Add mustard seeds. When these begin to crack, add groundnut and channa dal. Mix.
10. Add urad dal after one minute. Fry till dals turn goldenbrown. 11. Add curry leaves and dry chillies. Mix. Switch off the stove. Fry till the curry leaves become crispy. Keep aside to cool. 12. Mix all the powders with the seasoning after the seasoning has cooled completely. Puliyogare instant mix is ready.

If you do not want to add the seasoning again, before or after mixing the rice with the instant puliyogare mix, add 1/2 cup of oil instead of 1/4 cup. This puliyogare instant mix can be stored for about 3 months.

The steps below are for making puliyogare, using cooked rice and instant puliyogare mix. Serve puliyogare with cucumber-tomato raita.
