LISOZIMA
La lisozima (EC 3.2.1.17), sistemáticamente
llamada peptidoglucan N-
acetilmuramoilhidrolasa, y también conocida
como: 1,4-N-acetilmuramidasa, N,O-
diacetilmuramidasa, L-7001, lisozima PR1,
globulina G, globulina G1, lisozima g,
mucopeptido N-acetilmuramoilhidrolasa,
mucopeptido glucohidrolasa, y muramidasa,1
es una enzima hidrolítica –una hidrolasa.

Estructura y clasificación
Las lisozimas constituyen una superfamilia de proteínas, las mismas que están
clasificadas como proteínas alfa+beta.11 Cada molécula de lisozima es una
cadena polipeptídica simple. Existen varios tipos de lisozimas. La lisozima de la
clara del huevo de gallina Gallus gallus (HEWL) tiene una masa molecular

otros aminoácidos (Leu, Ile, Val, Ala) en la posición 62 poseen una mayor
actividad lítica.34 Otro enlace se produce entre el triptófano 63 y el oxigeno del
C3,32 otro entre los grupos NH y CO de la cadena lateral acetamida y los
grupos CO y NH de la cadena principal de los aminoácidos 107 y 59,
respectivamente.35 El (NAG)3 tiene también contactos tipo Van der Waals con
la enzima, así el residuo B se acomoda al anillo indol del triptófano 57.
