Job Description :

 Performing and Conducting Humane Slaughter (Animal Welfare Act)


 Restraining animal effectively and safely with minimum stress to animal prior to stun.
 Checking, operating and maintain stunning and shackling equipment according to workplace
requirements.
 Performing corrective action immediately if animals are in effectively stunned.
 Maintaining, cleaning, sterilizing, and handling knives safety and hygienically.
 Checking / operating and maintain scalding / de hairing equipment singeing scraping body and
cutting chest bone according to workplace requirements.
 Checking temperature of water inside the scalding vat at the ideal temperature of 58 degrees
celsius to 65 degrees celsius.
 Cleaning and maintain sticking and blood collection equipment (plastic pail)
 Eviscerate animal / carcass and removing internal organs and separate red and white offals for
inspection procedures.
 Performing secure sealing procedures to avoid fouling the carcass
 Applying corrective action in the event of contamination.
 Splitting and quartering carcass by using splitting saw or Band/ circular saw to facilitate storage
and transport.
 Grading, Labeling, Branding and Stamping carcasses to ensure quality assurance by meat grading
parameters (Visual Inspection, Meat color, Thickness of back fat, PH) PIG and CATTLE
 Weighing carcass to determine the dressed weight thru a log book or standard company form
 Calibrating weighing scale, Recording and reporting weigh information
 Chilling Carcasses in the chilling room at the ideal temperature of 0 degree Celsius to 4.9 degrees
celciusto prevent or to control multiplying bacteria for safety and quality meat to fit for human

Job Description:
