Target Concept: Understand Jobs and Requirements in Food Production

Lesson Objectives:

Assessment:

Students will be able to demonstrate an


understanding of the jobs within the food
industry. They will design a menu with a
logo and three items to be served. Along
with the menu the students will describe
three jobs that will be needed at their
restaurant.

Based on the menu they created with the


logo, food, and workers.

Materials: Paper, Pencils, Markers, Colored Pencils, Guided Practice Menu, Dough for focus
Lesson Cycle: (Direct instruction)

enter class.

serve the food, collect payment
for the food

3. Cook (Restaurant)
Age: 16
Education: None
Pay: $10/hr - $14/hr
Responsibilities: preparing food,
cooking food, ensuring the food
meets the standards for health
and presentation
4. Chef (Restaurant)
Age: 18
Education: Experience as a cook
or a culinary degree
Pay: $10/hr - $30/hr
Responsibilities: everything the
cook does, manage the kitchen
team, creating a menu, ordering
food for the next week
5. Manager (Both)
Age: 18
Education: High school diploma,
but a collage degree is preferred
Pay: $15/hr - $30/hr
Responsibilities: Taking care of
day-to-day activities, ensuring
that customers are satisfied,
ordering food and materials for
the next week, preparing reports,
scheduling workers

Have students read the Guided Practice


Menu (3 min.)
Ask the students to share cool or
interesting facts with their neighbors and
think of questions they would like to
ask.
Walk around the room asking, Whats
something cool that you found? to
individual students.
Answer students questions about
reading.
After the 3 min., ask these questions:
1. Is education important in the
food industry?
2. Is it important to be creative?
After each question, discuss the
importance of each.

Read the information on the center


page.
Tell neighbors of cool or interesting
facts.
Think of questions to ask about the
information.

Ask questions they had about the


reading.
Answer question teacher ask with
support of their answer.

Guided Practice:
Instruct the students to create their own
restaurant or fast food chain. Then
create a menu with the logo for their
restaurant and one appetizer, one main
coarse, and one dessert. Must be in color
and include descriptions and prices.
Example is on the front and back of
Guided Practice Menu.
Have the students share their ideas with
the class.
Independent Practice:

Instruct the students, as an extension of

their menu, to write what kind of


workers and how many they will need at
their restaurant. The students should
include a description of what the worker
will do and how much the student would
pay the workers.

Closure:
Ask if any of the students changed their

Create an idea for their restaurant.


Draw the logo for the restaurant.
Create an appetizer, a main coarse, and
a dessert to be sold at their restaurant.
Draw a picture of the food.
Write a description about their food.
Write a price for their food.
Share with the class.

Write what kind of workers they will


employ at their restaurant.
They will give a description of what the
worker will be responsible for within
their restaurant.

Options:
Enrichment: Have students research
culinary schools. Ask them to report back
their findings, such as what is the cost, and
will it benefit them.

Reteach: Take the students to a real


kitchen and meet a real chef. Allow the
chef to talk about his job.

Modifications/Correctives:
Follow IEPs for each student including
peer/teacher assistance as needed.
