American Apple Pie

http://www.videojug.com/film/how-to-make-american-apple-pie

Step 1: You will need:

for the crust: 500g flour 360g butter , cut into cubes 2 tsp salt 3 tbsp sugar 150ml cold water some extra flour for dusting for the filling: 6 granny smith apples , peeled, cored, and cubed 65-70g sugar 65-70g brown sugar tsp cinnamon powder 1 tsp lemon juice 1 tbsp flour 50g melted butter 1 egg , beaten with 2 Tbsp cream 1 mixer with the flat beater attachment 1 spoon 1 knife 1 brush 1 pie pan 1 rolling pin cling film

Step 2: Make the crust

Pour the flour into the mixer. Add the salt, the sugar and the butter. Mix on slow, for roughly 2 minutes, only until it becomes the consistency of coarse salt, with some of the pieces of butter still intact. Slowly begin to add in half of the water. Continue adding the water in small amounts, but just until the dough begins to cling together. Remove the dough from the hook and make into a ball. Remove it from the bowl.

Step 3: Refrigerate the dough

Next, cut a third off the dough. Flatten and wrap both pieces of dough in cling film. Now place them in the fridge for a minimum of 30 minutes.

Step 4: Preheat the oven

Set the oven to 180C (gas mark 4).

Step 5: Roll out the dough

Sprinkle a little flour upon your work surface. Take the larger piece of dough and unwrap it. Dust the top with some flour. Roll it out to a large circle about less than half a centimeter in thickness. Move the dough around to help create a circle and to stop the dough sticking to the table. Wrap the dough around the rolling pin. Place it into to pie pan, being careful not to let it tear.

Step 6: Continue the shell

Mould the dough to the shape of the pan using your fingers. Cut off the excess dough that's over hanging leaving half a centimeter above the rim. Pinch the edge of the crust with your fingers to make little ridges. Transfer the shell into the fridge or freezer. Let it chill for at least 15-20 minutes.

Step 7: Make the filling

Into the bowl of apples add the white sugar, brown sugar, cinnamon, lemon juice, flour and the butter. Mix together well.

Step 8: Prepare the top

Flour the work surface with flour. Roll out the remaining dough into a rectangle of 1/2 centimeter in thickness. Move it around in the flour to stop it sticking to the table. Then cut the dough into 8 long strips of about 1.5 centimeters wide.

Step 9: Prepare for the oven

Pour the apple filling into the chilled pastry shell. Spread and flatten the apple around the pan with a spoon. Brush the pastry edges with the beaten egg. Place the pastry strips diagonally across the top of the apples. Then weave them together, to create a lattice effect. Cut off the overhanging excess pastry. Press the edges down into the rim. Brush the pastry lattices with a little bit of the egg wash.

Step 10: Bake

Place the pie into the oven. Bake for about 60 minutes. Once brown, remove it from the oven.

Step 11: Serve

Allow the apple pie to cool before serving. Your apple pie is now ready to serve. It goes perfectly with a little vanilla ice cream!

Apple Crumble
http://www.videojug.com/film/how-to-make-apple-crumble

Step 2: Cook the apples

Put the apple chunks into a pan, add three quarters of the sugar, the cinnamon stick or clove and cover.

Step 3: Stew the apples

Allow to stew gently for half an hour, stirring occasionally with a wooden spoon. Keep checking as they can easily burn at the beginning.

Step 4: Check the apples

Check that the fruit is cooked by mashing it a bit with the wooden spoon. The apples should be soft but not pured.

Step 5: Allow to cool

Put the apples into the serving dish and allow cooling.

Step 6: Make the crumble

Mix the white flour, remaining sugar and the butter with your fingers in a bowl until it becomes like a breadcrumb consistency.

Step 7: Preheat the oven

Set the temperature of the oven to 150C (gas mark 2).

Step 6: Stir in the eggs

Add an egg to the mixture and stir it in thoroughly. Repeat for each of the other eggs in turn.

Step 7: Add the sour cream

Put the sour cream into the bowl and stir it in thoroughly, but again, take care not to beat the mixture.

Step 8: Pour cheese mixture into baking ring

Step 9: Bake the cheesecake

Place it into the lower part of the oven and let it bake for approximately 1hr 15 minutes.

Step 10: Remove from the oven

When the cheesecake is ready it should be cooked but have a slightly wobbly consistency. Take it out, let it cool down and place in the fridge to set, for a minimum of 4 hours.

French Chocolate Truffles

http://www.videojug.com/film/how-to-make-chocolate-truffles

Step 1: You will need

250 g dark cooking chocolate, unsweetened or semi-sweetened 160 ml cream 35 g unsalted butter 80 g dark cocoa powder 2 tbsp water 1 ltr water 1 chopping board 1 medium cooking pan 1 small cooking pan 1 large bowl 1 medium bowl 1 large knife 1 tea spoon 1 spatula 1 whisk 1 small tray or serving bowl

Step 2: Prepare the Bain Marie

Place a medium cooking pan in a high heat and pour around 1 liter of water. Bain Marie is a heating technique where one container with the ingredient to be cooked is placed in another larger pan containing simmering liquid. This technique is very important when working with chocolate. Now take the heat to take it to a simmer.

Step 3: Prepare the chocolate

Place the chocolate bar on the chopping board and cut it into small chunks. Add 2 tablespoons of water into the pan, to help the chocolate melt and then put the chocolate pieces in.

Step 4: Prepare the ganache

We'll melt the chocolate using a Bain Marie. Place the small cooking pan containing the chocolate into the medium one. Stir to help the chocolate get melted. This step should take around 8 minutes. TOP TIP: Chocolate is very sensitive to heat. It shouldn't become a dull colour at any time. 1. When melted, add gently the cream and combine well to make the mixture. This cream is called ganache. Do not remove from heat keep the pan at melting temperature. Then, turn the heat off. 2. Remove the pan from the heat source and leave it to rest until cool.

Step 5: Add butter to the ganache

Once again, bring the water to a simmer in the medium pan, to prepare a Bain Marie. Then add the butter and stir to fully melt it. When done, turn the heat off and remove the pan. Pour the ganache into a large bowl using the spatula to remove the rest from the pan and leave in the fridge for around 8 hours, until very stiff.

Step 6: Make the truffles

Take the bowl from the fridge and place it in the work surface. Place the cocoa powder into the medium bowl then, with the help of a tea spoon, get small amounts of the ganache and make small balls rolling them into the palm of your hands. Then put them into the bowl with the cocoa powder. Continue making small balls of chocolate placing them into the cocoa powder bowl. Roll them well in the powder, so the balls gets completely covered with the cocoa powder. And finally place the truffles into a serving bowl or on a tray.

Step 7: Serve the chocolate truffles

Your truffles are now ready. You can enjoy them with a nice cup of black coffee or with a glass of champagne.

Crme Brule
http://www.videojug.com/film/how-to-make-creme-brulee

Step 1: You will need.

500 ml double cream 1 vanilla pod 120 g caster sugar 6 tsp caster sugar 6 egg yolks 1 chopping board 1 saucepan 1 bowl 1 whisk 1 sieve 1 jug 6 ramekins 1 roasting tin 1 blow torch 1 spatula 1 knife

Step 2: Prepare the vanilla pod

Slice down the middle of the pod and split it open. Scrape out the pulp onto the knife point and put it into the saucepan. Add the pod and pour in the cream.

Step 3: Heat the cream

Place the pan of cream over a medium heat and allow too warm to just under boiling point.

Step 4: Preheat the oven

Set the oven to 140C (gas mark 1).

Step 5: Mix eggs and cream

Break the eggs into a large bowl, add the sugar and whisk well until it turns pale in colour. Gradually pour in the warm cream, whisking continually. Once combined, set aside.

Step 6: Strain and transfer to ramekins

Strain the mixture through the sieve into the jug. Place the six ramekins into the roasting tin and fill each one with the cream mixture. Pour enough boiling water into the tray to reach half way up the ramekins. This is known as a bain marie.

Step 7: Bake
Place into the preheated oven and bake for 30 minutes.

Step 8: Remove and cool

Once baked remove the crme brulees from the oven and, taking great care as the ramekins will be very hot, take them out of the bain marie. Allow them to cool to room temperature.

Step 9: Caramelize
Sprinkle a teaspoon of sugar over each crme brulee. With the blow, torch quickly caramelize the top, for roughly 8-10 seconds. Don't over heat or the sugar will go black. When cooled, the caramelized topping will harden.

Step 10: Serve

Place on a serving plate and serve at room temperature.

Brioche
http://www.videojug.com/film/how-to-make-brioche

Step 1: You will need

660 g flour 8 eggs 16 g salt 70 g sugar 17 g dry yeast 70 ml lukewarm water 440 g butter at room temperature The yolk of an egg mixed with 2 tbsp of milk 50 g flour for dusting 1 mixer with hook attachment 1 brush 1 bowl 1 tea towel 6 medium molds, buttered and floured

Step 2: Start the dough

Into the mixer bowl put the flour and then the eggs one by one. Add the salt, and the sugar. Lower the mixer head and begin mixing at a low speed.

Step 3: Add the yeast and water

When the ingredients have combined, add the yeast, the water, and continue mixing. A quick tip - It's not recommended to mix this dough by hand as it's very sticky!

Step 4: Add the butter

Once the dough is well mixed, gradually add the butter, mixing continuously. Don't add the butter all in one go as this may cause it to separate and ruin the dough. When you have added all the butter, continue mixing on a low speed for another 20 minutes. Now lift up the head and wipe off the dough from the hook.

Step 5: Let the dough rise

Transfer dough into another bowl; cover it with a tea towel and leave to rise for about an hour and a half. Make sure the dough is not left in too warm a place or the butter will begin to "leak" out of the dough. After an hour and a half - it will have doubled in volume. Push down gently to deflate and cover again. Place in the fridge to chill, preferably overnight.

Step 6: Make the brioche

First preheat the oven to 200C. Before working the dough, sprinkle a little flour on your work service. Place the dough on this and pinch off a small amount. Roll in some flour and using your hands form the dough into balls to fit your cake moulds. Form the remaining dough into a log shape and place in a loaf tin lightly press the dough into the corners. Finally place a tea towel over the dough and let it rise for about another 2 hours.

Step 7: Bake the brioche

Brush each brioche with the egg and milk mixture to glaze the tops, making sure not to touch the cake moulds, repeat this for the loaf. Place in the oven. Bake the small ones for 12 min and the loaf for about 25 minutes.

Step 8: Serve
Carefully invert the cake moulds and remove your brioche. Use the same method for the loaf tin. Serve with butter, jam, or pt.

Strawberry Tarts
http://www.videojug.com/film/how-to-make-strawberry-tarts

Step 1: You will need:

250 g Plain Flour 120 g Chilled Butter 2 tbsp Vanilla Sugar 1 Egg 2 to 3 tbsp Cold Water Some Butter to grease 200 g Cream Cheese 2 tbsp Icing Sugar tsp Vanilla Essence 450 g Small ripe strawberries 4 tbsp Redcurrant Jelly Some Fresh mint 1 large bowl 2 small bowls wooden spoon cling film wire rack bun tray pallet knife saucer chick peas/ ceramic cooking beans tin foil knife chopping board kitchen towel

saucepan ladle teaspoon tablespoon mini sieve

Step 2: the pastry

Place 250g of plain flour in a large bowl, and add 125g of butter. Rub the butter into the flour with your fingertips. Don't squidgy it as this will crush all the air out. Rub it gently, lightly lifting your fingers as you go. Keep going until the mixture resembles fine breadcrumbs. Add in 2 tablespoons of vanilla sugar, and mix with a fork.

Step 3: add egg and water

Carefully break an egg over a separate bowl. Tip the yolk from one side of the shell to the other, letting the clear part fall into the bowl. Put the yolk into another bowl. You only need the egg yolk for this recipe. Add 2 to 3 tablespoons of water to the egg yolk and quickly whisk with a fork. Make a well in the middle of the flour mixture and add a little of the egg and water. Work the mixture in, adding more egg and water until it begins to form a ball without being too sticky. If it's too dry, add a little more water. Shape the dough into a ball, wrap it in cling film and place in the fridge for about 30 minutes to chill

Step 4: Prepare the tins

Grease the baking tins using a little kitchen towel dipped in butter.

Step 5: Roll
Remove the dough from the fridge, unwrap and cut into quarters. Sprinkle a tiny bit of flour onto a clean work surface. Press the dough with your hands to warm it, and then use a rolling pin to roll out. Don't put too much pressure on the rolling pin. Press gently and turn frequently. If it feels like it is sticking, rub a little flour onto the rolling pin. Roll the pastry until it is about 5mm thick. If it tears, don't worry, just push it back together.

Step 6: Form the cases

Loosen the pastry from the work surface with a pallet knife, drape it over the rolling pin and lay it into the baking tray. Cut of the excess with a knife and shape the top with your fingers.

Step 7: Chill
Line each of the pastry cases with a square of tin foil, and fill each with baking beans. These will help the tarts keep their shape and stop the pastry rising up when it is cooked Place them back into the fridge for about 15 - 20 minutes to chill.

Step 8: Preheat the oven

Meanwhile turn the oven to 200 degrees Celsius.

Step 9: Bake
Remove the pastry cases from the fridge and immediately put them in the oven to bake for 7 minutes. Then, remove the beans and foil. This can be tricky, so there should always be an adult around to help. Return the cases to the oven and bake for a further 3 minutes. Then place them on a wire rack to cool while you make the filling.

Step 10: The filling

Put 200g of cream cheese in a large mixing bowl. Sift in about 1 tablespoon of icing sugar. Add half a teaspoonful of vanilla extract and beat well with a wooden spoon. Have a taste, and add more icing sugar or vanilla extract if you think it needs it.

Step 11: The strawberries

Remove the leaves and stalks from the strawberries, and clean the tops with a little kitchen towel. Carefully slice each strawberry in two. To be extra safe hold them like this - make a bridge shape with your fingers, put the knife in the gap, and slice.

Step 12: Fill the cases

Place a small amount of the cream into each pastry tart and smooth it around. Arrange the chopped strawberries on top.

Step 13: Jelly glaze

Now make a glaze Put 4 tablespoons of redcurrant jelly into a saucepan over a low heat and leave to melt. Add a couple of tablespoons of water after about 3 minutes, just enough to make it runny. If the mixture begins to bubble, give it a quick stir and lower the heat. It will be ready in about 8 minutes. Use it straight away before it solidifies. Ladle a little over the strawberry tarts. Garnish with fresh mint.

Step 1: You will need...

250 g shelled walnuts 120 g unsalted butter 250 g brown sugar 4 eggs 1 tbsp icing sugar 1 electric blender 1 electric whisk 2 medium bowls 1 spring-form baking tin, of about 21- 23 centimeters in diameter 1 piece of grease-proof paper/ baking parchment 1 skewer 1 sieve 1 spatula

Step 2: Preheat the oven

Set the oven to 150C (gas mark 2).

Step 3: Create the cake mixture

Add the walnuts (reserving ten for later) into the blender and grind for two minutes on full power until they have the consistency of breadcrumbs. Whisk the butter and sugar in a bowl and then stir in the ground walnuts using a spatula.

Step 4: Add the eggs

Separate the egg yolks from the white and add the yolks into the bowl of walnut mixture, one by one. Beat the whites until they become stiff and then fold, which means to gently combine, into the mixture.

Step 5: Bake the cake

Place the cake in the centre of the preheated oven and bake for roughly one hour. After about forty minutes, check it. Carefully spear the centre of the cake with a wooden skewer and see if it is dry. When it comes out dry, the cake is baked.
