Nutrition Program Planning


1. Nutrition Issue: Eating Breakfast to improve academic performance
a) Target Population: Adolescent girls in public schools
2. Overall Goal: The goal is to create a new behavior of adolescent girls of eating a healthy
breakfast in order to improve the academic performance in public schools.
3. Outcome Objectives:
a) To have at least 50% of adolescent girls in public schools eating breakfast three
days a week within 1 year of the program
b) To have at least 50% of adolescent girls in public schools be able to create a
healthy breakfast plan within 1 year of the program.
c) To have at least 75% of these adolescent girls be able to name three ways that
eating breakfast will benefit them throughout the day.
4. Learning and Educational Needs of Adolescent Girls:
Learning Needs: Based on my target population, adolescent girls learn best when they
are learning through computer-assisted programs with activities based on the information
they you want them to learn and adolescent girls learn best when the messages they are
receiving are relevant to their daily lives. In order to have a program that would best fit
this population, I would link eating breakfast to the issues adolescents face today
revolving around school and how doing better in school inevitably will help them in
appearance and athletic performance. I would also hold food activities such as cooking
and creating breakfast so they have a feeling of independence as well.
Educational Needs: In order to have a successful program, the target population would
need to understand all of the benefits of eating breakfast. These benefits have to be for
more than just retaining information and should do into benefits in their daily lives. Also,
they must learn what qualifies for a nutritious breakfast as well as the key nutrients in
breakfast foods that most eat on a normal basis. Our program would need to provide all
the types of benefits breakfast has, the nutrient content of key breakfast foods as well as
the basic cooking skills in order for these girls to be able to make these foods at home for
themselves if they have the resources to.

Breakfast Program Overview


a) Level I: At this component, we would be working to build awareness to all of the
adolescent girls in these public schools. For this, we could have an after school
health fair in an all-purpose room in the school buildings for all of the adolescent
girls to go to for 2 hours and look around at different booths pertaining to
different areas that breakfast would affect as well as different breakfast foods that
are good for girls their age to eat. As many public schools have some sort of

health fair already, it would be easy to incorporate a booth about breakfast and
learning into the fairs making it more cost effective for the school districts.
b) Level III: Here, we would try to help the girls in having a supportive
environment in their public schools where they are able to buy breakfast before
their classes begin. Since there are many public schools that already partake in the
school breakfast program, it is plausible to have an area where those girls who are
unable to eat at home have a place they can go and get a nutritious and fast
breakfast at a reasonable price. Being a main excuse of not eating breakfast is that
they do not have enough time in the morning; a breakfast program would increase
the amount of girls in public schools who are able to eat breakfast. This program
could even extend into all students at the public school level if the pilot program
is successful.

c) Level II: Education Component (A Total of 4 Lessons throughout the school year
taking place after school or for one hour during school depending on the lesson)
Lesson One: Will teach the benefits of eating breakfast and how proper nutrition in the
morning would be beneficial to all of the activities that they do throughout the day. This
lesson would be for two days (The beginning of two months) and would take place
during the school day by either a gym teacher or school nurse.
Lesson Two: Showing the different foods that would be considered nutritious breakfast
foods and what types of nutrients that they would consist of. See Part Six for the lesson
plan.
Lesson Three: This lesson would bring together the different misconceptions that
eating breakfast has in terms of eating more will make you fat. This lesson will be used
to refute all of the negative views of the different breakfast foods that are needed in
order to have a successful school day. This would be an hour lesson after school only
once as there is not need to reinforce the information. It would take place in the same
all-purpose room that the other lessons would be.
Lesson Four: This lesson would tie everything that these girls learned together by
getting together and forming a discussion based activity where these girls can give their
ideas about how we could improve the amount of students who eat breakfast in the
morning and other ways to build awareness for the entire school. This would be a oneday lesson given by the school nurse and/or gym teacher after school for two hours.

6. Lesson Plan: Breakfast Planning (Lesson Two):


Title: Lets Cook some Breakfast
Definition of target audience: The Target Population would be all adolescent girls in
the public school
Duration: Once a Week for One Month
Goal for the class: The Goal for this lesson would be to have the adolescent girls how
to make a proper breakfast and what can be considered healthy in terms of getting their
minds working in the morning.

Objectives (specific & measurable outcomes)


1. At least 75% of the participants will be able to identify nutrient-rich foods for
breakfast consumption by the end of the lesson.
2. Have at least 50% of the participants be able to demonstrate and make a meal that
qualifies as a nutritious breakfast that they would want to eat.
Procedure
Classes will be held the first Monday of the week immediately following
school for one hour. It will be taught by one of the teachers who has the
nutrition skills needed to teach the participants.
During this lesson, we will teach the girls how to make a proper breakfast and
start each activity set by going over different foods each week to eat in the
morning that they will be making and what constitutes them as a nutritious
food for breakfast.
Learning experiences or activities
Power Points and Handouts in the beginning of each lesson with different recipes
to make as well as their nutrient content that would improve their thought in the
morning.
Activities would include making these recipes and eating them at the end. When
eating, there will be a discussion about what they liked and didnt and which of
these recipes they would be willing to make at home.
Method of evaluation
The evaluation will be a 2-Part Process
1) First, the girls will be guided to take an online survey where they will be
prompted to choose which breakfast foods would help accomplish a certain goal
(Example: Which of these foods would you eat in order to have more Calcium in the
morning?). The end of this evaluation would be able to judge how well the participants
know what is considered a proper breakfast.
2) The second part would be to have the girls to show their skills by being asked to
make a certain breakfast so that we can evaluate how well the program prepared
the participants to go home and create these meals themselves.
Materials needed
Handouts that consist of the recipes that we are making for each week
Handouts for the power points so that the participants can bring them home at the
end of the day
Evaluation sheet for the final week when they are making their breakfast in order
to evaluate the program
7. Evaluation of the Program
a) Impact/Outcome- At the end of the school year, we will have be able to
determine if all of the objectives have been met based on the information that is

provided to the participants at the time. During this evaluation, we will focus of
the overall goal of our program and see if the changes that we have created are in
fact what are needed to accomplish the overall goal of improving academic
performance through breakfast. We will look at the overall objectives that we
have had and see if they are in fact being met at the end of the first school year
that this pilot program is set. Also, we will monitor the grades of those girls who
want to partake in the program and see if they had any major changes in their
grades from the previous year.
b) Process The evaluation will consist of determining whether there is enough
information to for each lesson presented and if these activities planned, like
cooking in the lesson plan, is accomplishing the goal for each lesson. As in the
lesson plane presented above, we can observe one of the session and see if the
lessons are run smoothly and determine if there is something that can be fixed or
changed in order to make the activities more enjoyable and comprehensive for
those who are participating.
c) Fiscal/Efficiency- For this, we would need to determine the cost of renting the
equipment for cooking breakfast and the financial cost of using the school kitchen
in order to successfully run the program. With that we would need to figure out
the amount it would cost to pay the staff the extra hours during the after-school
sessions as well as the amount of girls one teacher is able to supervise at a time.
As most of this will be able to take place right after school, renting the school is
not a necessary obstacle since most public schools have an allotted amount of
time that workers are required to be there after and travel would not be an issue as
most of the children will already be at the school. From this, we would be able to
determine if all parts of this program are financially responsible and if there
should be a flat cost for certain part of the education program in order to kept to
costs of the program low so that everyone would be able to partake and therefore
we could ultimately meet out objectives.
8. Marketing of Education Program
a) Slogan- Get an A per day by eating breakfast today!
b) In order to market this program and have it become successful, we must look at
the target population that we are trying to sell this to. Since my target population
consists of adolescent girls, a large portion of the marketing would consist of
social marketing. At these ages, it is important for girls to feel like they are a part
of the trend and need the acceptance of those around them. One main area where
we can get these girls into the programs is through social media. Technology is
such a huge part of tween lives today that by having a slogan trending through the
Internet and certain social media sites would be something that the target
population would see and want to be a part of as well as being very cost effective.
With this, we could have also different posters made throughout the schools,
mainly in the cafeteria, with different sayings about breakfast and how they help
with key aspects of teens lives through the eyes of teenagers. This would be
effective since a key factor in teaching this age level is showing how they would
benefit in areas of their social lives. In the same way, having peers standing at the
booths during a health fair would encourage the participants to want to go up and

hear what they have to say. These marketing plans would be helpful to support the
program, as they would show these adolescent girls that eating breakfast is cool
and something that everyone is doing which is a key aspect in getting these girls
to learn and try new things.
Challenges:
There are many challenges that this program can face and, like any program,
looking into the target population is a key factor into this. Being that these girls
are still young, they may have hard time understanding complex information and
could also have a lower reading level as they are still developing those skills. In
order to circumvent this from happening, the lessons shall consist of pictures
rather than long paragraphs and have only key words that are simple for an
adolescent reading level. With this, we would be able to forgo miscommunication
among the lessons that are taught and what the girls are actually learning.
Another issue that we could face with this program has to do with the girls
psychomotor domain of learning, as they are skill trying to learn the skills that
would be needed for making a nutritious breakfast in the morning. Most of these
girls may not have the opportunities to practice the skills that they learn through
this program and that would ultimately lead them to remaining at the same level
they have been with making their own food. Although this may be hard to help
since there is not way to continuously practice cooking skills with them, there is a
chance to hold more sessions for those girls who want to learn and continue
learning to cook breakfast. This would be solely based on interest as we cannot
force these girls to come back, however this would allow their skills in the kitchen
to continue if they are unable to work with them at home. A final challenge that
could be an issue with this program has to do with the misinformation that these
girls could hear. At this age, girls are very susceptible to believing the first piece
of information they hear, especially if this comes from their friends. If one girl
hears from her friend that eating breakfast makes you fatter, they may not want to
eat breakfast at all. This holds true for the Internet as well since most adolescents
do a lot of their learning through the computer. To fix this issue, it would be
helpful to have the girls explain what they know about breakfast already and then
either reinforce the information if it is correct or give them a simple explanation
about the correct type of information if it is wrong.

10. Organizations and Partners


a) Local Food Stores: Depending on where the program truly takes off, we could
partner with local food stores and markets in order to receive certain breakfast
foods as well as supplies in order to have the lessons where we teach the girls how
to cook their own meals for the morning. For those who are unable to make their
meals, by partnering with the local food markets would cut the cost of having a
breakfast for these girls if this part of the program took off. If they are willing to
do this, we would be able to give them marketing products as well a business as
most families would want to shop at places that are helping the community.
b) Local Drug Stores: On top of providing food and school supplies for the
different activities and lessons that would be taught to the girls, local drug stores
like a Walgreens or CVS are credible sources and would look good a financial

sponsors. All they are already in the market of promoting health, it would be
beneficial for the marketing of the program as well as their local stores in the
town. These types of stores are always having different programs to support their
local schools and organizations and would be able to give a positive outlook on
what this program is trying to do for the adolescents as well as the school in
general.
c) Nutrition Related Organizations: Some towns, like mine, have community
groups that are focused on the nutrition and diets in the town. These types of
organizations may not be able to provide the finical support that is needed, but
they would be able to provide help with the volunteering and teaching. By helping
with these two important aspects, the cost of the program would go down and
would give the participants another outlook on breakfast that the program was not
already giving them.
11. Management of Education:
a) Organizational Structure: These programs would be run by the different public
schools in terms of a teacher who is qualified to teach nutrition education. They
would be in charge of finding volunteers as well as doing the evaluations at the
end of each part of the program. These volunteers would need to be able to show
that they are skilled in the proper nutrition information and have a small
background in teaching children whether that be a teaching job or coaching of
some sorts. Since most of the activities and lessons will be taking place in the
same place, it would be beneficial to have an area where all of the supplies are
kept in order to have an efficient lesson. The staff will be responsible to keep
track of all of the supplies as well as telling the supervisor when more are needed.
Some volunteers would be solely responsible for watching the children, as they
are too young to be considered an adult. For this, we would need at least one
volunteer per six students for being, but this number can changed based on the
data we collect throughout the program.
b) Data Systems: Throughout the program, there would be a lot of information that
we would be collecting to show the effectiveness of the program. In terms of the
program itself, we will see all of the cost of supplies needed as well as the money
needed for the salary of workers (teachers and school staff). From there, we would
need to have surveys for the participants about how useful these lessons were as
well as if they would want to come back to determine if the participation was high
and would continue to be high at a future time. Finally, with the volunteers and
teachers, we would need to collect data on how effective they were in teaching
and if there could be more training in the long run in order to have a successful
program. To do this we could have the participants do an evaluation of the
volunteers and see what they liked about their teaching and what they would in
change in order to have the most effective staff on hand for them.
