the
defendant by the sheriff s office
and the defendant will have 15
days within which to file an
answer denying that he needs to
have someone appointed to
manage his affairs. If he does not
file an answer within that 15 day
period, the judge will then
appoint another attorney to
represent the defendant so the
judge can be sure the defendant
really needs to have a
curator appointed.

I read the news today-oh boy
From A Day in the Life by the
Beatles.
So there it was-tucked away in an
obscure corner of page 10B of an
uneventful Tuesday paper underneath
Pat Shingletons erratic weather
report, an insignificant four-paragraph
story with the headline-McCartney
Show Delayed Until October.
To the post-Woodstock babies-born
after the fall of 1969-that headline
meant simply that Paul McCartneys
June 19 concert in New Orleans had
been moved back to October 11 due
to a viral infection.
But to a few brave souls who were
in their late teens or early 20s during
that last autumn of the turbulent 60s,
those words revived some
memories that had long been buried
under mounds of dead brain cells.
The voices in our collective heads
were comparable to some kind of
group text as you youngsters know it.
Here we go again-Paul McCartney
is dead.
Now before you call the guys with
the white jackets to come and take me
away, give me a chance to explain in
my own rambling manner.
The first person I thought of when
I read that article was a lovely, young
lady named Lindsey Fryoux. Having
been raised up solid (I dont do
reared.) by her parents Joey and
Susan who taught their children well
in the appreciation of good music,
Lindsey was excitedly anticipating
seeing a musical legend like
Sir Paul in person.
She is well-schooled in Beatles
history, as are her brothers-a
refreshing contrast to one of my for-
mer history students who once
asked, Coach, did you know Paul
McCartney was in a band before
Wings?
Do tell.
Anyway, I feel sorry for Lindsey to
have to wait until October and if she
has a conflict of some kind on that
Saturday with LSU and Florida
tickets, Ill be glad to take those
off her hands.
Now to the second thing that
entered my sordid mind-some deeper,
darker thoughts that ranged back to a
time some 45 years ago
During the 60s, Gordon, Randall
and I were pretty much inseparable.
Even when Randall and I were playing
ball as part of the million dollar
outfield, Gordon-who chose to lend
his talents to winning the
beer-drinking trophy-was always
around to support his pards.
The triumvirate got broken up
when Randall went to Viet Nam and
things got a bit unstable on the home
front as well.
Gordon took a shot at college (USL
back then, ULL these days.) and the
army but didnt last long at either. I
preceded him to the Lafayette campus
by a couple of years but fast women
and slow horses led to my being
dishonorably discharged in the
spring of 69.
Looking for a fresh start, we both
entered LSU in the fatal fall of that
year and commuted to school
together each day. Of course, we
were both die-hard Beatles fans and
news and music about the Fab 4 filled
our mornings and conversations.
One day, a local radio disc jockey
changed our lives forever with a few
simple words-Paul McCartney
is dead.
As we listened with Boones Farm
bated breath, the convincing young
man (Everybody trusted DJs back
then.) claimed that Paul had been
killed in a car wreck in November,
1966, and had been replaced with a
contest-winning look-alike named
William Spears so that the bands pop-
ularity wouldnot suffer.
But-he had us hook, line and sinker
by this time-the remaining Beatles had
left a series of clues on
past albums so that
their most ardent fans
would know the truth.
Now this was the
60s, boys and girls, and
I did some things that
Im not proud of-some
of which caused the
power of suggestion to
increase dramatically in
a clouded brain-but as
this unbelievable story
unfolded, Gordon-who
knew every word to all
seven minutes of Hey
Jude-and I began to
be obsessed with the
clues to the improbable
mystery.
We werent the only
ones. Rumors began to
fly from all over the
country-no, world-concerning the
cover of the then-recently released
album Abbey Road. The four
Beatles were shown strolling across
the titled highway with John Lennon
in the lead dressed as a religious fig-
ure, Ringo Starr in a black undertak-
ers suit next, Paul-out of step with
the others and barefooted-in the third
position and George Harrison is a
gravediggers work shirt and jeans in
fourth.
Dead men wear no shoes, the
radio jock declared quoting an old
saying, and besides, look at the
license plate on the Volkswagen in the
background-IF28. If Paul were alive
hed be 28 years old.
Now the funeral procession was
pretty convincing but I was coming
off a bad educational gig at USL and
expected to improve drastically at
LSU so I didnt have time to go
searching for clues for some far-
fetched rumor when I should be in
class. But Gordon insisted we get our
priorities in order.
Would you rather discover that
Paul is really dead or pass Sociology
62 (ironically titled Deviant
Behavior)? he asked.
His selling point was that no one
had seen the Beatles play together in
three years since their last live concert
at Candlestick Park in San Francisco.
Never mind the fact that John had
found Yoko, George had found the
Maharishi and Ringo had found
Barbara Bach.
Where was Paul and why
were the Beatles leaving clues that we
had somehow missed?
With a little help from our
friends and some mind-altering sub-
stances, we began to unravel some of
the pieces of the puzzle. First of
all, we went out and bought new
copies of the Beatles past albums-
concentrating on the three records
where most of the evidence
supposedly lay. By now the move-
ment had a world-wide cult following
and each day brought new clues via
the media or from some other source.
We started with the cover of Sgt.
Pepper where an entire collage of
celebrities appeared to be attending a
funeral. And there is Pauls bass
guitar made of flowers on the grave.
On Pauls uniformed arm was the
infamous O.P.D patch-an abbrevia-
tion for Officially Pronounced Dead
and on the back cover, McCartney is
the only one with his back to the
camera-face down, so to speak.
Of course, the biggest clue came on
the albums final cut-the aforemen-
tioned Day in the Life which is
about a man who blew his mind out
in a car.
The White Album contained some
obvious references-and some not so
obvious. Following the song Im So
Tired-a tune about a mans insomnia
caused by missing a friend-John can
be clearly heard saying, Paul is dead-
miss him, miss him, miss him.
Acting on a tip from another
degenerate-I mean, source, Gordon
had to use all of his technical skills to
play Revolution 9 backwards on a
tape recorder to reveal the phrase,
Turn me on, dead man.
The clues on the Magical Mystery
Tour album got even stranger. Paul
is the only character dressed in
black-and as a black walrus, no less.
Gordon, who was now at least three
steps ahead of me, explained that the
walrus was a symbol of death and bad
fortune in the Norse culture. He
claimed that if even the fearless
Vikings of yore saw a dead walrus,
they would turn back to shore.
John made no bones about it in
Glass Onion when he blatantly
announced, Now heres another clue
for you all-the walrus was Paul.
Inside was a foldout with individual
pictures including one of Paul sitting
at a desk behind a name plate that
read I was.
There was also a phone number
hidden in the stars on the cover that
would supposedly connect you with
Billy Shears (Now let me introduce
to you-the only and only Billy
Shears sings John at the beginning
of Sgt. Pepper.), the man who had
allegedly taken Pauls place. But all
we got was a disconnect notice.
Of course, we also invested in old
singles when the word got out that at
the end of Strawberry Fields, John
said, I buried Paul and that
Come Together-Over Me contained
more clues.
Gordon was certain that the final
verse of the latter song-One and one
and one is three, Got to be good-
looking cause hes so hard to see
settled the issue without a doubt that
the Beatles were down to a threesome

there. The two biggest magazines in
the nation at that time-Time and
Life- published pictures on the
cover of Paul McCartney and inter-
views inside to attempt to squash the
rumors.
Gordon was not convinced. In a
succinct letter to the editor of Life
magazine, he bluntly rejected their
evidence.
Dear Sir: The man on the cover
of your magazine is not Paul
McCartney. Paul McCartney is
dead.
The summer and fall of 1969 was a
time of unbelievable events. The
United States put a man on the
moon. The Miracle Mets won the
World Series. LSUs football team
lost one game-by
three points to a
guy named Archie
Manning-and
didnt get to go to
a bowl game. And
I managed to
make a 2.8 GPA
despite chasing
rumors about a
dead Beatle.
Gordon and I
have remained
friends over the
years, although
never as close as
we were on that
Sherlock Holmes-
Dr. Watson case of
1969. Paul
admitted in 2004
what I think we
knew all along-that
the Beatles came
up with that hoax
to keep their popularity high during
the breakup and to sell old records.
But I cant help but wonder, with
all these cancellations in 2014 due to
some mysterious illness, if Paul isnt
being punished by some weird
kind of George Harrison karma and
is really dead.
For Lindseys sake, I certainly
hope not.

Trust a
Photo
You all know the phrase a
photo says a thousand words.
They do. They show emotion,
expression, vulnerability. Most
of all they show the truth if the
truth exist.
I have a few photos Id like
to comment on and tell their
stories.
First here is a photo of me
and a trailer full of bass. What
a catch. At this time I need to
remind you that I am a graphic
designer and a master of
Photoshop. I could have caught
7 fish and in Photoshop
duplicated and cloned the fish
and created this magnificent
display.
The truth is this photo is
legit. Several weeks ago I went
fishing in North Louisiana at a
place called Wilson Lake. Its an
old oxbow off the Red River.
There were always fish there
but the grass has gotten so
thick it was impossible to fish
for years. Its really remote and
at one time $1 per fisherman
and $3 for the boat was the fee
on the honor system to be paid
in the rusty coffee can at the
cattle gap to enter the property.
Since those days gas has been
discovered in their area and the
family land owners dont count
on the coffee can nor do they
allow folks to fish anymore.
This particular day we talked
our way in for a one day fishing
trip. Wow, what a trip. Thank
God I had 2 yellow and black
H&Hs because the first one
was destroyed with-in an hour.
Can you trust a photo is
right. Here is a photo of my
2 year old great niece, Millie.
While visiting from Colorado
she and I planted a couple of
watermelon plants in my
garden. The next morning we
went to check the progress of
the planting. When we arrived a
full size watermelon was sitting
there. AMAZING, How did
that happen?
I thought I could convince
her she has the best green
thumb, EVER. With one glare
she looked and spoke up. Uncle
Bully. I know more about your
smart phone than you do. Do
you think Im gonna fall for a
melon growing over night. It is
also cold like it came out of the
ice chest. Duh?
She has a point as I watched
her put in a pass code in her
plastic Princess Sophia First
toy phone.
Can you trust a photo. This
is a doosey. While visiting
California several months back
Annie and I took a photo of
our foot impressions in the sand
on the Pacific coast.
After taking the photo we
noticed as we looked at it, it
seemed to change shapes. One
minute you look at it and it
looks normal with impressions
in the sand. The next minute it
looks like the foot print
impressions are coming out at
you from the sand. As if they
are embossed and raised above
the sand. As a photo you can
believe this is a real photo.
Ok, Here is a photo of
getting put in a headlock at the
Jambalaya Festival for not hav-
ing the proper credentials to be
in the cooking area. This is a
staged photo but however I
asked Layne a question as I
walked by the Jambalaya
Tasting area. I then I got a ear
full about not talking to the
judges while judging. So the
photo may be staged be but the
event is legit.

I began my so-called
outdoor writing career about
eighteen years ago. My first
stint in the outdoor writer
business started when I assumed
the job of president in the East
Ascension Sportsmanship
League in 1996. The president
of the E.A.S.L. Is required to
write a monthly article for the
organization's newspaper. I
produced an article each month
for the two year term that I was
president. When I first started, I
remember thinking about how
hard it would be to come up
with an article each month. I
was much younger then and
soon realized that there was
plenty to write about.
For several years now I have
been writing an article for
"Ascension Magazine".
Monthly articles come due
quickly. I must admit that if
you're constantly writing about
one subject, in my case outdoor
activities, there comes a time
when you begin searching for
things to write about. At times
you need to step out of the box
and do a little thinking. Before
you know it, you'll have several
more subjects to explore.
As with all things you'll need
young recruits coming into
your profession (Outdoor
Writers) if your mission is to
survive. Young fresh minds are
very creative. Young people all
have something to give to this
world. That's the way it works.
When us older folks are gone,
the younger generation will
carry the load and the cycle will
never end. As in the case of
outdoor writers, I have the
opportunity to observe some
of the writings and photography
from boys and girls of different
age groups throughout the
state. Each year the Outdoor
Writers' Association holds its
Youth Journalism contest. The
awards are presented to the
winners at the L.O.W.A. Annual
conference. Some of each
winning essay is read to the
audience as the young winners
prepare to accept their awards.
I'm telling you, it would bring
tears to your eyes to hear what
these young minds have to say.
The essays and photography
do not need to be complex.
They can as simple as a hunting
or fishing trip, but remember to
step out of the box, for there's
much more to the outdoors
than killing and catching.

This Month at Morans Marina in Port Fourchon
Inshore Trips
Consist of leaving out at 6 am and fishing for specks and reds, occasionally drum and
sheephead as well, arriving back at the dock for 3pm. Trips consist of live bait and artificial
techniques Live bait, ice, tackle, included. If you have a favorite rod by all means bring it.
Food and drinks available upon request.
Colder months we usually fish Leeville and Golden Meadow marshes.
Warmer months we typically fish Barataria and Timbalier bays, beaches,
and the western barrier islands.
Offshore Trips
Consist of leaving out at 6 am and arriving back at the dock between 4-6pm.
These trips are the most commonly booked trips, we generally target bottom species, live
bait mangrove fish , and troll the rip when in season. Fish you can expect to catch on these
trips include snapper, grouper, amberjack, wahoo, blackfin tuna, lemon fish, dolphin.
On these trips we generally travel up to 60 miles out.

The Golden Meadow Fourchon International Tarpon Rodeo awards Scholarships to Renee Guidry
($4,000) and Crystal Griffin ($2000) from South Lafourche High School. Funds are raised from
the upcoming Golden Meadow Fourchon International Tarpon Rodeo and King of the Catch cook-off
contest on July 4,5 with the cook-off being on the 5th. The awards were handed out by Chris Moran
(president of the rodeo counsel) and Norby Chabert (2014 Admiral). The rodeo also donated
($4000) to the high schools JROTC program for helping with the event.

Trout Aline
Trout:
4 filets of trout
salt to taste
cayenne to taste
4 tsp. butter
Season trout well, place on oiled
steak plates, dot with butter.
Cover with foil and bake at 300
degrees for 25 minutes.
Sauce:
1 - 3oz. pkg. cream cheese
2 egg yolks
2 T. lemon juice
1 tsp. lemon rind, grated
2 T. chives, chopped
1 tsp. creole mustard
1/4 tsp. Louisiana hot sauce
salt to taste
Seasoned bread crumbs
In double broiler on very low
heat, melt cream cheese. Add
one egg yolk at a time, beating
briskly with wooden spoon after
each addition. Add lemon juice,
rind, mustard, chives, salt, and
pepper. Place 1/4 of sauce on
each filet, sprinkle with seasoned
breadcrumbs, dot with butter.
Bake at 300 degrees until brown.
Serve with garlic bread.

of Louisiana my entire life. I truly enjoy charter fishing to the point that I don't
know who is having more fun, the clients or me. No saltwater species is safe

A GROUNDS MANAGEMENT COMPANY
One of my favorite places to
observe human behavior is on
the road while driving. I know
what you must be thinking, how
in the world can you notice
anything while driving? Its
because my phone is in my
purse. So, I am actually driving
with my head up looking
forward and my eyes scanning
the road. Rare, I know. I dont
think this old-fashioned
approach is taught anymore.
There are a few driving
personalities that just entertain
me. And here they are:
The Slow Processer:
(Inexperienced at Decision Making)
A road detour due to
construction- This driver never
saw all the warning signs leading
up to the detour, nor did they
notice the cones, the road
equipment, or the road crew.
They drive all the way up to the
detour, lock up their brakes,
come to a complete stop, think it
through,(..wait.. for.. it)
then proceed.
Always My Turn:
(The Patience of a Child)
Waiting on a side road to
approach the main flow of
traffic this driver takes the first
opportunity he/she sees and
doesnt notice that if he /she
would have waited just 2 seconds
longer before merging in he /
she wouldnt have caused the
pile up of traffic due to the slam-
ming of brakes necessary to
allow this driver in. Meanwhile,
a car-length away theres enough
room for a tractor trailer to
enter safely.
I Own This Section
of Road:
(The Only Authority Ill Ever Have)
This driver is usually the same
driver as the Always My Turn
driver. Now that theyre on the
road, they own it. They refuse
to speed up with the flow of
traffic. Instead they pretty much
come to a complete stop and will
proceed when theyre darn good
and ready and dont dare
encourage them to go any faster
or they will show you just how
slow their cars can actually go.
The Tailgater:
(Attempt at Intimidation)
The only thing I can say about
this driver is If you wanted to
ride WITH the people in the car
in front of you, you may have
called them to carpool.
And my personal favorite,
Non-Stick Teflon:
(Nothing Is Ever Their Fault)
This driver has interrupted
the flow of traffic by lagging
car-lengths behind, then for no
apparent reason, races up to the
car ahead, tailgating, then
begins to lag again. Uses the
rumbles strip on the road as
bumper guards, stops at a red
light, doesnt notice the light
changed to green, allowed
drivers behind to miss the
chance to go. And when a
driver offers a small honk of
their horn to get this drivers
attention, all bleep breaks lose.
This driver becomes insulted to
the point of curse words, finger
gestures, even worse driving and
now makes it their personal
vendetta to make the honker
miserable until their paths part.
So, as you can see travel is
oftentimes a very humorous part
of our day-to-day lives, if you
chose to see it that way. And if
you havent noticed some of the
personalities Ive mentioned
while in your own travels, you
may consider putting down your
phone and enjoy the show.
Its a kick in the pants!

Prep Time:

Servings:
6 servings
Ingredients:
6 Fresh Medium
Tomatoes
2 lbs Chicken Breast
Cup Mayo
Cup Creole Mustard
1 Tbsp Fresh Garlic (minced)
1 Tbsp Salt
Tbsp Black Pepper
Cup Celery (chopped)
Cup Red Onion (minced)
Cup Green Onion (thinly sliced)
1 Tbsp Fresh Parsley
Method:
Season the chicken breast using salt and pepper. Grill or bake
the chicken for about 15 minutes or until done. Allow to cool
for 10 minutes then cut the chicken into cubes. Toss all the
ingredients into the food processor and pulse until the desired
texture is achieved.
For extra spice add 1 Tbsp of your favorite Creole seasoning or
a tsp of red pepper.
For the tomatoes, using a small paring knife carefully cut
around the core of the tomato. Using a spoon, scoop the
seeds from around the inside of the tomato. Carefully stuff the
tomato with chicken salad and serve.
