6:15 A.M. - Day 1 Attendance ,Introduction, Kitchen tour. Turn on all ovens, stoves, and grill
7.00 am- collect misen place i.e ingredients and equipment. Given supplemental order by 7.30
7:30 - 10.00 prep time cook
8:30-9:15 menu Lecture
9.45 - 10.00 am - Sauces need to be strained. Stations ready for demo plates. seasonings. Clean
stations, floors, all pots and pans before service.
10.30 -10.45 demo plate with chef and ready for service
10.55 start firing food for servicd
11 to 11.30 service time
11.30 12.00 plate family meal and clean kitchen
12 - 12.25 family meal
12.25 to 12.50 CLEAN
12.50 lecture begins
1.30 2.00 class dismissed
