Method: Combine 1 tablespoon olive oil with crushed garlic and spread over the baking sheet, then slice the bread into thin rounds; you won't need the entire loaf Arrange the slices on the baking sheet, press them into the oil, then turn them the other way up so that each surface has a slight coating of garlicky oil Bake them in the centre of the oven for 20-25 minutes, or until they have turned a golden brown and become very crisp Skin the tomatoes by pouring boiling water over them, leave for 1 minute, then halve them, scoop out the pips, slip off the skins and chop the flesh into tiny dice Spread each crisp bread slice with a thin layer of pesto, then a generous layer of Anchor Cheddar Cheese, sprinkle on the diced tomato together with a little salt and coarsely ground black pepper Using a small teaspoon, add a few drops of olive oil - be careful not to overdo this. Chicken Enchiladas
Ingredients: 1 cooked chicken breast (120 gms) - shredded, 2 tbsp enchilada sauce, 1 tbsp vegetable oil, 2 (6 inch) corn tortillas, 100 gms Anchor Mozzarella Cheese-Shredded Method: Mix chicken and 1 tablespoon enchilada sauce in medium bowl. Pour remaining enchilada in a small skillet and heat until warm Heat vegetable oil in a separate small skillet over mediumhigh heat for 2-3 minutes. Pass tortillas, using tongs, through oil to soften. Place on paper towels to soak. Pass tortillas through enchilada sauce Place chicken mixture down center of each tortilla and roll up. Place seam-side down on microwave-safe platter or baking dish. Top with remaining enchilada sauce and sprinkle with Anchor Mozzarella Cheese Bake in preheated 350F oven for 10-15 minutes until cheese is melted.

Ingredients: 1 pizza dough 9 inch, 15 ml virgin olive oil - for brushing and drizzling, 1 clove fresh garlic - minced, 100 gms Anchor Mozarella Cheese (shredded), 2 tbsp chopped canned tomatoes - in heavy puree, 3 basil leaves Method: Preheat oven to 220C On a large oiled inverted baking sheet put the pizza dough Spoon dollops of tomato puree over the pizza dough without covering the entire surface. Scatter the garlic and Anchor Mozarella Cheese. Drizzle the pizza with 1 to 2 tablespoons of olive oil Slide the pizza into the preheated oven and let it cook for 6-8 minutes or till the cheese has properly melted and turns golden Serve at once, topped with the basil leaves and additional olive oil, if desired

Vegetable au Gratin
Ingredients: 50 gms carrots scraped and cut into cubes, 50 gms cauliflower flowerets, 50 gms green beans - strings removed and chopped, 25 gms fresh green peas, 50 gms potatoes - peeled and cubed, A pinch of soda bicarbonate, 2 crumbled cream cracker or any salted biscuits, 1 tsp salt or to taste, 3 flakes garlic - crushed, 200 gms Anchor Gouda Cheese (shredded)
For white sauce: 1 tbsp refined flour, 100 ml milk, 100 ml water from vegetables, 1 chopped onion, 1/2 tsp salt, 1/2 tsp pepper, 2 gms cinnamon - powdered Method: Pressure cook all vegetables with 1 cup water, salt, pinch of soda bicarbonate and crushed garlic for 5 minutes without weight. Drain extra water and reserve for the white sauce. Keep aside in a baking dish White sauce - Roast onion for a minute. Add flour and stir for one more minute. Stir in the milk, water, salt, pepper and cinnamon. Bring to a boil stirring constantly, so that no lumps remain. Let it cook for a minute more. Allow to cool Pour the white sauce over the vegetables. Add the Anchor Gouda Cheese and sprinkle crumbled biscuits over it Bake in oven at 200C for 15-20 minutes till brown. Serve with soup and toast
