-amylase To produce maltodextrins. Maltodextrins serve as thickening agents and additives able to promote drying of hygroscopic food components, glue and stabilizers To bind food additives-food additives easily volatile, so maltodextrins will avoid the volatility of the food additives. -amylase In the production of high-maltose syrup >> starch is liquefied, and then treated with amylase. Maltose syrup is used in confectionery/baked goods, soft drink, sauces, jam, brewing etc. Maltose can be converted to maltitol, a sweetener (90% sweetness of sucrose) and isomaltitol by reduction.

3. Glucoamylase / Amyloglucosidase Production of high-glucose syrups. Glucose syrup can be used as substrate in fermentation, used in caramel production, baked goods, production of high fructose syrup used for saccharification of liquid starch in the preparation of amylaceous hydrolysates and of crystal glucose, in the brewing of beer with low dextrine content, in the production of bread and juices Glucoamylase is an important industrial enzyme that is used by the manufacturers of high fructose corn syrup (HFCS). More than half of all commercial baked goods and practically all soft drink bottlers use this syrup instead of sugar because HFCS is both sweeter and cheaper. Glucoamylase catalyzes the breakdown of malto-oligosaccharides to glucose. 4. Pullulanase used in some industries like glucose and maltose syrup production, baking and cyclodextrin production use in production of sweeteners and ethanol from starch used as a detergent in biotechnology. Pullulanase is a specific kind of glucanase, an amylolytic exoenzyme, that degrades pullulan. It is produced as an extracellular, cell surface-anchored lipoprotein by Gramnegative bacteria of the genus Klebsiella. Type I pullulanases specifically attack a-1,6 linkages, while type II pullulanases are also able to hydrolyse a-1,4 linkages. It is also produced by some other bacteria and archaea.

5. Cyclodextrin Glucosyltransferase Pharmaceutical - drug release Environmental protection: immobilise toxic compounds trichloroethane or heavy metals. Food industry - preparation of cholesterol-free products: the bulky and hydrophobic cholesterol molecule is easily lodged inside cyclodextrin rings that are then removed. It also stabilizes volatile or unstable compounds and the reduction of unwanted tastes and odour. Cosmetic applications as emulsifier

6. -glucanase useful in industrial and agricultural processing applications due to its high degree of stability helps break down beta-linked glucose polymers often associated with grains, such as barley, oats and wheat, and other products, including soy bean meal and locust bean gum.
