Spinach Dip

Recipe: In a
medium bowl, mix
together
mayonnaise, sour
cream, dry leek soup mix, water chestnuts and chopped
spinach. Chill in the refrigerator 6 hours, or overnight.

Main Dish: Fried Chicken

Recipe: Pat the chicken dry. Combine the salt, flour,


black pepper, and cayenne in a large, shallow bowl.
Dredge the chicken in the flour mixture, shaking off the
excess. Set aside for about 15 minutes. Pour the
buttermilk into a second shallow bowl. Dip the chicken in
the buttermilk, then again in the flour mixture.

In a heavy-bottomed Dutch oven (preferably cast


iron), heat about 4 inches of vegetable oil over medium
heat until the temperature registers 360 F on a deep-fry
thermometer.

Carefully place the chicken in the oil, using tongs.


(Add the pieces slowly, so that the temperature does not
drop, and work in batches to avoid overcrowding.) Fry the
chicken until golden brown, turning once, 10 to 20
minutes, depending on the size of the pieces. Check for
doneness by piercing the meat; the juices should run
clear.

Drain the chicken on paper towels set on a wire rack.


If desired, the cooked chicken can be kept warm in an
oven set on low.

Sides and Bread


Mac and Cheese:
1. Cook macaroni according to the package directions.
Drain.
2. In a saucepan, melt butter or margarine over
medium heat. Stir in enough flour to make a roux.
Add milk to roux slowly, stirring constantly. Stir in
cheeses, and cook over low heat until cheese is
melted and the sauce is a little thick. Put macaroni in
large casserole dish, and pour sauce over macaroni.
Stir well.
3. Melt butter or margarine in a skillet over medium
heat. Add breadcrumbs and brown. Spread over the
macaroni and cheese to cover. Sprinkle with a little
paprika.
4. Bake at 350 degrees F (175 degrees C) for 30
minutes. Serve.

Mashed Potatoes:
1 Place the peeled and cut potatoes into a medium
saucepan. Add cold water to the pan until the potatoes
are covered by at least an inch. Add a half teaspoon of
salt to the water. Turn the heat on to high, and bring the
water to a boil. Reduce the heat to low to maintain a

simmer, and cover. Cook for 15 to 20 minutes, or until


you can easily poke through them with a fork.
2 While the potatoes are cooking, melt the butter and
warm the cream. You can heat them together in a pan on
the stove or in the microwave.
3 When the potatoes are done, drain the water and place
the steaming hot potatoes into a large bowl. Pour the
heated cream and melted butter over the potatoes. Mash
the potatoes with a potato masher. Then use a strong
wooden spoon (a metal spoon might bend) to beat
further. Add milk and beat until the mashed potatoes are
smooth. Don't over-beat the potatoes or the mashed
potatoes will end up gluey.

Cornbread:
Heat oven to 400F.Grease bottom and side or round
pan, 9x1 1/2 inches, or square pan, 8x8x2 inches, with
shortening. Beat milk, butter and egg in large bowl with
hand beater or wire whisk. Stir in remaining ingredients
all at once just until flour is moistened (batter will be
lumpy).Pour into pan. Bake 20 to 25 minutes or until
golden brown and toothpick inserted in center comes
out clean. Serve warm if desired.

Dessert: Apple Pie


6 cups thinly sliced, peeled apples (6 medium)

2 tablespoons all-purpose flour
3/4 teaspoon ground cinnamon
