I
t seems like an age since Kate and I took over
1861, then a run-down pub.
We knew that breathing new life into the place
would take commitment, but the location was perfect,
in the heart of the countryside, yet accessible, and the
19th century building had such potential.
Doing justice to the lovely old place has been a
labour of love, and we hope you will agree that we
have managed to retain the charm and character of
the original structure, while also creating a modern
vibe.
The food I produce at the restaurant is the product
of almost two decades experience in a variety of
kitchens, working with top chefs.
I was extremely fortunate in that
my career began with the Roux
brothers at their fabled three Michelin
star restaurant, the Waterside Inn at
Bray.
I then went on to work as Martin
Blunos right hand man at the two
Michelin star Bristol and Bath
restaurants, Lettonie.
It was Martin who taught me
about the importance of food
provenance, and how simple, seasonal ingredients
treated respectfully create the best culinary
experiences.
My career path then took me to Monmouthshire
and Llansantffraed Court, where I took up the reins as
head chef, and, most importantly, I met my wife-to-be,
Kate, who was the hotels wedding co-ordinator.
Running our own ship is more than a full-time job,
its a way of life, especially as we live above the
restaurant with our two young children.
But the hard work is well worth it, as I feel our
customers appreciate the fact there is so much
personal input, both in the food and the service.
I love to make everything from scratch, and smoke
my own duck in the cellar and enjoy making my own
preserves.
Foraging is a passion of mine too, and the wild
garlic season always makes me very happy, as does
the abundance of elderowers in early summer, and
a delicious assortment of fungi later in the year.
Monmouthshire is an ideal place to be based
if you love food, as there is such a diverse range of
excellent places to eat, from gastro pubs to country
house hotels to chic restaurants and buzzy cafes.
Its also a great place to be a chef, as the array
of fresh produce on the doorstep is truly
awe-inspiring.
Our ethos is to source as much as
possible locally as this makes sense in
terms of the freshness of the food and its
carbon footprint.
It also makes perfect sense to support
the local economy, and ensure that a
broad range of businesses thrive.
We are also lucky in that most of our
vegetables come from Kates fathers
market garden in Nantyderry, a few miles down the
road. We get herbs and salad delivered twice a day
in summer so you cant get fresher than that.
Its probably fair to say that Monmouthshire is the
foodie capital of Wales. Tell your friends, the delights
of the county should be shared.

he urban regeneration company, Newport
Unlimited, and Newport City Council have
been working together on a major 5
million, two-year refurbishment programme to
transform Newports historic indoor market and the
surrounding market quarter area.
The Grade II listed Victorian market and other
traditional buildings in the market quarter are being
refurbished, with a view to accommodating a food
academy, restaurants and cafes to add to the
existing venues. The existing market entrance is to be
enlarged, and new terraces and seating installed to
create a caf quarter atmosphere.
There is a wide range of stalls in the market hall,
ranging from traditional suppliers who have been
trading here for generations, to new traders bringing
in new products and ideas. This mix keeps the market
alive and vibrant, and continues to attract a loyal
local following.

his is a family run business of artisan pie makers
with the idea that pies can, and should be, made
better. With ingredients including organic meats and
cheese, eggs from their own free range chickens and no
fewer than three National Great British Pie Awards in
their rst year, mother and daughter Cheryll and Collette
Crewe have denitely been doing their bit to promote
Heritage Meats and true provenance, and to support
British Farming.
Working from their own farm, this has developed into
a real family affair. Collettes husband, Steve, has now
joined the Piedom, and Cherylls husband, Dave, makes
cider to be used as an ingredient for the pies.
And another award! Honey made by Daves bees
at Elm Tree Farm in St Brides won a True Taste of Wales
Silver Award in 2012.
With an original range of pies and pasties to choose
from, including the Gold award-winning Porky Pear Pie,

his microbrewery, run by local boy
Bradley Cummings and his brother in
law , has been trading for less than two
years, but it swept the board at the Champion
Beer of Wales competition 2013, winning all
three top places! This is the rst time in history
that the rst, second and third places have
all been won by one brewery, which is an
outstanding achievement.
Tiny Rebels beers can be found in
venues as far away as London, Brighton and
Manchester, as well as many throughout
South Wales and the West Country, and they
have regular beer festivals showcasing their
products at the brewery itself - Tiny Rebel

H
alo Foods has been trading in Newport for over 25 years, and is now one of the
largest manufacturers of healthy snack bars in Europe. They cater for specialist
sports achievement or health diets, and include low GI, reduced fat, high bre
and calorie controlled products, many with Fair trade and Organic ingredients.

I
ts not only the pigs who have the pedigree at the
Moody Sow Farm Shop at Cefn Mably Farm Park;
owner Rhys Edwards comes from good stock too,
as his great, great, great grandfather and great, great,
great uncle were a local farmer and butcher team at
the beginning of the last century.
Their Hereford beef comes from just one mile
away, and Rhys and his wife Alyona are keen to
uphold the familys traditional values and source as
much food locally as possible. All the sausages and
burgers are made on site from their own pigs which
range free in the woodland next to the farm shop,
and other local farms also supply them with lamb and
poultry.
With fresh and frozen produce, and artisan
preserves, drinks and groceries, the Moody Sow
Farm Shop is turning into a foodie destination to be
reckoned with.
In future, the family plan to get out and about to sell
their products, so look out for them at local events and
Farmers Markets.

his popular event draws the crowds in Caerleon, and is
evidence of the local interest in high quality, artisan foods
which has increased considerably with the quality of local
ingredients and producers on our doorstep.
Several high prole chefs have relocated to the area, citing the
availability of ingredients as a factor, and many local producers
supply outlets and restaurants all over the country.
The village has a great choice of cuisines, with the Lodge
Coffee and Deli selling locally-sourced delicatessen products,
relaxed dining at The Snug at the Ffwrwm, modern Welsh cuisine
at the award-winning Bell Inn and The Goldcroft and Priory Hotel
With a real mix of stalls, the Farmers Market is run in
conjunction with the summer Caerleon Arts Festival and at
Christmas, providing the opportunity to get gifts for your foodie
friends, and perhaps a hamper for the very special ones!

he restaurant is only a short six-mile drive away
from Abergavenny town centre.
Husband and wife team, Simon and Kate
King invite you to dine at their beautifully restored 19th
century building, where head chef Simon has deservedly
earned two AA Rosettes for his culinary excellence.
Simon has nearly two decades of experience as a
chef, and has worked in some of the nest Michelin Star
restaurants in the UK.
Simons passion for cooking is second to none, and
hes a rm believer in knowing where his ingredients
come from.
When you browse through the varied menu at
1861 it also informs you where the produce is sourced,
ranging from beef and poultry to herbs and vegetables.
Were very lucky to live in an area that offers so
much, supporting local suppliers is paramount at 1861,
Simon told us.
Not only is the produce from local farmers and
suppliers of excellent quality, but also it is delivered fresh
on a daily basis, which I believe makes any dish taste
better.
Fruit and veg come from Kates father, who has a
nursery in Nantderry.
Kate and I also grow our own produce in our
garden, including a variety of herbs, mushrooms and
garlic you cant get any fresher than that.
Their lunch menu is served daily from 12noon,
where you can choose two courses for 20.50 or three
courses for 25.
Dinner is served from 7pm onwards and you can
pick a three-course meal from the set menu priced at

pub located at Clarence Place, Newport.
For nine years Karen and Paul have
successfully run this traditional local and during that
time they have gained an excellent reputation for
their fantastic home-cooked food and generous
portions.
What makes the Dodger so special is that our
staff and customers treat each other like family. We
always make an extra effort to make everyone feel
welcome, whether its our long-time regulars or new

hostelry, Indian curry house, steakhouse and general

before Julie and James Dawson got their hands on it in
October 2012 and returned it to its former glory (and

The delectable meals available on The Gates varied
menus are meticulously executed by a team of award
winning chefs. All food is prepared in-house all dishes
being made from scratch. No pre-prepared ready
meals or boil-in-the-bag food here! Best of all, The Gate
is not tied to a brewery or a pub chain company, so
beer and wine is widely varied and modestly priced to
complement the ne food.
Food is served from 12noon to 2.30pm and then
from 6pm until 9.30pm Monday to Thursday and from
12noon until 9.30pm Friday and Saturday. Sunday lunch

Junction 28 back in 1993; previously they had
successfully run The Drum and Monkey pub
for many years at Blackrock, located at the Heads of the
Valleys.
Due to Jon and Richards popularity and reputation

uilt in the 1870s, the Grade II-listed Waterloo
Hotel is a historic pub, which makes a welcome
change from the usual plain chain hotels.
At one point in the Waterloos colourful history it
