residents Day is an
American holiday that is
celebrated each year on the
third Monday in February. School
children typically get the day off
from school and many profession-
als also get the day off from work.
Established in 1800,
Presidents Day once went by a
different name. Known as
Washingtons Birthday, which is
still the legal name of the holiday,
this day was meant to celebrate
the first President of the United
States, George Washington,
whose birthday was February 22.
Congress declared that day a fed-
eral holiday more than 200 years
ago, and eventually the holiday
grew to become a celebration of
President Abraham Lincoln, who
was born on February 12, as well.
The holiday is now a celebration
of the lives and accomplishments
of every U.S. president.
Few Americans would be
hard-pressed to identify George
Washingtons visage, which is
depicted on some American cur-
rency, including the $1 bill. Born
in 1732 to Virginia planters,
Washingtons interests included
western expansion, which he was
able to take part as a teenager,
helping to survey the Shenandoah
lands at the age of 16.
Washington was also interested in
military arts, and he was commis-
sioned a lieutenant colonel in
1754, eventually playing a role in
what became the French and
Indian War.
In 1759, Washington was
serving in the Virginia House of
Burgesses, an assembly of elected
representatives of the English
colonies in North America.
Growing frustrated with, and feel-
ing exploited by, British regula-
tions, Washington voiced his
resistance to restrictions placed
on colonists, who were moving
toward what would become the
American Revolution.
At the Second Continental
Congress, which assembled in
1775, Washington was elected
Commander-in-Chief of the
Continental Army, taking com-
mand of troops at Cambridge,
Massachusetts on July 3, 1775.
Under Washingtons com-
mand, the Continental Army
would ultimately succeed, win-
ning the colonists their independ-

trains. Raw materials will be
going up as well as trucking
and shipping costs will go up.
Storage fees, retail prices for
both goods and services, will
be going up. Corporate taxes
are going up. Household util-
ity bills will go up. The
amount of time people will
be working per week and
how long they will work
beyond what used to be
called the normal retire-
ment age, will go up too.
The blood pressure of
the general population will
go up as will the weight of
personal debt; that too will
go up in 2014. The amount
of time to secure a good pay-
ing job will go up.
Government debt at all lev-
els will continue to go up.
The national di-vorce rate
will continue to go up. I am
sorry to predict that the sui-
cide rate might also go up.
Crime rates will go up.
Underemployment will go
up. Unemployment will go
up because the federal gov-
ernment doesnt accurately
report the count. The illegal
immigrant population will
continue to go up as the gov-
ernment has done nothing to
stem the tide of border
invaders. The amount of
company pension plan fail-
ures will go up too because
most are grossly underfund-
ed. The same may be said for
local government pension
plans for the same reason.
The amount of people apply-
ing for Social Security will go
up as 10,000 people a day
turn 65 in America. The sale
of drugs necessary to cope
with anxiety and stress will
definitely go up. And life

In 1787, Washington
presided over the Constitu-
tional Convention in
Philadelphia, where the new
Constitution was ratified.
Within two years Washington
was unanimously elected as
the first President of the
United States.
Though the current two-
term limit was not law at the
end of Washingtons second
term, he chose to retire from
the Presidency anyway, leav-
ing office in 1797. He would
retire to his Virginia home at
Mount Vernon, where he still
engaged in various business
dealings. Within three years of
his retirement, however,
Washington would fall ill of a
throat infection that ultimate-
ly took his life on December
14, 1799.
In addition to providing
the inspiration for Presidents
Day, Washingtons legacy is
that of a hero who led an army
of colonists to a victory over a
dominant empire.
The Washington Monu-
ment and Mount Rushmore
are two of the more notable
monuments honoring the first
President of the United States.
In addition, the nations capi-
tal of Washington, D.C. is so
named in honor of George
Washington.

entin, as dis-
cussed in the
first part of this
series, is a unique layer
of the tooth. It is made
up of tiny tubes (denti-
nal tubules) that go
from the inside of the
tooth, the nerve (pulp),
to the outside (enam-
el). It is from these
tubules that the tooth
has sensitivity.
Various stimuli
(sensations) move the
fluid in the tubules
inwardly or outwardly.
The movement of the
dentinal fluid activates
the nerve endings at the
pulp/dentin junction,which
causes the pain. Anything
that increases fluid movement
in the tubules or softens the
dentin increases sensitivity.
Very strong brushing and
gum recession were two rea-
sons for dentin hypersensitivi-
ty. Gum recession can be
caused by over-brushing,
tooth grinding/clenching
(bruxism), and gum disease.
Poor oral hygiene leads to
many problems. The plaque
(bacteria) left around your
teeth from poor oral hygiene
and infrequent dental clean-
ings produces acids, which
cause decay, gum recession,
and dentin hypersensitivity.
Dental erosion can be
caused by diet, medications,
drugs, dry mouth, reflux, or
stomach acids. This
exposes dentin and can
lead to severe tooth
wear when combined
with clenching or
grinding. Read all
labels of food and
drinks for contents of
harmful acids, such as
citric and benzoic
acids. Combing these
with sugar can do irre-
versible damage.
Tooth-whi teni ng
acts by applying hydro-
gen peroxide in over-
the-counter or pre-
scription doses from
your dentist. It pene-
trates the enamel and removes
stains. If the enamel is eroded
or missing,the peroxide can
cause pain. Over tooth-
whitening actually is dehy-
drating (drying out and
removing the fluids in the
tubules) the tooth and can
irreversibly damage the nerve
of the tooth.
This is why I insist on
monitoring all patients who
have their teeth whitened.
There are many products,
especially Colgate ProRelief
toothpaste, and prescription
fluorides that can treat dentin
hypersensitivity.
Part three will deal with
pulp damage to the tooth and
its symptoms, prevention, and
treatment.

Encouraging kids to go
green at a young age can set
them up for a lifetime of mak-
ing decisions with the envi-
ronment in mind. The follow-
ing are just a few ways parents
can impart a sense of responsi-
bility to the environment on
their youngsters.
Lead by example. Many kids
try to mimic their parents
behaviors, and moms and dads
can take advantage of that by
making sure kids see them as
they recycle, conserve water
or make other eco-conscious
choices. If kids want to know
why youre separating trash or
opting for tap water over bot-
tled water, explain to them
the positive impact that such
behaviors can have on the
health of the planet.
Encourage eco-friendly hob-
bies. Todays youngsters have
a host of technology at their
disposal, and parents know
full well that such access can
be both good and bad. While
technology can enhance
learning in the classroom and
beyond, gaming systems and
other electronic devices have
made it easy for kids to forgo
outdoor activities in favor of
more sedentary hobbies.

Getting kids to go
green
contributing to higher rates of
childhood obesity. But they
also can harm the environ-
ment. Gaming systems,
whether played on televisions,
computers or handheld
devices, use a substantial
amount of energy. Parents
who encourage more eco-
friendly activities, such as
reading or playing outside,
can get the best of both
worlds, as kids will be getting
out and about and embracing
activities that dont harm the
planet.
Ride bicycles more often.
Reducing fuel consumption is
one of the most effective ways
to reduce your carbon foot-
print, and even though kids
cant drive, that doesnt mean
they cant pitch in to conserve
fuel. Children who attend
school close to home can ride
their bikes rather than taking
the bus or hitching a ride with
mom or dad. Explain to
youngsters the impact that
such a choice can have on the
environment, and ride bikes
with your kids whenever possi-
ble, be it on trips to the park
or to visit friends and family
members. Many kids love to
ride their bikes, and they
might like it even more if they
understand the positive
impact that such a hobby is
having on their planet.
Teach kids to reuse products.
Waste is a significant environ-
mental issue, but reusing prod-
ucts is a great way to cut back
on waste. Items that would
once be tossed into the trash
after serving their purpose can
be repurposed when tackling
projects around the house, and
kids can get in on the act, too.
Rather than purchasing store-
bought decorations for holi-
days like Halloween or
Chanukah and Christmas,
reuse old products to craft
homemade decorations.
Birthday gifts or items
exchanged during the holidays
can be wrapped in old newspa-
per instead of store-bought
wrapping paper. Many prod-
ucts that would otherwise be
discarded can be reused, and
kids might enjoy finding new
ways to make use of old items.

on American history, so
much so that every year
Americans celebrate
their birth and influence
with Presidents Day.
Washington may
have been the countrys
first president, but
Lincoln is perhaps more
frequently celebrated for
his profound efforts to
abolish slavery. He is best
known for presiding over
the United States during
the Civil War and sign-
ing the Emancipation
Proclamation, which lib-
erated slaves across the
country. While much is
widely known about
Lincoln and his life, there are
some lesser-known tidbits that
only historians or history buffs
seem to know. In honor of his
birthday, here are 13 facts
about the man that arent as
widely known.
1.Towering over others at a
height of 6 feet 4 inches tall,
Lincoln remains the tallest
president to hold office. It is
likely his stature helped to
present an air of
authority during his
presidency.
2.Lincoln had two
romantic interests
before he married
Mary Todd in 1842.
Lincoln was in a rela-
tionship with Ann
Rutledge, who died of
typhoid fever. He also
courted Mary Owens
for some time before
they ended their rela-
tionship.
3.Lincoln was notori-
ously messy. His law
office was often clut-
tered, much to the
chagrin of his partner
William Herndon. It
is said Lincoln kept an
envelope on his desk
marked, When you
cant find it anywhere else,
look into this.
4.Lincoln was the first presi-
dent to be photographed at
his inauguration. His future
assassin, John Wilkes Booth,
can be seen in a photo stand-
ing close to the president.
5.In 1849, Lincoln obtained
Patent No. 6,469 for a device
that was designed to lift and
keep boats afloat when they
passed over a sandbar or
entered shallow water.

Many are resistant to treat-
ment because they equate
depression with weakness or
death. Here are some coping
strategies for you and your
loved one:
1.Recognize that depression is
an illness. Family members
should be aware of the disabil-
ity that depression can cause
and should avoid making
depressed parents or relatives
feel guilty by telling them to
get out more or pull them-
selves up by the bootstraps.
Depression is an illness and
can become quite debilitating
if left untreated.
2.Dont dismiss symptoms. If
your loved one is not eating
for more than a few days, or
loses interest in activities they
used to love for more than
two weeks, it could
be signs of depression.
Unexplained crying, sadness

3.Talk about how they feel.
Instead of plunging directly
into a tough discussion about
treatment, try asking whats
going on. Ive noticed you
havent been sleeping well.

Using gentle probing will not
instantly put the elder on the
defensive.
4.Allow them to remain inde-
pendent. Do not take over
doing tasks for them that they
can do for themselves. Doing
things for a depressed person
only reinforces their percep-
tion that they are worthless
and incapable.
5.Seek professional help. If
they are resistant to help, tell
their doctor your concerns
and behaviors youve noticed.

wning a pet is often a
rewarding responsi-
bility. Pets make for
loyal friends, and for every
late night walk in the cold pet
owners must endure, their pets
repay those gestures in spades.
While the greatest
responsibility pet owners have
to their pets is to ensure their
furry friends live as comfort-
ably and healthily a life as pos-
sible, pet owners also have a
responsibility to the planet.
Eco-conscious pet ownership
can have a positive and sub-
stantial impact on the envi-
ronment, and the following
are a few simple ways for pet
owners to care for their pets
and protect the planet at the
same time.
Say so long to plastic
bags. Picking up pet waste is
arguably the worst part of
owning a pet, and some pet
owners simply want to pick up
the waste without giving it a
second thought. But how pet
owners pick up their pets
waste can impact the environ-
ment. Using plastic grocery
bags leftover from trips to the
store is bad for the planet, as
research has shown that such
bags can take as long as 1,000
years to degrade. That means
that plastic bag full of pet
waste might still be around
come the dawn of the next
millennium. Instead of using
plastic bags to pick up their
pets waste, pet owners can use
biodegradable waste bags
made from materials other
than plastic. Such bags might
not make the task of picking
up pet waste more enjoyable,
but they are certainly more
eco-friendly, taking far less
time to degrade than plastic
bags.
Embrace organic pet
foods. Pet foods have evolved
considerably over the last sev-
eral decades, and pet owners
now have more healthy
options at their disposal.
Organic pet foods make for
healthier alternatives for pets,
eliminating the buildup of
residues of chemical additives,
pesticides, fertilizers and her-
bicides in pets. Such residues
have been shown to have an
adverse effect on pet health.
In addition, a study funded by
the European Union found
that organic fruits and vegeta-
bles have up to 40 percent
more antioxidants than non-
organic alternatives, adding to
the nutritional value of organ-
ic pet foods. Organic pet foods
also are produced without the
use of conventional pesticides
or artificial fertilizers, benefit-
ing the planet as a result.
Before altering their pets
diets, pet owners should con-
sult their veterinarian for
advice and tips on how to
make the transition from tra-
ditional foods to organic alter-
natives as smooth as possible.
Look for products made
from recycled materials. More
and more pet products are
being made from recycled
materials, and pet owners can
encourage manufacturers to
keep that trend going strong
by purchasing such products
whenever the opportunity to
do so presents itself. Leashes,
bowls, toys and scratching
posts for cats are just a
few of the many pet
products made from
recycled materials.
Before buying pet prod-
ucts, pet owners should
read labels to determine
if a given product is
made from recycled
materials.
Clean green. Like their
human counterparts, pets
need to bathe. While they
might not bathe every day like
their owners, pets such as cats
and dogs need to be sham-
pooed and cleaned every so
often. When buying cleaning
products, pet owners should
look for nontoxic products.
Many traditional pet sham-
poos or pet beauty products
are laced with chemicals, and
such ingredients can have an
adverse effect on pet health
while also harming the envi-
ronment. Nontoxic grooming
products can still give pets
coats a beautiful shine, but
they do so without taking a
toll on the planet or the ani-
mals health.
Pet ownership is a signif-
icant responsibility, and pet
owners should recognize that
part of that responsibility
involves caring for their pets
in an eco-friendly way.

Restaurants can cut corners by

Pruess Fiamma: The
Essence of Contemporary
Italian Cooking (Wiley) is a
great place to start.
Tortellini di Coda di Bue
(Oxtail Tortellini)
Makes 6 to 8 servings
2 pounds oxtail pieces or
short ribs, well trimmed and
patted dry with paper towels
Sea salt and freshly ground
black pepper
cup canola or vegetable oil
1 small yellow onion,
chopped
1 small carrot, peeled and
chopped
1 small rib celery, trimmed
and chopped
1-14.5 ounce can peeled
crushed tomatoes, preferably
from the San Marzano region
1 clove garlic, crushed
1 sprig fresh thyme
1 bay leaf
2 cups hearty red wine, such
as Sangiovese or Barbera
2 cups canned low-sodium
stock
cup freshly grated
Parmigiano-Reggiano cheese,
plus cheese for sprinkling
1 large egg, beaten
1 pound store-bought pasta
sheets
2 tablespoons unsalted butter
4 fresh sage leaves

Try your hand at contemporary Italian cuisine
Add the oxtails in a single
layer, always keeping the oil
hot enough to sizzle as the
pieces are added. Brown on
all sides, 15 to 20 minutes,
turning to color evenly.
Remove the pieces with a
slotted spoon and drain in a
colander. Do this in batches,
if necessary, so the pieces are
not crowded.
Meanwhile, preheat the
oven to 400 F.
Discard all but 2 table-
spoons of fat from the pot.
Stir in the onion, carrot and
celery and cook over medi-
um-high heat, stirring con-
stantly, until lightly colored,
5 to 6 minutes. Add the
tomatoes, garlic, thyme, and
bay leaf, stirring to incorpo-
rate all the browned bits in
the pot, and cook for 2 to 3
minutes longer. Pour in the
red wine, bring to a boil, and
cook for 20 minutes or until
the liquid has reduced by
half. Then stir in the stock.
Return the meat to the
pot. Bring the liquid to a sim-
mer, cover, and transfer the
pot to the oven for 1 to 2
hours, or until the meat is
completely tender when
pierced with a fork. With a
slotted spoon, lift the pieces
from the sauce and put them
on a sheet pan to cool.

the pan and set aside. Pour the
remaining sauce through a
fine strainer into a clean pan,
pressing to extract as much
liquid as possible. The sauce
should be thick and rich.
Pick the meat off the
bones, chop into small pieces,
and put in a large bowl.
Combine the meat with the
cheese, add the egg, season
with salt and pepper, and stir
to blend.
Puree the reserved veg-
etables in a food processor and
stir them into the meat mix-
ture. Set aside. If making the
sauce ahead, cover and refrig-
erate for up to 5 days.
On a lightly floured work
surface, use a sharp knife or
pizza cutter and ruler to trim
the sheets of pasta into 6- x
18-inch rectangles. Cut each
rectangle into twelve 3-inch
squares. As you work with one
sheet, cover the remaining
pasta with a clean cloth or
plastic. In the end, you should
have 54 three-inch squares.
Line a baking sheet with
parchment and dust lightly
with cornmeal or flour.
Spoon about teaspoon
of filling in the center of each
square. Mist the pasta lightly
with water, cover with anoth-
er pasta square, and press the
pasta with your fingertips to
seal the filling inside, making
sure to press out all of the air.
Trim the edges with a zigzag
pasta wheel. Transfer to the
baking sheet and set aside in a
cool, dry spot. Once the
tortellini are filled, they may
be refrigerated for up to 1 day
or put them into large reseal-
able plastic bags, squeeze out
the excess air, and freeze
immediately for up to 2 weeks.
Bring a large pot of salted
water to a boil. Stir in the
tortellini. After they rise to
the surface, cook for 1 minute
longer, then remove with a
slotted spoon and transfer to a
large bowl. Drain any water
that accumulates at the bot-
tom of the bowl.
Heat the butter in a large
pot. Add the sage, cook for 1
minute, then add the tortelli-
ni to the pan and toss to coat.
Divide the tortellini evenly
among 8 large plates, drizzle
with the sauce, sprinkle with
additional cheese, and serve.

fourth bowling league of the season
for the Wayne and Passaic-Clifton
areas on February 9. Volunteers
and special needs friends met in
Holiday Bowl and the Van
Houten Lanes for a fun hour of
bowling. This is a great social
event that allows children and
teens of different ages and abilities
to come together and join in a
bond that only the Friendship Cir-
cle can generate. Thank you to all

mo) and her outspoken
granny. We mustnt overlook
the marvelous sea witch, who
is desperate to get her hands
on the mermaids most pre-
cious possession and has
enlisted the help of a pair of
turtle henchmen, two won-
derfully comic inventions.
Creative and colorful
staging, coupled with the
authors unique wit, have put
a contemporary spin on the
Andersen original, removing
the Victorian heaviness with-
out reducing the storys
charm. Both wise and funny
in equal proportions, this new
telling of The Little
Mermaid will appeal to all
audiences.
Performances are weekends
from February 15March 2 at
12pm and 4pm. Ticket prices
are $23.50 for adults and $16
