Breakfast
Soft "boiled" eggs
1 egg per person sheet of aluminum foil Punch a tiny hole (with a straight pin) in the small end of each egg. Wrap individually and place in coals, large end down, for 3 minutes.
Breakfast in an Orange
One orange One piece of pre-cooked bacon Two eggs salt and pepper to taste
Trim top 1/4 inch off oranges and save**. Scoop out the middle. You should have an orange cup left. Keep the top-it's your lid! Place a piece of bacon in the bottom of the orange. Break both eggs and pour in on top of the bacon. Scramble slightly with a fork and put the top back on. Wrap in foil and place on glowing coals. Cook 15 to 20 minutes or until done. Eat out of the orange shell. (**Use the pulp of the orange and put in small zip bag. Squeeze it to make juice. Cut a small hole in the corner and drink the juice.)
Aluminum Eggs
Sausage (heat & serve or pre-cooked) Egg Hash brown potatoes Salt, pepper and spices to taste
Place potatoes, scrambled egg (doesn't need to be cooked) sausage patty and spices in foil. Wrap securely. Place on coals for 15 minutes.
Orange Muffins
4 large oranges 1 tablespoon sugar 1 cup Bisquick 1/2 cup milk
Trim top 1/4 inch off oranges and save**. Scoop out the middle. You should have an orange cup left. Keep the top-it's your lid! In a bowl, mix the Bisquick, sugar and milk. Spoon the batter into the empty orange shells about halfway filling them. Cover the opening with the top that you cut off and cover the whole thing tightly with foil. Bury in the coals until set - around 60 - 70 minutes. Unwrap and let cool some. Be careful they are hot (**Use the pulp of the orange and put in small zip bag. Squeeze it to make juice. Cut a small hole in the corner and drink the juice.)
Lunch
Bunsteads
1 (7-oz) can chicken or tuna 1 sm. onion chopped cup mayonnaise or salad dressing 1 cup chopped celery cup grated cheese
Mix ingredient and put into 8 buns, wrap and heat in coals 30 min. Turn occasionally.
Turkey Burritos
4 (8) tortillas 1 can (9oz) bean dip c chopped onion Sour cream pound ground turkey (precooked) 1 c shredded cheddar cheese c salsa (optional) chopped cilantro
Place one tortilla on each sheet of foil. Combine turkey, bean dip, cheese, onion and salsa. Spoon mixture onto tortillas, wrap filling in each tortilla, burrito-style; place seam-side down. Wrap in foil and place on coals for 20 minutes. Serve with sour cream and cilantro.
Tuna Melt
1 (12oz) can tuna in water (drained) 2 c cooked rice c mayonnaise 1 tbs lemon pepper 1 c shredded cheddar cheese 1 c frozen baby green peas 4 (10) flour tortillas
Spray foil with nonstick cooking spray. Combine tuna, rice, peas, mayonnaise, 1 cup cheese and lemon pepper. Spoon one-fourth of mixture in center of each tortilla. Fold bottom edge of each tortilla up and over filling, just until covered. Fold in opposite sides. Roll up, tucking in sides. Place one tuna wrap, seam side down, on each sheet of foil and wrap. Place in hot coals for 18 to 22 minutes. Open and sprinkle remaining cheese on top.
Combine chicken, celery, olives, cheese, mayonnaise, onion flakes. Spread on hamburger buns. Wrap in double heavy foil and heat over coals 15-20 min. (serves 3-4)
Mountain Melts
Rolls (any kind) Cheese (sliced) Meat (thinly sliced) Mustard
Cut and butter rolls. Fill to taste with cheese, meat, and mustard. Wrap each roll in foil. Place rolls on the edge of the coals or on grill above the coals for about 1/2 to 1 hour.
Pigs-in-a-blanket
Cocktail wieners Canned biscuits
Separate each biscuit into halves. Flatten each half until you have flattened all biscuits in the can. (20 halves) Wrap half biscuit around the wiener and then put about 5 of them in a piece of Pam sprayed foil and seal. Place on hot coals for about 5-10 min. After about 5 min check to make sure they are done. Cooking time will depend on how much biscuit dough is around the wieners.
Pocket Pizza
1 pocket pita per person 2 Tbs pizza sauce Toppings of choice: mozzarella cheese, cooked sausage, pepperoni, diced onions, green peppers, black olives, or whatever you decide. Cut pita in half of make 2 half-circle pockets. Spread pizza sauce on both insides. Add toppings and stir around to mix in the cheese. Do the other half. Put pita halves together in the center of the foil, and seal the edges. (Be sure to mark names on the outside). Place in low coals about 15 minutes to heat. Turn often to avoid the bread browning. Open carefully and eat like a sandwich.
Dinner
Hamburger Casserole
1 potato and 1 carrot Margarine, salt and pepper 2 onion slices 1 hamburger patty (pre-cooked)
Place hamburger patty down on a doubled piece of foil. Put carrots over hamburger on one side and thinly sliced potato on the other. Put onion over all. Dot with margarine and sprinkle with salt and pepper, if desired. Seal tightly. Cook in coals 25-30 minutes, turning often. This is also very good made chicken or even a ham slice. Vary the vegetables to suit your taste or to take advantage of what you have available or what is in season. Use 2 spoonfuls of canned cream soups (cream of mushroom, celery, chicken etc.) make great gravy right out of the can - just put a couple of spoonfuls on your foil dinner before you seal it up - the juices from your meat and vegetables will mix with it making a delicious gravy. Uncooked instant rice can be stirred into the cream soup and be used in place of the potato in the recipe.
HAWAIIAN DELIGHT
Sliced ham Carrots Sweet potatoes Pineapple
Surround the ham slices with the other ingredients on the foil. Then add 1 tablespoon of syrup or honey. Wrap to hold in the juice. Cook package on hot coals for approximately 15 minutes on each side.
Warm tortillas. Spread 1/4 of beans in center of each tortilla. Top each with remaining ingredients. Wrap filling in tortillas burrito-style. Center burritos, seam-side-down on foil sheets and wrap. Place foil packets on 4 to 6 inches from medium-hot coals. Grill, turning once half way through cooking, until heated through and cheese is melted, 12 to 16 minutes.
In the center spread a little bit of the butter. Place the pineapple rings on the foil and then cover with some of the brown sugar. Cover with the ham. This doesn't have to cook very long maybe 10 - 15 minutes, long enough to get the ham hot. To fancy it up, place a maraschino cherry in the middle of the ring after you uncover it.
Side dishes/Veggies
French Fries
Place frozen French fries on foil. Add salt and pat of butter. Wrap loosely and cook on coals 30 minutes. Turn occasionally.
Scrub and cut potatoes into thick slices. Use one potato per person. Do not peel the potatoes. Place each one on a double sheet of heavy foil. Add 1 T. margarine. Sprinkle with garlic, onion salt and pepper. Seal and bake 15-20 minutes on coals.
With a little oil, lay the potatoes on the foil, distributing the slices evenly, and season with a little salt, pepper, and paprika. Scatter the bacon and onion rings evenly over the potatoes; sprinkle the butter pieces on top. Fold in foil. Cook the cheese potatoes in the coals for 50 minutes, turning the parcel repeatedly. You can use dried diced onions and dried bacon, but add a few tbs. (4-6) water. When hot, open and add the cheese.
Foiled Onions
Large onion Bacon (cooked and broken into small pieces) margarine salt & pepper
Peel a large onion and cut in half. Place a pat of margarine on the cut side and sprinkle with salt and pepper. Top with a half strip of bacon on each half onion. Wrap each in double heavy foil and seal tightly. Bake on coals 35-45 minutes. (1 onion for 2 persons)
Scrub potatoes and cut into quarters, keeping skins on. Boil until tender, and coat them with the dressing that you can prepare in advance. Wrap the potato quarters in tin foil, and place on coal to brown. Delicious with meat or fish.
Place two sheets of foil (14" sq.) on top of each other in a cooking pot. Press into a bowl or pouch. Add ingredients and seal tightly. Remove from pot and place on coals for 15 minutes. Serves 4
Roll out pastry (or use ready rolled sheets). Mix all ingredients and divide into at least 4. Make apple turnovers. Fold loosely in tinfoil. Cook in embers for about 10 minutes, turning often.
Baked Apples
Apple Brown sugar Slice of butter Cinnamon raisins
Core apple (younger girls may need help doing this). Place on 2 layers of foil. Fill apples with brown sugar, slice of butter (girl decide on how big), cinnamon sugar or fill with marshmallows and pieces of chocolate. Wrap foil around the apple. Bake on coals for around 15 minutes (medium size apple).
Put butter on one side of the donuts and sprinkle brown sugar on top. Lay a slice of pineapple on top and wrap in foil. Cook in the coals of the campfire for about 5 min.
Hobo Popcorn
1 tbsp popcorn 12" x 12" square of heavy duty foil 1 tsp cooking oil 1 tsp butter
In center of each square, place oil, butter, and popcorn. Bring corners together and seal edges to form a large pouch. Using wet string, tie pouch to the end of a long, wet stick. Hold over hot coals and shake. Open very carefully. suggested for older girls with patience
Peach Yums
Canned peach halves Large marshmallows
Place 1 peach half on a square of heavy duty foil. Fill center of peach with marshmallow and seal foil around the edges. Heat in coals for 5 - 10 minutes Grab a spoon and enjoy!
Fruit Turnovers
1 English muffin 1 tsp fruit pie filling
Open the muffin into 2 parts. Carefully scrape the middle out of the top and bottom halves of the muffin. Fill the bottom half and cover with the top. Wrap in heavy duty foil and warm 3 - 5 minutes per side.
Banana Boats
1 banana per person mini-marshmallows Baking chips - - chocolate, peanut butter, butterscotch or any combination Peel back inner section of banana peel, but dont remove the peel. Scoop out a small amount of banana, and fill with marshmallows and chips. Replace skin and wrap in heavy duty foil. Place on coals and heat 20 minutes. Open carefully and eat with a spoon. Great for Brownies, but warning--the skins will turn brown. This is a great alternative to S Mores for girls with chocolate allergies.
Open pita half, and spread inside with cream cheese. Fill with a spoonful of pie filling. Wrap in heavy duty foil, and place in coals for 3 to 5 minutes per side.
Caramel Apple
1 apple per person 3 caramel cubes per apple
Wash apple. Cut a slice off the top, remove the core, and put the caramels in the hollow. Wrap in foil. Seal and cook in hot ashes about 30 minutes.
Cheap Pie
2 slices bread Jam or fruit pie filling margarine Cinnamon and Sugar
Butter two slices of bread, place buttered side down on foil. Spoon on fruit filling and cinnamon sugar. Place on top the other slice of buttered bread and pinch the edges together. Seal in foil and lay on the coals for 10 minutes or so, turn over for another 5 minutes.
Apple Delight
12 large apples 1/2 C. raisins 3 Tbs. cinnamon 3/4 C. biscuit mix 4 Tbs. sugar
Core and chop 1 apple in fairly large pieces, peeling if desired. Mix 1 tsp. sugar, a few raisins and cinnamon to taste with 1 Tbs. Biscuit mix. Stir into chopped apple. Wrap in a piece of greased aluminum foil. Cook in the embers approximately 30 to 45 minutes. (The juice of the apple moistens the dough sufficiently.) Apple Surprise 2 large oatmeal cookies spoonful of apple pie filling
Put filling on one cookie and top with the second cookie. Wrap in heavy duty foil and warm 10 minutes in coals. variation: chocolate chip cookies (soft kind) and cherry filling
Do NOT, REPEAT NOT use cheese in your recipes, unless put on after cooking. The cheese will warm and separate and the oil will catch fire or cook the food faster than expected. Keep your meats lean and let the veggies add the moisture necessary. Pre-cook your chicken and ground beef, place in zip bag, and freeze several days before your trip. (If you use raw ground beef, it wont brown, only turn gray. The girls then turn gray and its peanut butter for supper! ) Chicken always carries the possibility of salmonella if not cooked correctly, or properly refrigerated. Better to precook than to treat a sick camper! Bring extra long-handled utensils, as you'll be moving a lot of packages around. A shallow bed of glowing coals that will last the length of cooking time is necessary. Use 2 layers of heavy duty foil...and in between the layers of foil, use wet newspaper...This will keep your food from burning and also allows the girls to keep track of whose dinner is whose, by recognizing which newspaper sheet they used when making their foil packet!! Be sure to label each persons meal. Nothing spoils the meal than confusion about which pack belongs to which person. The best thing Ive found is a wide tip SHARPIE marker. Label the foil before food is put in. (Be sure to label the foil, then turn in name side downthis seems to be a silly thing to add, but Ive seen leaders seal the pack with the name inside.!)
