Maple Grades Have Changed__________

In the US, maple syrup is usually sold by grade and color classification. For example, Grade A Medium Amber. Color is used
because it has some general relation to the intensity of maple.
However, inconsistencies between the grading systems used in
each of the maple producing states, as well as Canada, caused
some confusion.

About 12 years ago, the International Maple Syrup Institute,


which is a voluntary organization, whose members include maple
syrup stakeholders both from the US and Canada, established a
committee to review existing regulations for pure maple syrup.
The committee recommended establishing a more simplified and
uniform description of grade names and nomenclature for pure
maple syrup in the US and Canada. The two key objectives were
to eliminate inconsistent grade names, and to emphasize the taste
of the syrup by including flavor descriptors.

In 2013, the NH Maple Producers Association voted to adopt the


proposed grade changes. As a result, in 2014, the NH Department
of Agriculture, Markets and Food went through the rulemaking
process and adopted the new grading system this past December.

The NH Maple Products Law and Rules provide NH maple producers a one year transition period to apply the new grading system. Meaning, in 2015 when purchasing maple syrup consumers
may see the old grading system, or the new grading system on
containers. By January 1, 2016, all maple syrup produced in NH
must be labeled with the new grading system.

would expect some outages! I say
this as we rerun a column from
2012 for Tom, because his internet was done during the papers
deadline. Hope you enjoy this
one from February of 2012.)

Over the past six months we've

over similar stretches in the past
six years. The difference being,
that this has been when our book
was published and we went on
tour. We continue to do appearances throughout New England
and I'm fortified by the sheer
numbers of folks who turn out.

Would any of us be so composed


and relaxed in front of an excited
crowd?

Atticus and I are comfortable


pretty much wherever we go.
Perhaps it came from the earliest
days when I carried him everywhere I went when he was but a
wee pup. Or maybe it's because
we just fit well together and
always have as if wed been
made for each other. Perhaps it's
the mountains weve climbed or
how each of us has faced our
share of health issues over the
past few years - always side by
side. Whatever the reason he is
simply who he is and I take comfort in that.

Not long ago we were in front of

Cambridge, Massachusetts and I
spoke as I always do - from the
cuff, perhaps with a bit of wit and

(One never knows what I will say
next. Heck, I dont know.)
Someone asked a question and it

had to do with defining our story.


Oh, the places I could go with
such a question. And how to boil
it down into a simple answer.
After all, there are many messages in Following Atticus. What
I came up with was something
that sounded like the following:
"When we are little and standing
in front of our bedroom mirror,
we dream of hitting the winning
homerun in the World Series,
catching the winning touchdown
in the Super Bowl, being elected
president, or being given some
great award. We dream innocently of being great. But then life
comes along and through the
decades it wears us down and
before long we are thirty or
forty...or fifty, and those dreams
of our youth are forgotten. No
one dreams of growing up to sit
in a cubicle five days a week, or
beating his wife, or becoming an
alcoholic. So our story is how
one little dog led me back to
myself, led me back to being that
little boy and all the wonders he
dreamed of and we came to it by
crossing over all these beautiful
mountains in New Hampshire."

more in my love of winter than
antipathy for anything else. I
do love winter. The seasons
harsh beauty and stark
prospects imbue their own
shade of joy and wonder in the
short, gray days. The winter
landscape offers its unique calligraphy of frailty and vulnerability which resonates harmoniously with something in my

spirit. The frills of warmer


months are stripped away in
winter and simple comforts are
simple and comfortable, and
hard-earned on the homestead.
Reality is never more distant
than the wind whipping at our
cabin door, or the storm shrouding the cabin in snow.

Bare ground, and Spring, and


the season of rebirth and growth
will, however, undoubtedly
return. And when it comes, the
smell of rich dirt and forest duff
will kindle an excitement and
an energy within me that will
burn bright until the freeze
returns, and the ice and snow
put the warmer world to bed for
a spell. Without these luish seasons of seeds, of harvests, of
firewood and of woods work,
the fulfillment and satisfaction
of winter would be short-lived.
Still, a part of me smiles and
cheers when I see the March
rain return to snow, or the sunny
afternoon give way to blustery
nights and chilled mornings.

The third and final winter


biathlon of the season at the
Pemi Fish and Game Club in
Holderness, NH was held at the
clubs shooting ranges on
Saturday, March 7, 2015. The
biathletes were greeted with
near perfect conditions with the
temperature 3 degrees at 6:00
AM and reaching 31 by early
afternoon. Ample snow cover
blessed the participants with
grooming provided by the local
Squam Lakes Trailbusters
snowmobile club. Thirty-five
persons registered for this winter biathlon event, a new high
for winter biathlon at the club
with two on snowshoes and the
rest skate-skiing. Ages ranged
in age from 10 to 71. Congrats
to the two who shot clean (no
misses) and the several who had
only one or two misses!
