THE IPPUDO STORY


IPPUDO was founded in 1985 in Japans ramen capital of Hakata by Shigemi Kawahara, the internationally renowned Ramen King and CEO of Chikaranomoto Company, which encompasses some of Japans finest restaurants. There are over 65 stores in Japan, and globally in places such as New York, Sydney, Hong Kong, Singapore, Taipei, Seoul, Shanghai, Guangzhou and Kuala Lumpur. IPPUDO has become the most popular ramen restaurant over the years. Kawahara was crowned Ramen King in 2005 and holds a place in the Ramen Hall of Fame after winning the championship 3 times consecutively between 1995-1998, on TV Champion Ramen Chef, a reputable Japanese television show produced by TV Tokyo.

SHIGEMI KAWAHARA, often dubbed the Ramen King, is the founder of IPPUDO and a charismatic entertainer in the kitchen. He sees the restaurant as a stage where each employee plays a role like an actor. From cooking to serving, every move is choreographed to perfect timing, even down to the moment when the staff bids a customer goodbye. When Shigemi Kawahara started IPPUDO in 1985, he also created his very own Tao, or way, of ramen. His philosophy to continuously innovate to remain true is to keep reinventing in the kitchen; redefining recipes for a dish that emerged over 300 years ago. Kawaharas reinvention of the Hakata-style tonkotsu (pork-based) ramen with its signature delicate, creamy broth, earned IPPUDO its global acclaim.

IPPUDO opened its first international outlet in New York, it has expanded quickly to cities across the globe. Currently it operates in Singapore (2009), Seoul (2011), Hong Kong (2011), Taipei (2012), Shanghai (2012, Sydney (2012), Kuala Lumpur (2013) and Guangzhou (2013), with plans for further expansion. Everywhere we expand, the mission remains the same:

Ramen has become soul food in Japan, with wide varieties and easy availability. In the international scene, nonetheless, it remains best known through its industrial version: instant noodles. Hakata, another name for Fukuoka city in south of Japan, is best known for its Tonkotsu-based ramen, made from pork bones and simmered for many hours. Its creamy texture and white colour exemplifies deep yet light flavors of pork. Ultra-thin noodles were invented to cater to the Hakata crowd, who demands quick service. IPPUDO noodles are the work of a craftsman, offering both a springy texture and deep flavors. These noodles are quintessential IPPUDO, boiled to al dente, exuding the vibrant natural aroma and taste of wheat with each bite.

Following IPPUDOs secret recipe, only rigorously selected ingredients go through the innovative processes of creating the Tonkotsu broth, refined over the years. It takes more than 15 hours to extract the essence and to achieve perfect emulsion.
