SEAFOOD TABBOULEH SALAD

Tabbouleh salad with marinated seafood, papadum, lime and crispy capers for 4 persons:
Salad: - Fine chopped parsley 60 gr - Fine chopped mint 20 gr - Fresh tomatoes cut in small piece without the seeds - 50 gr bulgur - 10 gr fresh lime juice - 30 gr extra virgin olive oil Ingredients - 4 slices of papadums crispy baked - 2 medium size fresh scallops - 100 gr of crab meat cooked - 100 gr mussels cooked - 100 gr small shrimps cooked - 120 gr of crme fraiche - 30 gr of middle size capers - Flour, fleur de sel - Fresh garden herbs for garnish - Balsamic glazed and extra virgin olive oil How to cook: Mix all the salad ingredients together and for you own taste add some salt. Cut the scallops in thin slices and marinate it with olive oil and fleur de sel. Now take the crispy papadums and add a thin layer of crme fraiche on it. Place the tabouleh salad on top, and make sure that all is equaled divided. Now place the seafood on top of the tabbouleh salad in order to make it look nice. To garnish you can add some baby leaves, or a few slices of beetroot and radish. Crispy capers: Flour the capers carefully and deep fried them at 170 until they are crispy, dry them on kitchen paper. Food tip: If needed, you may replace any of the seafood items with fish, grilled chicken or goat cheese Try to dare and not be afraid to fail
