Ingredients
cup margarine (or butter) (60 mL, 57 g)
1 cup white sugar (250 mL, 200 g)
2 eggs
3 medium bananas, very ripe (approx. 350-375 g)
1 teaspoon baking soda (5 mL)
1 cups our (use spoon + level method) (210 g)

This recipe makes one loaf (about 8-12 slices),
or 12 medium mufns

Cooking time: 50-60 minutes
for loaf / 20-25 for mufns
Required supplies
no-stick spray, such as Pam
rectangular loaf pan, glass or metal, with
measurements of approximately 8.5 x 4.5 (1.5 Qt/
1.5 Litre) OR a 12-spot mufn tin
medium bowl
hand-held electric mixer with two beaters
rubber spatula

Start with bananas that are quite ripe. In fact, the
skins can be almost black. You can store them in
the freezer until you have enough to make this
recipe.
Preheat your oven to 350F (180C / gas mark 4).
Peel the bananas and break into large pieces, put
in a medium-sized bowl.
With an electric mixer, beat the bananas until
theyre completely smooshed. You could also
do this by hand if you have patience, a potato
masher, and big muscles.
The margarine should be soft but not liquid. If
youre starting with it hard from the fridge, then
you can microwave at low power in 10 second
increments until it is soft to the touch.
You want the margarine to hold its shape, but
still indent slightly when you push a bit with your
nger.
Add the margarine and the sugar to the bananas
and beat until well mixed.

Add the two eggs, and mix them in well.
Add the our and the baking soda. Be careful
when you add the baking soda sprinkle it
around the bowl rather than plopping it in as one
big lump. Baking soda is bitter and you want to
ensure its mixed in well.
Using the electric mixer, beat for about a minute
until all the ingredients are well mixed and you
dont see any lumps of our or baking soda. (A
few lumps of banana are ne but you probably
wont have any.)
If youre making a loaf, spray your pan with no-
stick spray, or lightly grease with margarine.
Using the spatula, scrape the batter into the pan.
Smooth out the top and wipe off any drips or
theyll burn.
Bake in a 350F (180C / gas mark 4) oven for
50-60 minutes, or until brown on top and cooked
inside. You can check for doneness with a wooden
skewer, a toothpick, or a thin knife. A few crumbs
are OK, but you shouldnt see any uncooked batter
when you remove the tester. Once cooled,the loaf
can be wrapped and frozen for up to 6 months.

If youd like to make mufns instead, after step
#8, grease a 12-spot mufn tin with no-stick spray
or with margarine. Be sure to grease well, or the
mufns will stick.
Using a spatula, scoop out small amounts of
batter into each mufn cup. If you put too much
in one, you can use a spoon and redistribute the
batter until all 12 are approximately even.
Bake for 22-25 minutes or until golden brown on
top.
The mufns should feel springy to the touch and
not like jello (which would mean theres still
uncooked batter inside). The mufns may crack
on top, which is ne. A tester inserted may bring
out a few moist crumbs. These mufns freeze
well.

3 medium bananas, very ripe (approx.

1 teaspoon baking soda (5 mL)

Preheat oven to 350F (180C / gas mark 4).
Peel ripe bananas and place in medium bowl.
Beat with electric mixer until completely
smooshed.
Soften margarine in microwave at low power
in 10 second increments until soft to touch.
(Or you can soften at room temperature for
45-95 minutes.)
Add margarine to bananas and beat until
mixed. Add sugar and continue to beat
until well blended. Add eggs and mix.
Add our and baking soda. Beat for about
a minute until ingredients are well mixed.
Spray pan with no-stick spray, scrape
batter into pan. Smooth out top and wipe
off any drips.
Bake at 350F (180C / gas mark 4) oven
for 50-60 minutes, or until brown on
top and cooked inside. You can check
for doneness with a wooden skewer, a
toothpick, or a thin knife. A few crumbs are
