November 16, 2012 To Whom It May Concern: I am writing to you today in the hopes of attaining an internship position with the chef de cuisine at Simon Pearce. I am currently a student at New England Culinary Institute and my focus is an associate degree in the culinary arts. I am looking to attain an internship of 700 hours over six months. I have always thought that quality local ingredients and simple execution make the best food experience. Simon Pearce has achieved both of these things, bringing together the beauty of the food itself and its presentation on locally crafted wares. I believe that a partnership with Simon Pearce would be a wonderful fit. Professionally, I have seven years of experience working in the culinary industry. I have worked both the front and back of the house and understand the importance of each coming together as a cohesive unit. I am very motivated and reliable. More significantly I believe, is my passion for the culinary arts. In addition to working with food, the culinary sphere is a part of my life. I take great pride in providing delicious meals for my family, friends, and people in general. I believe that I could offer you a wealth of ingenuity and passion, and it excites me to think of what Simon Pearce could offer me in return. Attached you will find my resume as well as contact information. I look forward to hearing from you. I will follow up with you next week or you can contact me via email or call me at 1(406) 599-0695. Thank you for your time and consideration. Sincerely,

Jonathan Nelson
