About Us
Located in the foothills of Maine, the LaCourse Family Farm, home of The Maine Potato Lady, has been in operation for more than 20 years. Our 100-acre piece was once part of a 560-acre farm that dates back to the 1600s. Our custom-designed and hand-built log home crowns our hill-top farm. We gathered stones from field edges and milled our own lumber to finish the building, which has sheltered our family for many years. We are pleased to live "off the grid," with a solar system to provide electricity. Our south-facing fields are rich with fertile, well-drained silt loam. Our sugar bush produces fabulous maple syrup, and our cedar bog is a special habitat with sphagnum moss and rare pitcher plants. We are privileged to work and live in this rural environment, where deer, moose, turkey, ravens, eagles, and a variety of beautiful trees, plants, and birds are all around us. We are primarily seed growers raising garlic, shallots, and potato onions. We have produced all our own vegetables for many years. Our children are involved in the planning, the everyday work, the decisions, and the rewards. They were raised knowing and recognizing not just the types of vegetables, but even the different varieties of what we grow. They are an integral part of this farm; their participation makes it all possible, and brings joy to all we do. HELLO! Welcome to the sixth annual seed catalog from The Maine Potato Lady. In more than fifteen years work with seed potatoes, I have become known to many of you as "The Potato Lady," helping you to select the right varieties for your garden, and offering growing hints drawn from my own experience as a successful organic farmer. In this catalog, I am pleased to offer you certified seed potatoes, onion sets, French and Dutch shallots, "potato onions," cover crops, soil inoculants, fertilizers, and fall-planted garlic. Much of our seed, and many of our plants and products, are also certified organic or approved for organic production. I know youll love the wide variety of potatoes featured here, including fingerlings, blue- and yellow-fleshed tubers, and heirloom potatoes. I have grown and eaten and enjoyed! just about all the varieties I offer. They all produce beautifully, theyre available in many colors and shapes, and theyre delectable to the taste truly a feast for the eye and palate. NEW THIS SEASON! About Our Certified Seed

We grow a small portion of our products ourselves, at our own LaCourse Family Farm. The remainder of the seed we offer is produced at family farms with whom we have good working relationships, some for more than fifteen years. All our potato seed meets the seed certification requirements of the State of Maine, which establish acceptable tolerances for seed quality. (Please see page 25 for more information about certified seed.) Many of our varieties are also certified organic. All our garlic seed has been grown in soil which has tested free of the garlic bloat nematode. Excellent farming practices, attention to detail, and scrupulous adherence to seed certification guidelines (when applicable) set good seed growers apart from the rest. All the farms from which we obtain seed meet our stringent requirements. It is an honor to work with these farmers, and it is a privilege to supply you with their seed.
Sweet Potatoes
Many of you have asked for sweet potatoes, and we are pleased to offer certified organic sweet potato slips, small plants that sprout from the roots, grown by our neighbor, a young farmer who lives on the next ridge from our farm. These plants are organically grown on a farm that has been in the same family for five generations. We have chosen two varieties that you will enjoy eating with your family over the holidays. The sweet potato (Ipomoea batatas), a vining plant related to morning glories, is a different plant species than the familiar Irish or white potato (Solanum tuberosum). The part of the sweet potato most widely eaten is a swollen portion of the root, which forms in the hill of soil. Leaves and growing tips are also edible, usually stir-fried. By contrast, white or Irish potatoes whose leaves and stems are poisonous, produce nutritious tubers on the ends of the stolons, or shoots, which form above the seed piece in a hill of soil. (True yams [Dioscorea spp.] are native to Africa and not grown in this country.) Sweet potatoes require 90-150 frost-free days to mature. Nutritous and productive, they can yield up to two pounds for each row foot of plantings. Plant the slips 15"-18" apart when the soil is at least 60F. Northern growers can be successful with sweet potatoes by using black plastic to warm the soil and by applying row cover to prolong the growing season.

RED THUMB Dug as small "babies," these bright red-skinned thumbs of delicacy have beautiful dark pink flesh. Pleasing flavor and firm flesh is perfect for roasting in olive oil and rosemary, then caramelizing. Serve with your favorite steak and salad. An interesting fingerling for the specialty market. ROSE FINN APPLE Rose-blushed beige skin and deep yellow flesh, occasional airplanes or second growth distinguish this very fine fingerling. Though not as easy to grow as Banana, this potatos exquisite flavor and cooking qualities set it apart. Tubers set near the surface, so hill well to prevent greening and frost damage. Fingerling Potatoes
Shaped like fingers, hence their name. Prized for their interesting colors and exquisite flavors, they are in high demand with chefs and market farmers. They are prolific producers and fairly resistant to disease. BANANA Probably the best known of the fingerlings. Tan skin with dark yellow flesh. Matures earlier than most fingerlings with respectable yields of 2"-3" tubers at 75 days. Steamed and tossed with butter and parsley, these make a tasty late-summer dish. Resistant to scab, but susceptible to rhizoctonia and late blight. White flowers on medium spreading plant.

FRENCH FINGERLING Though plumper than most, this potato (also known as Nosebag) is still considered a fingerling. Radiant rose-red skin and deep yellow flesh with an occasional red ring make this potato stand out. Creamy, smooth texture with exceptional flavor lends itself well to salad with thinly-sliced red onions and chunks of crisp cucumbers. Abundant, long, plump tubers seem to tumble out of the earth. Tall plants with red veining fill the row.

PURPLE PERUVIAN Sure to draw attention anywhere, this tuber is deep dark purple inside and out, with a rather earthy flavor that some really love. Still a little wild, Purple Peruvian has a large rangy plant. Its numerous tubers set far from the plant; be sure to harvest them all to prevent their becoming "volunteers" in next years crop. Very late; frost tolerant. Not much is known of its resistances or susceptibilities, so be sure to send me your observations. This is truly a specialty potato.

LARATTE From France comes this special fingerling. In appearance Laratte is similar to Banana, though a fine net to the tan skin and a nutty flavor to the dark yellow flesh set it apart. Smooth and firm texture. The babies ("-1") truly melt in your mouth. Fine chefs love this gourmet morsel, and the demand is high. Matures about ten days later than Banana. COBBLER Many years ago on a summer eve while visiting one of our family seed potato growers, we were served freshly-dug Cobblers, golf ball size, boiled and tossed with butter, salt, and parsley. Oh, scrumptious! The potatoes were good and so was the company, making for a memorable meal. A selection from Early Rose believed to have been discovered by an Irish shoemaker in the late 1800s, Cobbler has round, buff-skinned tubers with white flesh thats a little mealy, perfect for soaking up that butter. Early maturing and exceptional eating qualities keep this variety in the seed trade.
DARK RED NORLAND Customers sometimes ask, "What should I choose for early spuds that steam up well?" I always recommend Dark Red Norland; its easy to grow with consistent yields of beautiful round red tubers from large to small. Steam or boil some of these babies for those first early meals straight from the garden. Resistant to scab; fair storage. Purplishblue flowers on a medium-sized plant.

SATINA Oh yes, the satiny yellow skin and yellow flesh of these oval-round tubers make for an exceptional eating experience! With a smooth texture and a great flavor, Satinas eating qualities are comparable to Carola. An early- to mid-season German variety with high yields and resistance to rhizoctonia, black leg, scab and hollow heart. Field resistance to late blight; good resistance to tarnished plant bugs and leafhoppers. Very good storage.

MOUNTAIN ROSE With red skin and red flesh, this new release from Colorado joins Purple Majesty in being very high in antioxidants. Developed from All Red and a white-fleshed chipping variety, Mountain Rose shows good promise as a specialty variety for chefs and market gardeners. A moist but not waxy texture makes it suitable for most uses. Early to medium maturity and high yields. Resistant to second growth, hollow heart, shatter bruise, and some viruses. Susceptible to fusarium dry rot. Semi-erect plants with reddish-purple flowers.

Mid-Season Potatoes (70-90 DAYS)

ADIRONDACK BLUE Several years ago I trialed Adirondack Blue and was impressed with the results. Round to oblong, slightly flattened tubers have glistening blue skin enclosing deep blue flesh without the white vascular ring. The moist, flavorful flesh is superb for mashing or salads; its a favorite in taste tests. Very high in antioxidants. Spreading plants with tinges of blue have clusters of pure white flowers. This variety bruises easily during harvest and is extremely susceptible to fusarium soft rot. Grading has proven to be very difficult as the soft rot spreads into the center of the potato and is not readily visible on the surface.

RED GOLD Always one of my favorites. Boiled or steamed and tossed with butter, salt, and parsley, these will melt in your mouth. Rose red skin wraps around deep yellow flesh. Because its very early at 70 days, Red Gold is perfect for the market grower. Expect a huge set of 2"-3" babies under each plant. Moderately resistant to scab, with a short dormancy. SUPERIOR Released in 1961 and having one of the same parents as Kennebec, Caribe and Onaway, Superior is a widely-grown, popular variety. Early maturing, moderately-high yields and minimal skinning enables growers to dig and market quickly. Round to oblong tubers with buff, slightly flaky skin and white flesh are suitable for many uses. Good resistance to internal defects and common scab. Years ago when we first started growing our own food and buying local storage crops, Superior was the potato we ate and stored all winter. Medium plant with pale lilac flowers having white tips and stripes extending to center.

SANGRE A beautiful potato with smooth, thick, red skin and white flesh, having wonderful boiling and baking qualities. Stores well, maintaining good skin color. ADIRONDACK RED Trialing this new release from the Cornell breeding program several years ago, I was pleased with how well it performed. Oblong, slightly flattened tubers have lightly netted purplish-red skin and pink-red flesh; flavorful and moist. So tasty for roasting and salads! Plants have a heavy set high in the hill. Early maturity and good storage. Contains naturally-occurring anthocyanin, a powerful antioxidant. Spreading plant with purple-red flowers sporting red anthers.

NEW! AUGUSTA Every year I grow many different kinds of potatoes, some new, some familiar. Its always exciting to dig the trial varieties, seeing the different colors, shapes and quantities that come out of the ground. Augusta, a newly released variety, has oval to long tubers with golden skin and pink blushed eyes. High yields of 8-10 tubers per plant were blemish free. Though other sources called this one "waxy" I found it to be quite creamy, best for mashing, baking or frying. May be a good substitute for Yukon Gold.

BACK! ALL BLUE My family simply loves French Fries made from this specialty potato! With deepblue skin and blue flesh sporting a ring of white, it fries up with an appetizing coppery-colored tinge. GOLDRUSH Released in 1992 by North Dakota, Goldrush is a welcome addition to the russet repertoire. Attractive oblong-to-long tubers with smooth russeted skin and extremely white flesh are especially delicious for baking and fries. Mid-season maturity, high yields, resistance to hollow heart, common scab, verticillium wilt, and drought have made this variety popular. Large vigorous upright vine has light lavender flowers.

KEUKA GOLD Expect high uniform yields from Keuka Gold, a recent release from the Cornell breeding program. Part of the Public Seed Initiative in 2004, Keuka performed well under organic growing conditions. Though not as early as Yukon, it may be a good substitute. Buff skin and light yellow flesh with eating qualities similar to Yukon Gold. Resistant to scab and golden nematode. White flowers on a strong vine.

PURPLE SUN (also known as Peter Wilcox) Bred at USDA/Beltsville for high levels of vitamin C (40% of RDA per serving) and the antioxidant carotenoid (15% higher than Yukon Gold). Round to oblong tubers have brilliant purple skin and dark yellow flesh, occasionally streaked with purple. Large set of 2"-3" tubers set high in the hill. CAROLA Just about everyone grows this golden yellow tuber. The color of its sunny flesh is reminiscent of butter from cows fresh on pasture. KENNEBEC Released by the USDA in 1948, Kennebec is still one of the top-ten varieties grown in Maine. And no wonder! NEW! EVA Another excellent variety released from the Cornell breeding program. The outstanding appearance of the round oval tubers even in a less-than ideal growing year such as Maine had in 2011 convinced me to offer this variety. Bright white skin and white flesh with texture a little mealy lend these tubers to mashing, baking, and home-made chips! Excellent storage. KERRS PINK We never seem to have enough of this heirloom from Ireland. First released in 1917, it is still widely grown today. The texture is what the Irish call "floury" that is, not really mealy like a russet, but drier than most varieties. To our taste, its delicately creamy, lending itself well to mashing (with milk and butter, of course!). This is our daughter Rosies favorite "yummy for the tummy." Place a heavy-bottomed medium-sized soup pot over medium-high heat. Add the bacon and cook it until it is crisp. Using a slotted spoon, remove the crisped bacon to a small bowl. Add the chopped onions to the bacon fat. Adjust the heat to medium, and cook the onions just until they are soft. Do not let the onions brown. When the onions are soft, add the potatoes, the bay leaves and thyme, and 1-2 cups chicken stock. If you prefer a thick soup, or if you plan to add milk to the soup later on, add the lesser amount, but be sure that the potatoes are covered. Cover the pot, and cook until the potatoes are soft. When the potatoes are cooked, crush them with a potato masher, leaving some lumps. Reduce the heat to mediumlow. Add the cheese, starting with just one cup; taste, and add more if desired. After the cheese melts, stir in the corn, the reserved bacon, and plenty of freshly-ground black pepper, and let the soup heat for a few moments. Taste before salting. Remove the bay leaves and the thyme stems. Garnish with chopped fresh parsley. Serve hot.

RED MARIA (a.k.a. NY 129) Finally, we have a beautiful name for "NY 129," a late-season red potato developed by the Cornell breeding program. Ive grown this variety in my trials several times and was always impressed with the yield and uniformity of these large, round tubers. Bright, red skin is lightly textured and holds color well in storage. Few pick-outs and internal defects. Resistant to golden nematode and common scab. Red-purple flowers on a dark, green upright plant showed some resistance to leafhoppers and tarnished plant bugs.

It was bred at Cornell and released jointly in 2007 by Cornell, Penn. State, and the University of Maine. It is named for Pennsylvanias Lehigh Valley, where, in extensive trials, potato growers found that Lehigh offered consistently high yields across very diverse growing regions. We incorporate cover crops and green manures into our farm plan and rotations to build beneficial levels of organic matter and humus in our soil. Green manure or "plow down" crops can add substantial amounts of enriching biomass or organic matter to the soil. Legumes provide essential nitrogen. As this matter feeds the soil organisms, they in turn break down the organic matter and release a wealth of nutrients to feed the next crop. Cover crops protect against erosion, holding together all that precious topsoil that we have worked hard to build up. Here is a selection of the basic green manure crops that we use.
BUCKWHEAT With its wide, heart-shaped leaves and rapid growth, buckwheat is the best green manure crop for weed suppression. Buckwheat is also widely used for building worn-out soils, as it accumulates phosphorous, potassium, calcium, and nitrogen, making all these nutrients available to the next crop. Its fibrous root system improves soil aeration and friability, encouraging earthworm activity. Plant after danger of frost, then work into the soil at 6-8 weeks before the flowers set seed. Or plant as a late summer or fall cover crop 40-60 days before the first frost; leave it to winterkill, then plant directly into it in the spring. Buckwheat does better on poor soils than any other cover crop, but it does not like hot, dry conditions. Seed at 45-90#/acre or 2#/1000 sq ft.

FIELD PEAS We like to plant this legume with oats for a real soil-building crop. The grains provide ample biomass, as well as stalks for the peas to climb, and the peas provide nitrogen. Field pea residues decompose rapidly, contributing up to 1.7 tons of dry matter and 100 pounds of nitrogen per acre. Field peas like cool moist growing conditions and are frost-tolerant once established. Seed at 70-160#/acre or 4#/1000 sq ft.

NEW! MUSTARD Mustards and other brassica cover crops are becoming popular for rapid fall growth, huge biomass production, and nutrient scavenging. Most brassica species, mustards in particular, release chemical agents called glucosalinates, that when incorporated into the soil are toxic to soil-borne pathogens and pests (fungi, nematodes, and some weeds). Mustards will suppress verticillium, rhizoctonia, fusarium, sclerotinia and apahanamyces (root rot of peas). Fast-growing, it will suppress weeds and can produce up to 8,000 lb. of biomass per acre. With a 2-6 foot taproot, mustard is an efficient nutrient recycler, bringing up nitrogen and other nutrients into the top several feet of the soil profile. We are offering Mighty Mustard which includes two varieties: IdaGold (actively suppresses weeds) and Pacific Gold (active against insects, nematodes, and fungal pathogens). Though not certified organic, they are sustainably grown by the Pacific Northwest Farmers Cooperative who have undergone third party evaluation and are verified non-GMO by the Non-GMO Project (www.nongmoproject.org). Plant in September for late October incorporation, or in the spring as soon as you can work the soil. Mow or chop before incorporation to rupture cell walls and better release the glucosalinates. WINTER RYE We always plant rye for winter cover after the potatoes are harvested, as well as in any other field that is open. Rye is very hardy and winters over consistently, germinating and growing at 40F and surviving down to -33F. Rye is an excellent catch crop as it has an extensive root system and is very efficient at taking up soluble nutrients left by previous crops. Rye provides a large amount of organic matter and has alleopathic effects on weeds. Great for straw: cut and bale at milk stage to prevent seed production. Seed from mid-August to mid-October alone or with hairy vetch at 90-160#/acre or 4#/1000 sq ft.

Soil-Building Mixes
OATS We think of oats as a healing crop for the soil, as they have a special link with the soil microbes to break down humus. Oats grow very quickly, smothering weeds almost as effectively as buckwheat, especially when planted with bell beans or field peas. Worked into the soil, oats provide large amounts of organic matter while the legumes provide nitrogen. Oats are excellent as a nurse crop for legumes and grasses, providing weed control and winter protection. Because they winterkill, they are great for gardeners; the plant residue may be worked into the soil easily, or other crops can be planted directly into it. Sow oats
BELL BEANS Also known as fava bean or horse bean, this is the small-seeded variety used for green manure crops. A cool season annual that originated in the Mediterranean, this plant has wonderfully lush, fleshy leaves on thick straight stalks, 2-5 feet tall. Tolerates a wide range of soils. Will fix 70-220#/acre of nitrogen and provides loads of organic matter. A densely planted crop provides good weed control. Bell beans do well intercropped with oats or barley, and provide the legume green manure crop to rotate with garden peas and beans, as they are not from the same family. Turn under when plants first flower, or cut first, allow to wilt, then till under. Hardy to 25F. Flowers attract lacewings, ants, and parasitic wasps. Seed at 125-200#/acre or 5#/1000sq ft.

HAIRY VETCH A hardy legume that we usually plant with rye to overwinter and plow in the spring before we plant potatoes. Vigorous growth suppresses weeds, but large plants can be a problem to mow or plow. Turn under when the rye is 8"-12" tall or 2 weeks before planting the next crop. Vetch supplies 60-140#/acre of nitrogen and 4500#/ acre of biomass, depending on its maturity when it is turned under. Its succulent vines decompose rapidly. And the blue flowers are just lovely in a vase on the kitchen table. Seed at 20-40#/acre or 1#/1000 sq ft.

We often plant a mix of grains and legumes to boost production of biomass, to form more soil organic matter, and to suppress weeds more effectively than either crop will do alone. These mixed crops complement each other in other ways as well. The grain stalks provide support for the vine-like legumes, while the grains roots improve topsoil crumb structure. The deep legume taproots open the subsoil, enhancing drainage, bringing up minerals, and fixing nitrogen from the air.

NEW! MEDIUM RED CLOVER A versatile short-lived perennial clover with several important uses. It makes nutritious hay or pasture and can persist for several years. Used as a cover or green manure crop, it can provide the nitrogen for the next seasons crop. Planted in late summer either sowing with a small grain or broadcast into a vegetable crop after last cultivation, then incorporated next spring at flowering (late May to mid June) it can fix up to 100#/acre of nitrogen. Certified Potato Seed A rigorous certification and inspection process (distinct from organic certification) ensures that seed potato meets standards for freedom from diseases or pests. All the potato seed sold by The Maine Potato Lady is certified by the state in which it is grown. Our products must also meet the certification requirements of the State of Maine Department of Agriculture. During the growing season, each lot is field inspected three times for specific pests and diseases. A 400-tuber sample, taken at harvest time, is grown out in Florida during the winter, then visually inspected for viruses and for variety purity. In order to be designated as Certified Seed, the sample must show 5% or less total virus. Certification is not complete until the winter grow-out inspection has been finalized (usually at the end of January). Certification represents only that the seed potatoes were inspected and certified in accordance with the state regulations.
Fertilizers & Inoculants
As farmers, we need affordable and user-friendly fertilizers to feed our crops (and, ultimately, ourselves). The best fertilizers spread easily with standard equipment and provide the right nutrients to enhance the health of our soil. Here is a selection of products we like, both for ease of use and for the benefits they bring.
FISH MEAL (8-3-0 N-P-K) Weve used this by-product of the salmon industry for many years on our potato and garlic crops. It provides readilyavailable nitrogen as well as some phosphorous and a good dose of calcium. Flows fairly well through a drop spreader or spinner spreader. Mix with other pelleted amendments to improve flowability and decrease trips on the field. Also great for side-dressing corn or squash. Apply at 5#/200 sq ft or 25#/1000 sq ft. MOFGA-approved.

Coming to Terms
Organic or Certified Organic Both of these terms refer only to products that have been produced on a farm that meets the standards established by the National Organic Program of the U.S. Department of Agriculture. The farm must comply with USDA/NOP regulations and pass an inspection by an approved accredited certifying agency. Production practices must enhance the health of the farm. No synthetic inputs are allowed. Conventional In conventional agriculture, synthetic inputs (fertilizers, insecticides, fungicides, and herbicides) are used to produce the highest yields and maximize profits. There are good conventional growers who use crop rotation and integrated pest management to minimize their use of synthetic inputs. The Maine Potato Lady offers products from some carefully-selected conventional growers.
MUSTARD SEED MEAL (4.5-2.6-1.2 N-P-K) A new product locally made from Maine-grown mustard seed. A good nitrogen source with added benefits! Reported to have inhibitory effects on soil-borne pathogens and fungi. Also may have weed-suppressing abilities. About Sustainable Farming
What is sustainable farming? Sustainability is a principle by which farmers use sound farming practices to meet their needs in the present while consciously sustaining and preserving resources for future generations. Sustainability encompasses three areas: land and natural resources stewardship; plant and animal production practices; and the way in which the farm contributes to, and is integrated in, the community. Land and Natural Resources The sustainable farmer thinks about and uses water resources wisely. To maintain quality and minimize pollution, the farmer must consider things like types of irrigation, salinity buildup in the soil, and runoff pollution. Around the farm, the sustainable farmer plans for wildlife by protecting a variety of habitats and providing field head rows and wind breaks. The farmer uses good tillage practices, cover crops, and mulch to minimize soil erosion, and considers using alternative on-farm energies such as biodiesel or wind.
Plant and Animal Production Practices The sustainable farmer believes in healthy soil, healthy plants, and healthy animals. Soils are alive and must be nurtured and fed to sustain us now and in the future. Animal and green manures, compost, tillage, and crop diversification are the building blocks of healthy soil. Natural and renewable inputs are used as much as possible, with synthetic inputs used very little or not at all. Integration of Farm and Community The sustainable farm contributes to the community in many ways: through fair labor practices (equal opportunities, fair wages, and good working conditions); by purchasing supplies for farm and home locally; and by providing quality foods and other products to members of the community. These conscientious families care about their farms and their communities and have committed themselves to preserving these for future generations. ACTINOVATE LG AND AG We are starting to work with different biological products to help control the pathogens that plague us. Actinovate is a biological fungicide consisting of Streptomyces lydicus, a bacterium used as a soil and seed coating application for the suppression and control of fusarium, rhizoctonia, pythium, phytophthora, sclerotinia, altenaria, and other root-decay fungi. When applied to the soil, Actinovate also breaks down minerals and micronutrients so that the plants may more readily take them up. Also used as a foliar spray for control of powdery mildew, downy mildew, alternaria, botrytis, and other foliar fungi including phytophthora. Apply throughout the growing season. Actinovate is completely watersoluble, not requiring agitation to keep it in solution. May be tank-mixed with other fungicides, insecticides, and fertilizers, unless otherwise restricted. Do not mix with bactericides. Can be applied through boom sprayers, sprinklers, and irrigation systems. Apply at 4-6 oz per 100 gallons of water or 1 teaspoon per 2 gallons.
