Bruschett
Ingredients: 1 French baguette 14 inch, 100 gms Anchor Cheddar Cheese (shredded), 3-4 basil leaves, 1 firm tomato, 30 ml virgin olive oil, 1 clove garlic - crushed, 1 tsp Italian pesto, Salt and coarsely ground black pepper

SUGGESTED USES
Anchor Cheddar Cheese - Coloured is highly sought after because of its versatility Excellent as a table or snack cheese, shredded as a topping, melted in cooking and baking, heated in a microwave and mixed with non-cheese ingredients Provides a wide range of retail products: mild, medium, tasty and mature [depending on maturity of the cheese] Suitable for cutting into smaller retail units, retaining good block shape and cutting with minimum fracturing Anchor Cheddar Cheese - Coloured is also suitable as an ingredient for processing applications Excellent shredding cheese at between 2 to 8 months of maturity

Method: Combine 1 tablespoon olive oil with crushed garlic and spread over the baking sheet, then slice the bread into thin rounds; you won't need the entire loaf Arrange the slices on the baking sheet, press them into the oil, then turn them the other way up so that each surface has a slight coating of garlicky oil Bake them in the centre of the oven for 20-25 minutes, or until they have turned a golden brown and become very crisp Skin the tomatoes by pouring boiling water over them, leave for 1 minute, then halve them, scoop out the pips, slip off the skins and chop the flesh into tiny dice Spread each crisp bread slice with a thin layer of pesto, then a generous layer of Anchor Cheddar Cheese, sprinkle on the diced tomato together with a little salt and coarsely ground black pepper Using a small teaspoon, add a few drops of olive oil - be careful not to overdo this. Scatter a few fresh basil leaves
