INTRODUCTION

INTRODUCTION
The ovens of the COLLECTION 38 are complementary ovens independent of one another. Each of them fulfils a well precise mission This is the reason why they exist in three versions : and meets the various culinary needs.

With their new aesthetics, they are totally integrated into the design of the trademark. They are suitable for all the configurations of kitchens through many possibilities of arrangement. They perform all the desired functions thanks to, in particular, the electronics and all the management and measuring systems for the various parameters.

Multifunction Pyrolytic Oven It proposes, within a volume of 32 litres, the same cooking performance (cycloheat, automatic temperature recommendation, three pyrolysis cycles) as a 53-litre oven. It is also fitted with a cool door.

Solo or Combined Microwave Ovens Both propose a better wave distribution thanks to two magnetrons, each with a power of 850 Watt. They have shelves to heat or cook two large dishes simultaneously, and several cooking positions. The Combined Oven combines the rapidity of the cooking in microwave oven with the quality of cooking by forced heat.

Steam oven It is used for preparing courses without spoiling the flavour of the food, by keeping mineral salts and vitamins. It proposes a pre-selection of 8 temperatures and 8 cooking times different in order to precisely adapt the cooking to the nature of the food.

INSTALLATION

2.1. - Building-in
The oven has an optimized air circulation providing remarkable cooking results by complying with the following instructions: The oven can be installed in a column piece of furniture. Cut a 50 mm x 50 mm opening at the rear for the passage of the feeder (see drawing below). Centre the oven in the piece of furniture so as to assure a distance of 2 mm to the nearest piece of furniture. The material of the piece of furniture must be heat resistant. The oven must only be placed in the niche if its electrical power supply is cut. For more stability, secure the oven in the piece of furniture with 2 screws.

INSTALLATION

2.2. - Electrical connection


The electrical connection must be performed by an electrician installer, who shall make sure that the oven has been connected in accordance with the assembly instructions and local regulations. On the oven energization, the electronics is initialized and neutralizes the lighting for a few seconds. In the case of a connection with wall outlet, the latter must remain accessible after the oven has been installed. The manufacturer cannot be held responsible for any accident consequential to nonexistent or incorrect earthing. The oven is delivered together with its 3-conductor feeder. It must be connected to the 220-240 V~ / 50 Hz / single-phase system through a wall outlet with earth connection (standard CEI60083). This connector must remain easily accessible after installation. Respect the colour of wires, knowing that wall outlets are commonly connected in accordance with the diagram below. The conductor cross-sections must be at least 1.5 mm and the installation must be protected by a 16A fuse.

USE
On the energization The display flashes. Set the time with + or (Holding the key enables a fast scrolling to be obtained). Press the Start/Stop key to validate.

3.1. - Setting to time

If there is no validation through Start/Stop key The recording is automatic after a few seconds. Setting to time again Press the "cooking time" and "end of cooking" keys for a few seconds until the display is flashing. Adjust with + or .key Press the "cooking time" to validate.

3.2. - Children's safety


To lock the controls Press the Start/Stop key until you hear a short beep and then a long beep. Release the key only at the end of the beep and when the key appears on the display unit To unlock the controls Press the Start/Stop key until you hear a long beep. Release the key only at the end of the beep and when the key appears on the display unit.

3.3. - Standby mode


In order to limit the power consumption of the oven when not used, you can set the display unit to standby mode. Activation of the standby mode The oven must be in time display mode. Press the + and keys simultaneously for approximately 5 seconds. The display unit shows "Lcd OFF". Release the hold. 30 seconds later, the display unit goes off. Setting back to normal mode Press the + and keys simultaneously for approximately 5 seconds. The display unit shows "Lcd on" Release the hold. The display remains on continuously

Two printed circuit boards and a switch commutator are necessary: A display board It includes a display (112 segments), it is in relation with the switch board (Micro travel switches), which is used for selecting the cooking mode, and a control keyboard (modification to the various possibilities of setting times, temperatures, durations). A power board It includes the power control items (Relay, Triac), interfaces with the external components (Sockets, connectors). It controls the power items through the display board, indicate the oven temperature from the information provided by the probe. It receives the following codes from the display board: The various cooking modes The requested set-points The functions related to the PAD

A switch commutator It includes a pushbutton and eight LEDs. Each actuation of the pushbutton defines the position of a cooking mode. The switch is connected to the display board through a 7-pin sheet.

DESCRIPTION OF THE FUNCTION


The heat source consists of a resistor placed in the oven bottom; the air sucked by a turbine in the centre is re-diffused on the sides. It is not necessary to preheat, except for cooking requiring very short times (cookies on several levels) or to be sealed (roasting beef). The cycloheat is particularly suitable for: - keeping white meat tender - vegetables and fish - for multiple cooking up to 3 levels.

Three heat sources associated: much heat at the bottom to well bake the pastry, a bit of cycloheat for a medium-moist baking, a touch of grill to brown - for quiches, pies, juicy-fruit tarts.

TURBO GRILL

This mode alternately combines the turbine effect and the grill effect: the grill radiates the infrared onto the nutriment and the air movement generated by the turbine attenuates its effect - to seal and medium-cook red and white meats - to gently bake the poultry up to 1.7 kg - is not suitable for very big pieces, which would be too close to the grill: browned on the top, not cooked inside. This mode combines the top and bottom heat sources. It is ideal for slow and delicate cooking. - for tender game - to cook tasty dishes - to bake breads successfully.

NATURAL CONVECTION 1 to 4 DOUBLE GRILL

The double grill covers the entire surface of the grid. As for the simple grill, it will show the same efficiency for smaller quantities IMPORTANT REMARK: Leave the door open in power 4.

DEFROSTING

The defrosting is ensured by the turbine, which stirs the ambient air around the nutriment to be defrosted. The temperature never exceeds 50C, so assuring ideal defrosting. - To defrost meats and poultry, use the grid with the dripping pan underneath or the pastry tray. Never use the defrost juice, it is not drinkable.

4.4. - Operating principle 4.4.1. - Management of the system


Two printed circuit boards are necessary. A display board It includes a display, it is in relation with the switch board (travel micro switch), which is used for selecting the cooking mode, and a control keyboard (ON/OFF and various possibilities of setting, times, temperatures, durations). A power board
It includes the control components (relays, triacs), interfaces with the outside (sockets, connectors) and configuration jumpers. It controls the power components through the display board and assesses the temperature in the centre of the oven from the information provided by the probe.

4.6.4. - The rotating-heat mode


The ventilated element (1500W) is used. The setting-point temperature is comprised between 40C and 250C. The motor fan turns at high speed.

4.6.5. - The combined-heat mode


The sole (1200W), vault (1000W), grill (1650W) and ventilated (1500W) elements are supplied over a cycle of 40 seconds (Ton+ Toff = 40 s). The setting-point temperature is comprised between 40C and 250C.

4.6.6. - The Turbo Grill mode


The grill (1650w) and vault (1000w) elements are used. The setting-point temperature is comprised between 40C and 250C.

4.6.7. - The Defrost mode


The ventilated element (1500W) is used. The setting-point temperature is comprised between 30C and 50C. The motor fan turns at high speed.

4.7. - The pyrolysis


The pyrolytic cleaning is performed by slow combustion of the dirt deposited on the oven walls. So, the dirt changes from liquid or solid state to gaseous state by oxidation. This gas is then purified by absorption through a catalyser from which it goes out in the form of CO2 and HO2 . The optimal efficiency of the pyrolysis is between 460C and 490C approximately, for an hour at these temperatures (see curve opposite). Beyond, the enamel might be damaged (515C max). The oven programming proposes 3 cycles of pyrolytic cleaning. An economical cycle that lasts 1h 30'. The oven is locked for approximately 2 hours (cooling time) This cycle consumes almost 25% less than the normal cycle. A normal cycle normal that lasts 1h 45'. The oven is locked for 2h 15'. This cycle will always perform efficient cleaning of a dirty oven. A super cleaning cycle that lasts 2h. The oven is hen locked for 2h 30'. This cycle will always perform efficient cleaning of a very dirty oven.

The average cost in electricity (peak rate) of a pyrolysis does not exceed the price of post stamp (0.48). Using the deferred start enables you to benefit from the off-peak rate.

4.7.1. - Study of the pyrolysis


Heating elements are supplied over a cycle of 30 seconds (Ton+ Toff = 30 s). For safety reasons, the door is locked automatically after two minutes. The door remains locked for 2 to 2h 30'. The pyrolysis consists of 6 phases Phase 1 The grill element is supplied (30/30). The changeover to phase 2 is effective after 24 minutes or if the temperature is 275C. Phase 2 The Grill (30/30), vault (10/30 + regulation) and sole (4/30) elements are supplied. The duration of phase 2 is 18 minutes. The temperature is approximately 420C at the end of phase. Phase 3 The Grill (30/30), vault (10/30 + regulation) and sole (13/30) elements are supplied. The duration of phase 3 is 20 minutes. The temperature is approximately 475C at the end of phase. Phase 4 The Grill (25/30 + regulation), vault (30/30 + regulation) and sole (3/30 + regulation) elements are supplied. The duration of phase 4 is 28 minutes. The temperature is approximately 492C at the end of phase. Phase 5 The Grill (25/30 + regulation), vault (30/30 + regulation) and sole (3/30 + regulation) elements are supplied. The temperature set-point is 492C. The duration of phase 5 is: 0 minute for the Eco cycle, which lasts 1h 30' 15 minutes for the Normal cycle, which lasts 1h 45' 30 minutes for the Super cycle, which lasts 2 hours Phase 6 All the heating elements are de-energized.

4.9. - Study of the locking


During the pyrolysis and in order to prevent self-ignition of greases in case of oven opening, a door locking occurs (4 attempts: 5 min, 10 min, 15 min, probe 285C). For this purpose, the oven is fitted with a bistable system activated by a wax actuator. Two contacts record door open and door locked information. Unlocking only occurs when appliance temperature falls below 300C.

4.10. - Operation of the locking


The locking Supply to the thermal activator. The lock slide moves forward, the contact is actuated. The supply to thermal activator is cut 15 seconds after contact closing. The unlocking Supply to the thermal activator for 90 seconds. The thermal activator slightly pushes the slide forward. The locking hook is tilted. On cooling down, the thermal activator returns to initial position. The slide is retracted. The contact opens The door is unlocked.

4.11. - Manual unlocking


In event of blocking, it is possible to manually unlock the lock. The technique consists in gently inserting into the small hole located behind the strip, a specific tool or a thin rod to act on the locking hook. To unlock, it is necessary to: Remove the block of keys. Remove the decorated strip. if impossible to remove the strip, disassemble the top of the oven. Press the clips at the rear of the strip (see sketch). After removing the decorated strip. Gently insert the tool into the hole (see sketch) to act on the locking hook.

Function
The tangential fan motor is controlled by triac (TC4). It cools the oven, the electronic components, and reduces the door overheating. Two different speeds: High speed for temperature higher than 300C. Low speed for temperature lower than 300C. The tangential fan is stopped when the temperature in the oven centre is lower than 120C.

5.4. - Operating principle


The water contained in a removable reservoir is brought by a solenoid valve to a heat source (generator) where it is transformed into steam. The so-obtained steam is held in the stainless steel cavity of the oven by a flap closing as soon as the cooking begins. This flap includes several holes in order to prevent the cavity pressurization. This cooking principle cannot, therefore, be compared to that of a pressure cooker, where the pressure obtained is greater than the atmospheric pressure. In a first time, the oven will be saturated with steam and the temperature will be close to 100C. In order to prevent the formation of condensation, a heating sheet that covers the top of the oven will be supplied throughout the cooking. A tangential fan provides constant cooling of the oven throughout the cooking, and steam extraction when the flap opens three minutes before the end of the cycle. A safety thermostat with automatic reset (210C) protects the oven in the event of overheating. Two probes located in the cavity and near the generator provide the temperature control for the various cooking modes.

5.5. - Study of the cooking


The cooking is broken down into 5 phases Water saturation of air and temperature rise (phase 1) From the cooking start, the solenoid valve is supplied between 15 and 30 seconds, depending on the desired temperature. Energization of the tangential fan, generator, heating sheet and thermal activator. The steam generation is important in order to rapidly obtain the saturation in the cavity. The generator temperature is controlled by the probe. Water return (15 to 30 sec.) onto the generator as soon as its temperature exceeds 130C. The heating sheet is supplied to prevent condensation, and the tangential fan operates to limit the abnormal heating of the oven and electronics. When the set-point temperature is reached in the cavity, the generator is no longer heated. Steam and temperature hold (phase 2) Regulation of the heating between two values of set-points measured in the cavity, by activating the generator or not. The thermal activator, heating sheet and tangential fan are held energized. Steam evacuation and temperature fall (phase 3) Three minutes before the end of cooking, the thermal activator and the solenoid valve are no longer supplied. The flap opens, the air flow generated by the tangential fan pushes the steam out of the cavity, so preventing any significant release of steam on door opening. The heating sheet is supplied. Keeping warm (phase 4) This phase only occurs if the door remains closed after the end of cooking. This phase is used for keeping the food warm. The tangential fan and the heating sheet are still supplied. Keeping warm (one hour maximum) is interrupted by the door opening. Cavity drying (phase 5) This phase starts from the door opening, at the end of cooking or in phase 3 or 4 and continues even if you close the door. The tangential fan and the heating sheet are supplied, the air flow carries on pushing the steam out of the cavity, and the heating sheet is operating. This phase lasts 3 minutes.

Operating principle:
The generator probe detects abnormally high temperature (180C). Power supply to the generator and solenoid valve cut + alarm display.

"Reservoir empty flashing + alarm beep"

Open the oven door and refill the reservoir with water, and then close the door again. Cooking restarts immediately, the beep stops. Power supply to solenoid valve for 30 seconds if cooking at 100C or 15 seconds if defrosting. Generator temperature measurement 30 seconds after door closing. It must be < 180C, else the oven is secured again. The generator is energized again when the oven temperature is 150C.

During the oven securing, the cooking time remains fixed. The "alarm beep" stops, long actuation of the STOP key.

The cycloheat is particularly suitable for: - keeping white meat tender - vegetables and fish. This mode alternately combines the turbine effect and the grill effect: the grill radiates the infrared onto the nutriment and the air movement generated by the turbine attenuates its effect. This function allows to grill or roast without roasting spit.

6.4. - Operating principle 6.4.1. - Management of the system


Two printed circuit boards are necessary A display board It includes a display, it is in relation with the switch board (travel micro switch), which is used for selecting the cooking mode, and a control keyboard (Start/Stop and various possibilities of setting, times, temperatures, durations). A power board
It includes the control components (relays, triacs), interfaces with the outside (sockets, connectors) and configuration jumpers. It controls the power components through the display board and assesses the temperature in the centre of the oven from the information provided by the probe.

Formation technique

6.5. - The cooling system


A shutter, located over the cavity behind the strip, and operated by a thermal activator, is used for directing the air flow from the tangential fans to the oven inside or directly to the outside via the control panel. The thermal activator is activated during microwave functions alone and grill alone. The door remains transparent (no condensation).

Photo 2 : The thermal activator is not energized. The shutter remains horizontal : Flows 1 and 2 from the larger tangential fan are directed to the oven outside, cool the right magnetron and suck the vapours. Flow 3 from the smaller tangential fan cools the left magntron.

6.6. - Management of the magnetrons


Each magnetron is controlled by parallel-mounted relay and triac. The triac is used for controlling the magnetron cut-off at zero voltage. It is also used for supplying the magnetron at a preset instant, unlike the relay, where the switching time is not precise. Magnetron supply principle Primary : 220/240V~ 50Hz 5A (2.2W)

6.7. - The various cooking modes 6.7.1. - The microwave mode


The two magnetrons are piloted. The power set-point is comprised between 100W and 1000W. As a general rule, durations D1 and D2 are equal, in order to emit the same power on both magnetrons. On D1 T1 on Off T1 off D2 T2 on Duration of a cycle = 30 seconds

The power set-point (1000W at a maximum) and the operating time (59 min - 59 s maximum) are transmitted by the display board. The 50W minimum power corresponds to a step of 1.5 seconds. The stirrer, both tangential fans and the thermal activator operate throughout the cycle.

6.7.2. - The grill mode


The control of the element is computed on a basis of 30 seconds. The operating time of the grill element depends on the temperature set-point transmitted by Set-point Temperature Time the display board. Both tangential fans and the thermal activator operate throughout the cycle.

6.7.3. - The turbo grill mode


The control of the element is computed on a basis of 30 seconds. The operating time of the grill element depends on the temperature set-point transmitted by the display board.

6.7.4. - The defrosting mode


The defrosting time selected by the consumer is transmitted by the display board to the power board.

The stirrer, both tangential fans and the thermal activator operate throughout the cycle.

6.7.5. - The cycloheat mode


The ventilated element (1500W) and the motor fan are appealed to. The set-point temperature is comprised between 40C and 250C (in 5C steps). Both tangential fans operate throughout the cycle.

6.7.6. - The keeping warm mode


This mode is strictly identical with the cycloheat mode with a 35C set-point.

6.7.7. - The grill and microwave mode


The grill mode is actuated simultaneously with the microwave mode. The operating time (59 min - 59 s maximum) is transmitted by the display mode. The stirrer and both tangential fans operate throughout the cycle. The thermal activator is out of circuit.

6.8. - The various components

Function
2 relays : Relay (REL6) controls the right-hand transformer (TR2) Relay (REL3) controls the left-hand transformer (TR1) A 230V~ is delivered to the primary winding of the high-voltage transformer. Two voltages are generated: 3.1V~ in LV, which are applied to the magnetron terminals ensure the filament heating. 2110V~ in HV, which are applied to the voltage doubler and the magnetron. An end of this winding and the magnetron anode are connected to the oven earth. The voltage doubler transforms the 2110V~ voltage into pulsed negative voltage of approximately 4000V~. It consists of two elements: A condenser, which stores the electrical energy during a half-period. A diode, which, associated with the au condenser, converts the alternating High Voltage into a negative voltage. It is mounted reciprocal of the magnetron anodic current.

Magnetron

This is an oscillator emitting electromagnetic energy at 2450MHz frequency. A thermal safety device (KX2) with automatic reset, attached to the magnetron, cuts at 120C the power supply to both transformers in event of magnetron overheating. The power of each magnetron is limited to 500W.

PRECAUTIONS TO BE TAKEN BEFORE ANY ACTION Microwave ovens have circuits that can generate very HIGH VOLTAGES and currents. Before any action, it is imperative to disconnect the feeder.

IT IS FORBIDDEN TO MEASURE THE HIGH VOLTAGE. IT IS ALSO FORBIDDEN TO MEASURE THE VOLTAGE NECESSARY FOR THE MAGNETRON FILAMENT.

Probe

P.T.C - 540 at ambient temperature (20C) - 690 at 100C The probe informs the electronics on the - 880 at 200C oven temperature.

The hybrid power board includes: A microprocessor Power control items (relays, triacs) Configuration jumpers Connectors and terminals. It pilots the power items under control of the display board and monitors, through probe PT500, the temperature in the oven centre. The display board includes: A microprocessor A display unit, 7 pushbuttons and a buzzer Connectors. It is linked to a keyboard board that is used for selecting the various cooking modes. 6.13.2. - Preliminary conditions


Check that the time colon is flashing NO: Disconnect the oven and connect it again. On the oven energization, the time display is flashing at 12:00. YES: Set the time to 12:00. Set the clock to 12:00 By pressing keys 5 and 6 simultaneously for a few seconds and then adjusting the time with keys 2 and 3.

6.13.3. - Progress of the program of aid to diagnostic


You have one minute to access the program of aid to diagnostic. If the minute has elapsed, set the clock back to 12:00. After step 1, an actuation of the START/STOP key or no action for three minutes results in exiting the program of aid to diagnostic.

6.15. - The DEMO mode


The DEMO mode remains active even after a mains cut.
It is saved in E2PROM.

To enter the DEMO mode Set the time to 12H10 with + or (See page 9). Long and simultaneous actuation of Start/Stop and C keys to validate. Periodical display of DEMO on the display unit. You can choose the cooking mode you wish, no power element will be supplied, except the lamp. Set the time to 12H10 with + or (See page 9). Long and simultaneous actuation of Start/Stop and C keys to validate. The DEMO display disappears.
