1. Brown chicken in butter over medium high heat for 5 min. Sprinkle
with salt and pepper.
2. While chicken cooks marinate mushrooms in lemon juice.
3. Add madiera, sherry or broth to chicken in pan. Turn over. Simmer
until chicken is cooked through, about 5 min. Remove from pan.
4. Boil liquid mixture down to about 1/4 cup. Add mushrooms and
saute until mushroom liquids are evaporated.
5. Add cream Boil over high heat until sauce is thickened.
6. Return chicken to pan, simmer until meat is rewarmed and sprinkle
with cheese.
