An Education in Cheese!

3 Part Cheese Course April / May 2012


Cost: 65 per person Venue: Ardkeen Quality Food Store Time: Tuesdays (7- 8.15pm)
If you want to learn more about cheese but are unsure where to start this is the perfect opportunity to learn from passionate cheese experts.
Class 1 (Tues 24/04/2012) Introduction to Cheese with Elisabeth Ryan
Elisabeth introduces Cheese Basics, including Milk Types, Texture and Flavours as well as Cheesemaking Methods, Affinage (the process of maturing & ripening) and of course Appreciation.

Class 2 (Tue 01/05/2012) Irish Farmhouse Cheese & Guest Cheese Maker
Elisabeth will speak about the history of Irish Farmhouse cheeses and elaborate on the variety available now in Ireland as well as stories about the Cheesemakers and their produce. Award Winning Local Cheesemaker Helen Finnegan of Knockdrinna, will tell the Knockdrinna story and taste through their different types of cheeses, comparing differing age profiles.

Class 3 (Tues 08/05/2012) - Cheese and Wine with Seamus Sheridan & Ardkeens Wine Buyer, Carmel Carroll.
Seamus Sheridan and Ardkeens own Wine Buyer Carmel Carroll will bring together the best examples of great cheese and wine pairings, uncovering the nuances in cheese and wine that complement each other.

The aim of this course aims to be informal yet informative providing you with a strong foundation in the world of Cheese through instruction, tasting and discussion.
