St. Patrick's day - March 17th

On St. Patricks Day the Irish people attend many

festivals and parades. The events of that day portray the
Irish culture through music and dance. It is nationally
recognized, so all banks and stores are closed. It is
celebrated in remembrance of St. Patrick. He was a boy
who was a slave at 16 years old, in Ireland. He later
escaped to Great Britain and became a missionary, where
he converted people to Christianity. When returning to
Ireland, it is said that, hw drove snakes to the pagans. It is
celebrated on March 17th because that is when he was
believed to have passed away.

Recipe Irish stew Ingredients

2 medium-sized onions,
chopped

2 tablespoons pearl barely

5 cups chicken stock

Oil

1 ounce butter

Salt

1 sprig dried thyme

Freshly ground black

2 pounds best end of lamb

pepper

neck (large pieces)

1 bouquet garni

7 carrots, chopped lengthways

12 medium potatoes
1 bunch parsley (finely
chopped)

Add onions to the oil and butter mixture in a large, heavy-bottomed

saucepan (Cook on medium- high heat until translucent)
Add dried thyme and stir
Brown the lamb on high heat to seal in juices
Add in pearl barley and carrots
Add enough chicken stock so that it covers the meat and vegetables
Add salt and pepper to taste
Add Bouquet garni
Cover the sausepan and cook on low heat for 2 hours, without
allowing it to come to a boil
Add the potatoes into the stew, cover and cook for 30 minutes or
until the meat and potatoes are tender
