GENERAL DESCRIPTION 1. The Restaurant manager is responsible for achieving and maintaining GRC standards in all Food & Beverage areas. 2. He / She has to assure the that all Budgets and targets are met in accordance with the Guidelines. 3. Together with Executive Chef he / she is fully responsible for the entire Food delivery. 4. In addition, to ensure that all dietary requests are met and that the needs of the guests are observed in the delivery of the highest possible service. 5. He / She acts as a source of information for the Executive Chef as well as the Cruise manager. 6. The Restaurant Manager needs to be able to handle complaints, difficult situations and should be an avid problem solver within the confines of the department. 7. The restaurant Manager is to make certain that the smooth work-flow of the department is in conjunction with high levels of teamwork with other departments. 8. The RM demonstrates an advanced level of competence regarding HACCP and together with the other HODS ensures that the ship complies with local legislation regarding Public health and safety. RESPONSIBILITIES 1. Controlling the beverage stores, Inventories and distribution there of. 2. Inventory control of crockery, cutlery , glass and other service utensils - Breakages & losses 3. Responsible for keeping to the HACCP guidelines in his departments 4. Must have Knowledge of the F&B guidelines and implement accordingly. 5. Responsible for all Beverage revenues throughout the ship 6. Responsible for implementing the appropriate Revenue generating action plans. 7. Hold monthly job chats with each member of his team and to carry out goal setting. 8. Ensure that all subordinates are properly uniformed at all times and to ensure that they are at the required place of work 5 minutes prior to the commencement of their duty. 9. Weekly trainings for crew (restaurant and bar), incl. forms to be completed accordingly 10. Actively involved in the daily service

ADDITIONAL DUTIES 1. The Restaurant Manager ensures that all restaurant staff are made aware of their duties and also of the House rules, F&b Guidelines & Onboard Guidelines. 2. The Restaurant Manager conducts a performance qualification with his staff twice per season 3. Daily briefing has to be organized with all Bar & Restaurant staff 4. Participation in short daily meeting as well weekly management meetings 5. Participation in every safety training and drill ordered by the Captain 6. Ensuring that those of the team list on the In port Manning list are informed and are at their station. 7. Evaluating the cruise questionnaires with his / her team and subsequently addressing of all adverse comments by compiling an action plan to support any problem arrears outlined in the Questionnaires
