Microbreweries are on tap in Estero

S
outhwest Florida may be about ve years behind
other regions of the nation when it comes to
craft beer, but options for nding or making
a good beer are rapidly on the rise.
Why people who drink good beer are so
passionate about it is because its so good, says Don
Story, who runs Brew Story, a home brew supply store in
Estero. It tastes so different that I cant drink the other
stuff anymore.
If a restaurant doesnt have craft beer, Story says hed
rather drink water. And thats saying something for a man
who has kept a keg of beer on tap in his home for the last
20 years.
The story of beer in the U.S. was abruptly altered by
Prohibition. Before 1920, there were 4,600 breweries in
the nation, Story notes. After prohibition, just 36 macro-
breweries dominated the market for decades, until
microbreweries started to emerge in the 1970s. Now, craft
beers represent more than 10 percent of overall beer sales
in the U.S., Story says, noting a 100 percent increase over
the last ve years.
Locally, Southwest Florida is just beginning to taste
the difference, with craft beer menus popping up at
local restaurants and microbreweries with tasting rooms
opening in the region.
I think the population is getting a little younger, and
more people are moving from regions where theres craft
beer, says Brian Hahn, who plans to open Momentum
Brewhouse on Bonita Beach Road late this summer. The
area needs something like this. Its fun for the whole family.
Its almost like a coffee shop atmosphere, but with beer.
Will microbreweries become as common as coffee
shops?
This industry is growing by leaps and bounds, says
Story, who prefers to make his own home brews.
He helps craft beer acionados learn to brew their own
ale. A startup system and beer ingredient kit cost about
$350. Story offers kits for 30 different types of beers,
ranging in alcohol content from 4.1-9.5 percent.

Indeed, Hahn is a former industrial engineer.
Its setting up an assembly line and putting a product
out, but now I get to see the smile on the customers face,
he says.
Momentum Brewhouse wont be a bar atmosphere,
Hahn adds. It will be a happening hangout, with live music
and events like car and motorcycle shows.
An increasing number of local eateries are latching onto
the craft beer trend, some centering their business around
it.
House of Brewz opened in Gulf Coast Town Center in
November and celebrated its grand opening in February.
The bar carries 300 different craft beers, with 150 on draft.
The breweries that make these [craft beers] pay a lot
of attention to what they put in the beer, says General
Manager John Howard. Its an art form.
House of Brewz hosts frequent release parties for new
brews and constantly rotates drafts. They carry as many
local beers as possible, from Fort
Myers Brewing Company to Cigar City
Brewing in Tampa, which is ranked
No. 5 in the nation for microbreweries.

scratch kitchen, Howard adds.
Hurricane Grill & Wings was the
rst to bring craft beer to Estero,
Story notes. Fords Garage opened in
Miromar Outlets last fall, with a seven-
page beer menu. While the community
didnt allow World of Beer to come to
Coconut Point, Story says he thinks
attitudes are changing as the industry grows.
I dont drink to get drunk, he adds. I drink beer
because I love the taste of a good beer.
While most home brewers are male, Story is surprised
by the number of couples who are getting into the hobby
together. His own wife, Jackie, wasnt a beer drinker for
years until the couple started hosting beer dinners,
pairing craft beers with entre and dessert courses.
Now shes become a very educated beer geek, Story
says. She loves beer as much as I do.
Brew Story stocks about 35 types of grains, more than
30 hops and 15 varieties of yeast. Creating a recipe may
be art, but consistently producing it is science, he says.
Its not hard, but it takes patience, Story muses. I
always age my beer a long time. Most guys cant wait, but
they admit if you do, it tastes better.

apallo resident David Van Sleet hit upon an
idea which speaks to the heart of America
when he formed the Wounded Warrior
Amputee Softball Team three years ago.
Merging his career in prosthetics with the
Department of Veterans Affairs and his longtime love of
softball, he formed a new kind of special operating unit
for the military. It includes 20 men who have served their
country in overseas combat and paid dearly with a limb.
They couldve chosen to give up hope, to succumb to
depression and a life of limited opportunity. Instead, these
warriors have chosen to train and live by the Wounded
Warrior motto: Life Without a Limb is Limitless.
Theyve already won before they get on the eld,
says Van Sleet, who retired from his post as prosthetics
manager for the VAs Southwest Health Care Network to
manage the Wounded Warriors full time.
Southwest Florida has played a major role in bringing the
amputee team into the national limelight. A congressional
grant paid for an initial weeklong training camp in Arizona
in March 2011, but there were no funds to continue.
Van Sleets father, Jack, stepped up to organize a
fundraiser with Highland Woods Golf and Country Club
in Bonita Springs, raising $7,000 for the teams rst trip
to Washington, D.C. They played able-bodied teams from
the FBI, Walter Reed Medical Center and the U.S. Naval
Academy, gaining them national media recognition.
Theyve since been featured in Sports Illustrated,
on ESPN and HBO Real Sports, People magazine and
numerous other media organizations. The Warriors have
played games in 67 cities and 28 states, making about 125
trips in the last three years. Their competitors include
Olympians, college players, professionals and celebrities.
This team is not just a softball team, says Josh Wege,
a double amputee and medically retired Marine who has
been with the Warriors since the beginning. For the guys,
its therapy. Its a comeback story, and everybody needs
something like that.
Wege, 24, lost both legs beneath the knee from an

explosion while on patrol in Afghanistan
in October 2009.
We were on patrol and rolled over a
200-pound IED that blew through the
hull where I was sitting, Wege recalls.
I couldnt feel my feet. I looked down
and my legs were severed. It looked like
a movie prop. My guys pulled me out the
vehicle. They saved my life.
When he had arrived in Afghanistan,
Wege was a strong, invincible Marine. He
had always welcomed challenges, but he
never imagined this. Yet it is now a part of
his story that he embraces, thankful for the
opportunities he experiences as a traveling
softball player, military ambassador and
public speaker.
Its a neat opportunity out of something
most people would quit at, Wege says. Its
denitely given me a different perspective
on life. Ive grown up fast. I know who I am,
which is kind of a unique thing at my age.
The Wounded Warriors come from all
across America, gathering to play roughly
two weekends a month. The team played
a celebrity team from Florida Gulf Coast
University in February, narrowly winning
with a score of 11-10.
The event was a highlight for our
department again this year, says Graham
Diemer, FGCUs director of Athletic
Advancement.
The Warriors play in Rocky Mountain,
N.C., and Norfolk, Va., this month. Always
playing able-bodied competitors, they
boast a winning record.
I get annoyed if people take it easy on
us, says Wege, a utility player who steps
up wherever needed. When we step on
the eld, I expect to be treated like an
athlete. Were competitors. We all have
that warrior ethos.
A Wisconsin native, Wege may be
sighted around Estero more often this fall,
as he is planning to enroll at FGCU.
I like the area, he says. Its a beautiful
school, and its a smaller school, which I
like. Its really where my heart is.
He plans to study prosthetics so he can
help others like himself to live a fuller life.
Wege went through 17 pairs of legs before
finding his current set, the Modified
Cheetah, which he says has made him
twice as fast and agile.
The cool thing about prosthetics is you
have an immediate impact on someones
life, he says.
Hes already got the OK from FGCU
ofcials to continue traveling with the
Wounded Warriors, operating as a student
athlete during his time at FGCU.
Whatever you do, dont us the word
disabled around Wege or any of the other
determined warrior-athletes.
Its part of your past, and its a part of
you; its just another chapter in your story,
Wege says. It tells a lot about you if you
can bounce back from something like that.
Everyone likes a comeback story, which
is part of what continues to make the
Wounded Warriors Americas favorite
home team.
Its denitely

perspective on life.

intermingle as the FLOR500
exhibition comes to Florida
Gulf Coast University this
month.
This statewide collaborative project
dreamed up by Miami artist and Florida
International University professor
Xavier Cortada seeks to commemorate
Floridas quincentennial by giving a
glimpse of what the landscape looked
like when Juan Ponce de Len landed
here in 1513, naming the land La
Florida, from the Spanish word for
ower.
What he has developed is an
environmental art project that spans
the entire state, says Region Seven
curator Mary Voytek, an associate
professor of sculpture at FGCU.
Five hundred Florida artists were
selected, including about 60 from
Southwest Florida, each choosing to
depict one of 500 native wildowers
identified by a team of scientists.
Historians also contributed to this
massive participatory project by
identifying 500 signicant gures in
Florida history. Each will be honored
with a new wildower garden planted
to help support Floridas biodiversity.
The FLOR500 exhibit fits well
with FGCUs mission, which
includes community partnerships
and environmental sustainability,
notes FGCU Art Gallery Coordinator
Anica Sturdivant. The universitys
1,900-square-foot art gallery hosts up
to 10 exhibits a year, including student
art shows, regional artists and national
exhibitions.

merged at FGCU, forming the Bower
School of Music and the Arts, providing

Were trying to bring the program
together and incorporate performing and
visual arts, explains Joanna Hoch, Bowers
new Event Coordinator, who joined FGCU
in January along with Art Gallery Director
John Loscuito. Hes busy planning art shows
and exhibits for 2015-16.
Voytek remembers when the universitys
art program consisted of one carpeted
classroom in the Humanities Building. The
Arts Complex opened in 2002 and now
accommodates 150 art majors.
Voytek has herself created a work of
hand-forged aluminum to depict the
Leatherleaf Airplant in FLOR500.

her sculpture.
As curator, Voytek is coordinating
admission and placement of more than
50 works of art from an eight-county
region.
Its is a huge undertaking, she
says. Installing all those art pieces is
going to be a big job.
Estero resident Patricia Faye,
an FGCU professor of ceramics, is
creating a piece to represent Lopsided
Indiangrass, while Estero artist Andy
Browne has done an oil painting of the
White Stopper.
My work is primarily concerned
with garden images to illustrate
our connection with the world, he
writes of his inspiration. I am very
concerned with our cavalier attitude
towards the natural world and the
steady destruction of all habitats.
The FLOR500 works span all
mediums, including watercolor,
acrylics, drawings, sculptures of metal
and plywood, even abstractions.
I think the show will have a wide
audience appeal with the variety of
mediums, styles and interpretations,
Voytek says. Most importantly, we will
certainly raise awareness of our native
wildowers, which are sorely under-
appreciated.

GROWING NATIVE
FGCU will be alive with native plant enthusiasts, from artists and backyard
gardeners to serious botanists and biologists.
Growing Native, the Florida Native Plant Society annual conference, will be
happening in conjunction with FLOR500, with speakers and activities planned
for four days from May 15-18.
Its wonderful, Voytek muses. We are having this show and coincidentally,
they are having this conference at the same time. There will be 400-500 native
plant specialists staying on campus.
A special Walking with the Natives event will be held on Saturday afternoon,
offering local families the chance to explore FGCUs many nature trails. The
Florida Forest Service is donating slash pines for families to plant at home, as part
of Xavier Cortadas Native Flag Reclamation Project. Its an urban reforestation
effort to help restore native habitats for plants and animals. Local residents are
asked to create a green ag to display in their front yard next to a newly planted
native tree.
The goal is that when people leave, theyll be able to identify ve native plants
or more, says Growing Native Conference Chair Marlene Rodak. It stimulates
their curiosity and develops a connection with nature.
Cortada will be speaking to conference attendees Saturday afternoon, followed
by Dr. Bill Hammond, who was instrumental in starting the Environmental
Studies program at FGCU. Other noted speakers include Dr. Don Chambers, an
internationally recognized expert in sea level science, and Dr. Marty Main, who
started the Florida Master Naturalist program. Dr. J.C. Cahill, of PBSs What
Plants Talk About, will be ying in from Alberta, Canada, and speaking Saturday
morning.
As the conference closer, Hammond will speak about the connection between
green space and a healthy population.
Im trying to build a rationale for why native plants and green space are so
critical to our society from a health standpoint, he says, adding green space
boosts tourism, cleans water and air and provides recreational space.
A professor emeritus, Hammond conducts workshops on journaling and was
roped into creating artwork for the FLOR500. Hell be sketching the Redstem
Purslane, a dune plant that he hasnt seen out in the eld since the 1960s.
Ive been all over Sanibel, Fort Myers Beach and Lovers Key looking for it, he
says. I dont want to draw from a photo. They say its here, so Ill keep searching.

T
he story behind the unusual name starts with
Ruth Fertel, a New Orleans single mother of two
who bought Chris Steaks and turned it into a
steakhouse empire with more than 130 locations
serving about 25,000 steaks a day.
When most people think of Ruths Chris Steak House, their
mouths start watering for a tender, juicy let. What they may
not know is this local favorite for ne dining also serves up
well done seafood, chicken and lamb chop dishes, the
quality of which is quite rare.
Our server, Billy, a likable and outgoing FGCU
bioengineering major, admitted his favorite dish on the menu
is not ribeye or let mignon although those are excellent
choices. The dish he cant get enough of is the Stuffed
Chicken Breast, an oven roasted, double chicken breast
stuffed with a creamy, garlic-herb cheese blend of cheddar,
swiss and monterey jack.
I just cant get that anywhere else, Billy says. People
come here and think, steak, steak, steak. When they try the
chicken, theyre stunned.
Other surprises at this upscale eatery include a casual yet
sophisticated bar menu with $7 Happy Hour specials like the
Prime USDA burger with fries. For the price of a fast food
meal, you can unwind in a much classier atmosphere with
quality food and drinks.
A full-course meal doesnt have to be outrageously
expensive, either. While Ruths Chris may be considered
the premiere place for celebrating special occasions, the
restaurants prix xe menu offers classic dinners for $42.95,
including a starter, select entre, side item and dessert.
Ruths Chris also will come to you for catering needs large
or small.
We cater, from a simple drop off of appetizers and hors
doeuvres for a party or reception at your house, all the way
up to full catering for 500, says General Manager Mark
Porter.
We happened to be celebrating a birthday, so he made
it special with confetti at the place setting and a Happy
Birthday wish drizzled in chocolate sauce with dessert.
Mark and Billy, along with many support staff members,
ensured top-notch service, with plates and crumbs cleared
when each course was nished and drinks topped off
frequently. Wines were custom selected for each course,
starting with a crisp, acidic New Zealand Sauvignon Blanc to
compliment our seafood appetizers and ending with petite-
sized dessert wines to enhance the sweetness of our nal
bites.
We certainly left with sweet memories of the A-plus service
and delicious dishes at Ruths Chris Steak House.

01. APPETIZERS/ CALAMARI
This is one of the best looking and tastiest calamari
presentations around. The squid is rst marinated in
buttermilk for 24 hours to make it tender before being
lightly fried and tossed with a sweet and spicy Thai chili
sauce. Another signature appetizer for seafood fans is the
Sizzlin Blue Crab Cakes. Theyre meaty and avorful and
come to the table in sizzling style.
02. COCKTAILS/ BLUEBERRY MOJITO
Fresh-squeezed juices and other quality ingredients make
Ruths Chris handcrafted cocktails a nice addition to any
meal. The Blueberry Mojito adds muddled berries to this
refreshing cocktail, featuring Bacardi Silver Rum, freshly

from-the-sea bass is meaty and mild. Served over sauted
baby spinach, this buttery dish is delish! Other seafood
selections include scallops and Caribbean Lobster Tail,
which can always be paired with a nice, juicy steak.
06. DESSERT/ BREAD PUDDING
Ruths Chris does this New Orleans classic right, with fresh-
baked bread pudding topped with sweet Whiskey Sauce.

The Cause Proceeds from the event will help build shade structures over

and the benets of early skin cancer detection. The Passion Foundation started
when Tara Parla was diagnosed with Stage Three Melanoma in early 2010. After
four immediate surgeries and chemotherapy for 14 months, Tara was though
to be cancer-free. Late in 2011, cancer was found in her lungs, liver and brain.
After trying multiple methods of radiation and chemotherapies, Tara sadly
lost her battle to this horrible disease in late 2012. Taras dream was for the
foundation to continue and help save lives.

Komen Race for the Cure brought more than 2,000
participants to Coconut Point Mall on March 8, raising more
than $650,000 for breast cancer support and research. This
