Agarase and Agarose

Agarose
Agarose is the principal neutral gelling component of agar extracted from algae. Agarose is a complex range of polysaccharide chains composed of alternating -(1-3)-D-galactosyl--(1-4)-anhydro-L-galactosyl units.1

Agarase

Alginate Lyase and Alginic Acid

Composed of blocks of -D-(1-4) mannuronic acid homopolymeric regions (MMMM), -L-(1-4)guluronic acid (GGGG) homopolymeric regions, and alternating copolymer regions of -D-(1-4) mannuronic acid - -L-(1-4)-guluronic acid (GMGMGM). Bacterial alginic acid can be acetlylated at the 2 or 3 positions on mannuronic acid.

Alginate Lyase

Amylases, -Glucosidase, Starches (Amylose and Amylopectin) and Glycogen

Polymers of -(1-4)-D-glycopyranosyl units. Amylopectin has approximately 4% -(1-6)-D-glycopyranosyl branching. Glycogen tends to have a higher frequency of branches of shorter length than amylopectin.

Amyloglucosidase

Repeating linear polymer of two -(1-4)-D-glycopyranosyl and one -(1-3)-D-glycopyranosyl unit.

Polymer of -(1-4)-D-glycopyranosyl units occurring as predominantly as cellotriose and cellotetraose separated by single -(1-3)-D-glycopyranosyl units. Cross-linking can occur within the consecutive cellotriose regions.
