Factors influencing starch digestion include amylases, food amylas e inhibitors, gastric and intestinal motility, the enzymatic (proteases) and aci dity environment of the intestinal lumen, the source of starch, and the degree a nd type of its modification and processing. Methods useful in measuring starch d igestion in vivo include perfusion, radiolabeled tracers, and uptake studies. CC: Q500 AB: Abstract: The taste for sweetness is a universal craving; the search for an appropriate replacement for sucrose has been long term. The banning of cyclamat es seriously hampered the search. Most substitutes for sucrose are intensely swe et when compared to sucrose and suffer from 1 or more disadvantages: low solubil ity in water; slow onset time which provides a lingering aftertaste; expensive; and limited stability. Physiological and toxicological data is forthcoming. One major reason for lack of a suitable substitute is lack of understanding of the m echanism of taste and the taste-structure relationship. One theory involves a hy drogen bonding hypothesis which seems to explain the intense sweetness of comple x molecules. All sweet molecules possess specific conformational and spatial req uirements but these arrangements can be found in non-sweet molecules too. Much r esearch remains to be done. (kbc). Although pricing strategies based on quantitative formulas are freque ntly found in food service literature, these are used (if at all) only as an app roximate price. A pricing study confirmed that restaurateurs are convinced that psychological pricing stimulates sales. Other magic number strategies emphasize the first figure, the length of the price (number of digits), and price rounding . Sucrose consumption is difficult to estimate because the s ucrose content of foods is not completely known. The use of sucrose as a fortifi cation vehicle, as well as individual differences in taste sensitivity to sucros e are discussed. Recent attention has focused on the role of sucrose consumption in dental caries, coronary heart disease, diabetes mellitus, obesity, malabsorp tion syndromes, ulcers, cancer and hypoglycemia. The Senate Select Committee on Nutrition and the U.S. Dietary Goals recommend a decrease in sucrose consumption by Americans; current attitudes towards restriction of sugar intakes are examin ed in light of the controversial nature of dietary recommendations. CC: 2015 AB: Abstract: The chemistry of nitrite, the properties of meat, and the curing process are covered in this review of the reactions of nitrite in meat. The salt s of nitrite are soluble in water and very reactive. Meat contains an enormous v ariety of chemicals and these chemicals are contained in a complicated morpholog ical muscle structure. When nitrite is added to meat for curing, less than 50% o f that added can be analyzed chemically after completion of processing. Nitrite reacts with the myoglobin to form the cured meat color. Nitrite also reacts with the proteins, lipids and carbohydrates in the meat or its additives. Before hea ting, some of the nitrite of cured beef often turns into nitrate, in some cases up to 40%. Research is being conducted to block the formation of nitrosamines in cured meat.
