Stir Fried Sesame Chicken

serves 3-4 1 1 3 2 1 2 lb. boneless chicken, cut into 1" cubes 1/2 tsp cornstarch 1/2 Tbsp oil 1/2 Tbsp soy sauce Tbsp lard 1/2 Tbsp sesame seed paste 1 Tbsp sesame oil 1 Tbsp broth or water 1 tsp chili sauce 1 Tbsp dry sherry Garnish: 3-4 Tbsp sesame seeds

1. Toss chicken in cornstarch until evenly coated.Heat oil in wok and when really hot, add chicken. Stir fry over high heat for 2 minutes. Remove from wok , set aside. 2. Add lard to wok, when melted add soy sauce, sesame seed paste, sesame oil, broth or water, chile sauce and sherry. Mix well and cook 1 minute. 3. Return chicken to sauce mixture in wok. Stir fry over high heat for 3 minutes. 4. Stir in sesame seeds. (optional)
