Lesson Plan: Increasing Weekly Breakfast Consumption

I.

Behavioral Goal: Increase the number of days fraternity members eat breakfast.

II.

Target Audience: Fraternity boys

III.

Learner Objectives:
a. After completing the worksheet the audience will be able to identify breakfast items
that they could grab and go or prepare within 10 minutes.
b. After identifying quick breakfast items, clients will be able to combine items to make a
sufficient breakfast in 10 minutes.

IV.

Time Allowed: 15 minutes

V.

Pre-assessment Questions: We have been talking about rearranging your schedules to allow for
the consumption of breakfast in the mornings. How many of you
think you can make and eat a sufficient breakfast before scheduled
activities?

VI.

Context and Sequence:

a. Introduction: Hi, my name is Tammilee Kerr. I am a student majoring in Food &
Nutrition at the University of Alabama. It is a pleasure to be here and thanks in advance
for attending this workshop.
b. Pre-assessment question: You have identified time constraints on weekday mornings as
a barrier to consuming breakfast. How many of you think you can make and eat a
sufficient breakfast before scheduled activities?
c. Explain the objective of this portion of the workshop: In this portion of the workshop,
we will identify food items that could be used to prepare a 10 minute breakfast or can
be used as a grab and go item. We will group them into different nutrient classes
(grains, meats, fruit, and milk). We will then use these to prepare 4 meal combinations
for the week.
d. Pass out handout One.
e. Explain handout to audience: I would like everyone to list at least five food items, for
each category, that you would use as a grab and go/ quick prepare item. After, we will
share as a group items that were picked.
f.

Identify some items that were picked

g. Have them get into groups of three: Now I would like everyone to get into groups of
threes.
h. Pass out handout two.
i.

Explain handout to audience: This is the quick fire challenge. In 5 minutes, using any of
the items you listed above, I would like you to prepare four recipes. You must use at
least three of the categories of food items in each recipe. Each group will then share the
recipes that they came up with. This will give you an opportunity to hear the ideas of
your peers.

j.

Questions: Do you have any questions?

k. Conclusion: I hope you take from this that there is always time to make/ eat breakfast.
It does not have to be a 25-30 minute prepared meal. You can prepare a meal in ten
minutes or less. Use fruits, frozen waffles, or whatever it is that you want; you can
always use items that are easily prepared or ones that you can grab and go to create a
sufficient meal. Thank you
